Over at Capistrano School District in California, the nutrition team has been working with students in an “Earth-Based Club” to encourage kids of all grade levels to try out some of their newer plant-based recipes. High school students Adelina and Harlow shared a little bit more about their motives for starting the club and how they hope to inspire their classmates to make more mindful choices when it comes to what’s on their plates at lunch:
“Here at Earth-Based Club, our main objective is to spread awareness... We want to influence and educate others into finding more environmentally-friendly methods to save the earth, the animals and ourselves. We believe that expanding plant-based options into the Capo Food program will help execute this dream! Since the addition of the new plant-based lunches at Aliso Niguel High School, we have received nothing but great feedback from students and the lunch staff, making us excited to expand these options moving forward!”

More food education and plant-based foods: here is NYC's vision for healthier students
New York City’s food education report includes plans to expand education programs on nutrition, develop a greater consumption of plant-based foods, and establish further culturally responsive food options.
Those improvements will encourage students toward healthier foods, helping combat high rates of health issues in a city where nearly 40% of public school students are overweight or obese, according to the report.
Food education “permeates learning and the student experience throughout the school day, as well as before and after school,” according to the report. “It can take many forms, from hands-on food preparation, school-wide assemblies, classroom-based learning, field trips to farmers markets or botanical gardens, school garden-based lessons, and more.”
City officials plan to develop a guidebook, convene a council, and offer staff and student training on food education in an effort to spread knowledge across schools.

Greater food options will be available for Rochester Institute of Technology students, faculty, and staff, as the dining staff explores ways to increase plant-based meal options.
“We have been making more plant-based options available because students have been asking for more plant-based choices,” said Herlan Manurung, RIT’s corporate executive chef and associate director of RIT Dining. “Our goal is to provide diverse menus that meet dietary needs and preferences and become more sustainable.”
Hospitals in California adopt inclusive plant-based meal program in US first
A public hospital system in California has become the first in the US to introduce a plant-based food program named Universal Meals.
The program is available within the Santa Clara Valley Healthcare (SCVH) system. Now, employees and visitors will be able to eat meals free from animal products and the top nine allergens at hospital cafeterias.
