February Happenings

Happy Friday, .

"A broken heart heals when we allow the healing to go as deep as the wound went."

~Beth Moore

As you know from January's newsletter, Kenny & Chelsea lost one of their foster loves to a family member.

We couldn't be prouder of our kids because they warmly opened their home to this person for 2 days, showed her grace and did a beautiful job making their baby girl feel comfortable with this lady.

Their precious 2 1/2 year old left their home on January 21st and we all cried for weeks leading up to her departure and then for days after. Actually, we still have moments of deep grief. Please pray for us.

But, then their sweet friend, Amber made the most beautiful and thoughtful gift. She took some of their daughter's favorite clothes and lovingly made this sweet quilt and a doll for their daughter, Laila and one for their little foster son too.

Yes, they cried when they opened the gift and will cherish this precious quilt forever. And Laila and their foster son both have a cute little doll to play with together.

Laila actually fell asleep with her little doll on her the first night she got it. So sweet.

They sent many of their daughter's clothes and toys with the family member. And even shipped additional boxes of toys to her new home. But, they saved some of her favorite pieces of clothing for their friend to make this quilt.

Each heart invokes special memories of the time spent with their little love.

Amber even took her sister's headbands and made them smaller so Laila could change them out from time to time. And look at the fuzzy little socks and other clothes, they're just too cute. Thank you, Amber!

Our daughter, Chelsea posted the following on Facebook recently. She forgot where she read it, but it's a good reminder of God's joy.

"Certainly, the enemy loves to steal our joy, he can't stand it when we have joy regardless of our circumstances. God's joy gets us through, because it has nothing to do with being happy, it is a deep seated joy that only He can give! Discouragement can't win, because He is the God of joyous breakthrough."

Sometimes it's difficult to let go of pain and trust God again. But, He truly cares about you and wants you to be whole and happy again.

Kenny and Chelsea's faith has been strong through this whole ordeal and they're very grateful they have a lot of support and prayers from family and friends.

If you've been praying for them too, thank you so much!

Carol said on Mom's Sloppy Joes with Chicken Gumbo Soup: So where have I been? I don’t remember even hearing about this recipe, but we made it and now our grandkids don’t want to have Sloppy Joe’s any other way. Our store was out of Chicken Gumbo soup the other day, so we went to another store! Love your recipes, Heather! Makes them special when so many come from your Mom.

Healthy World Cusine said on Moist Chocolate & Vanilla Cake with Chocolate Ganache: Oh my word! Feeling weak in the knees this looks so moist and delicious. Get the kettle going we will be right over! Pinned to our favorite boards.

Carol said on Peanut Butter Chocolate Chip Oatmeal Cookies: My little grandson and I made these the other day. We couldn’t wait for them to cool, and so we tried them still very warm. We were a bit disappointed, but once we waited for them to cool completely, we were delighted by the flavor and crunch! Everyone else in the family loves them and says we should definitely make them again. Thank you so much for the recipe!

B said on Coconut Walnut Date Squares: I found this recipe while looking for a way to add more fiber to my diet. The combination of oats and dates is perfect as I’m a fan of both. Since there’s no way I’m going to order date paste when I have dates, I just pitted and weighed my dates and found about 20 medium Medjool Dates (Costco) to be 13 ounces. I cut them up and put them in the food processor with the coconut oil and vanilla. With a little coaxing, it all came together into a pretty good mush. I didn’t add any water. Seemed to work just fine. As my square pan is a standard 8x8, I used a small 8x11 rectangle instead. This gave about the same area and it cooked up just fine in the 15 minutes. I love that these do not have any added sugar. The dates are plenty sweet on their own. Thanks for sharing!
