Barbequed Chicken 'n' Ribs
"I don't care what the weatherman says when the weatherman says it's raining"?
But if you're planning a barbecue, you most certainly do. What you need is a barbecue recipe that isn't weather dependent – and here it is: a big pile of super-tasty chicken'n'ribs, ready for the barbecue or the oven when you are, and guaranteed to offer your guests a taste of alfresco foodie sunshine inside the house or out... regardless of what the weatherman says.

Ingredients (serves 6-8) |
|
12 meaty, higher-welfare pork spare ribs 12 free range chicken thighs (skin on, bone in) 250mls sharp apple juice 4 tbsp maple syrup (or runny honey) 2 tbsp vegetable oil 2 tbsp soy sauce 2-3 whole star anise 6 cloves garlic, peeled and crushed

Method |
|
1. Put the maple syrup (or honey), vegetable oil, soy sauce, star anise into a bowl and stir well to combine. Season well, add the apple juice, and stir again.
2. Put the ribs and chicken pieces into a large tupperware box with a lid (or a couple of large, sealable freezer bags) and add the marinade. Put the lid on the box (or seal the bags) and give everything a really good shake (or, squelch everything together with your hands) and leave to marinate in the fridge overnight (or up to 2 days).
3. When you're around 2 ½ hours from service, take the marinated meat out of the fridge and allow to come to room temperature for around 1 hour. Meanwhile, either preheat the oven to 200°C/gas mark 6 or fire up the barbecue.
4. If oven roasting, divide the meat across 2 large roasting tins (with the chicken skin-side up) and roast for around 1 ½ hours, or until the meat is charred and sticky on the outside and thoroughly cooked through within.
5. If barbecuing, wrap the ribs in foil in an even layer and plonk on the prepared barbecue for around 1 hour, turning twice throughout the process to ensure even cooking. Barbecue the chicken directly on the grill, skin-side down, for around 15 minutes, then turn over and allow to cook for a further 20-30 minutes until the meat is thoroughly cooked all the way through.
6. Serve with potato salad, coleslaw, squidgy white bread rolls... and plenty of napkins.

Deep, brilliant, ruby red in colour with violet-blue hues. Although the nose remains a bit shy in its youth, the extent of its mineral content, fruit scents (cherry, redcurrant) and woody aromas beg to be revealed. On the palate its richness bursts forth. It is broad, rich and gamey. This is the very essence of a Mercurey Premier Cru | £39.50
Margaux, 3ème Cru Classé – Château Desmirail Chateau Desmirail is a third growth in the 1855 classification, which has an outstanding terroir bordering the Route des Chateaux. Jean Desmirail gave his name to the Chateau after marrying an heiress from the Rausan family in the late 17th century. The current owner and manager, Denis Lurton, took over from his father Lucien in 1992. A well balanced wine, with spicy notes, good length, not too powerful – charming | £55

The Ivy Bath Brasserie welcomes guests with new seasonal dishes
The Ivy Bath Brasserie has launched a selection of new seasonal dishes for guests to enjoy during the warmer months.
Dishes include a Goat’s Cheese and Courgette Tart (£8.75), with artichoke tapenade, mixed herbs, and truffle crème fraiche sauce to start, the Pan-Fried Salmon Fillet (£17.25) served with asparagus spears, courgette ribbons, toasted pine nuts, and a chive velouté for mains, and the delicious Almond and Blueberry Panna Cotta (£7.95) for dessert, featuring a limoncello sauce, almond tuile, and gold flakes.
The menu is complemented by a range of summer cocktails including the Bloodflower Margarita (£11.50), a twist on a classic Margarita with Olmeca Altos Plata Tequila, St Germain elderflower liqueur, blood orange, lime and orange juice, and the Mango Colada (£11.75), a tropical dream made with La Hechicera Reserva Familiar Rum, mango, coconut and lime.

LOOKING BACK | CARNIVAL WEEK

Carnival 1911 |

As Bath Carnival returns this Saturday, this week’s archive photograph takes us back to Carnival Week in July 1911, when Bath Cricket Club entered in the spirit of the occasion by staging a gala at its ground on North Parade.
A variety of stalls and rides were set up, including the large "motor switchback" seen in the background. The highlight of the event was the Fancy and Funny Cricket Match, taking place in the foreground. One team appeared as "a nondescript side of all sorts of characters", with those seen here including a territorial soldier in tartan trews and jacket, a sailor, someone wearing half cricket gear and half football gear and a monk.
The other team, who were dressed as police officers, can be seen batting with hollow bats designed so that balls could disappear into them. The Chronicle ended its somewhat bemused coverage of the event by noting that "ordinary bats were not used, and the mysterious manner in which the leather disappeared in the box bat perplexed the fielding side. Who won, we don't know, nor does anybody else."
No doubt, though, a good time was had by all, and, with the weather set fair for this Saturday, the 2022 Carnival, with a gala in Sydney Gardens rather than on the Cricket Ground, will doubtless be just as entertaining.
