WEEKEND RECIPES | A CLASSIC BISTRO RECIPE
|
|
|
|
Words by Melissa Blease
Shortcut Bouillabaisse
This shortcut route to a classic bistro recipe goes a long way to bringing a taste of the sun-soaked French Riviera to our own supper tables. Bon appétit!
Ingredients (serves 2-3)
1 medium-sized onion, finely chopped 1 medium-sized carrot, peeled and finely chopped 1 bulb of fennel, peeled and finely sliced 2 sticks celery, finely chopped 1 red pepper, deseeded and chopped 3 garlic cloves, peeled and crushed 4 large, ripe tomatoes, chopped 1 level tbsp tomato purée 1 tsp caster sugar 3 sprigs fresh thyme 100ml dry white wine or 75ml Pernod/brandy ½ tsp dried red chilli flakes 600g fish stock 1 x 400g tin lobster bisque Around 300g sturdy white fish fillets (eg. non-oily varieties such as cod, basa, haddock or monkfish) chopped into bite-sized chunks 150g raw, peeled king prawns
To serve: garlic mayonnaise; croutons; freshly-grated Parmesan cheese
Method
1. Heat a drizzle of olive oil and a knob of butter in a large pan over a medium heat and gently sauté the onion, carrot, fennel, celery and red pepper for around 20 minutes, or until very soft but not coloured, adding the garlic, thyme and chilli flakes for the last 1-2 minutes.
2. Add the tomatoes, tomato puree and sugar and allow to 'cook out' for around 1 minute, stirring continuously, followed by the wine, Pernod or brandy. Allow the mixture to bubble briefly before adding the fish stock. Bring to the boil before turning the heat down and simmering for 30 minutes.
3. Pass the soup through a sieve into a clean pan, pressing out as much liquid as possible with the back of a ladle. Return the soup to the heat, add the lobster bisque and season to taste. Bring back to a simmer and add the fish and prawns. Continue to simmer for around 4-6 minutes or until the fish has cooked through and the prawns have turned pink.
4. Serve in warm bowls accompanied by little piles of garlic mayonnaise, croutons and Parmesan cheese.

Curated by Daniel McCabe
Lodestars Anthology’s Italy issue has been out for a number of weeks now but still worth announcing because it’s not time-sensitive and, as the publisher says, ‘Italy is eternal’. This is the second edition of the issue (it’s called Italy Revisited) after the first sellout issue several years back which, for us, was the one that put this magazine on the publishing map. The Lodestars mix of photography, food and travel writing, prose and poetry this time revolves around the likes of Rome, Positano, Bologna, Ravenna, Portofino, Florence, Lake Maggiore, Trieste, Monopoli, Vence, Tropea and many other destinations across a country not only steeped in history but also one that constantly defies our expectations. | £15

THEATRE REVIEW | LET’S GET QUIZZICAL

Bristol Old Vic presents 'Starter For Ten'
Okay, Bristol: fingers on buzzers, here’s your Starter for Ten. The work of David Nicholls is certainly having a moment. The Netflix series of his novel One Day may have topped the UK’s most-watched list for weeks, but we think that Bristol Old Vic’s 80s-inspired adaptation of his Bristol University-based novel – a synth-driven, joy-inducing two-and-a-half-hours with an original soundtrack we want to relive over and over again – outshines it entirely.
It’s no wonder there’s only a handful of tickets left for each performance (it’s on at the theatre until 30 March, we urge you to book while you still can). Mel Giedroyc may well be the reason so many tickets have been snapped up, and she doesn’t disappoint, with the slightest tongue flick leaving left the audience in stitches. But the whole cast, which include Adam Bregman and Robert Portal, earn their laugh-out-loud moments too. Quieter, introspective exchanges help to contain the show’s manic energy – at times you won’t know if you’re crying with laughter or welling up with the sheer nostalgia of it all.
There are limited tickets remaining, book them here.

EXHIBITION | WELCOME SPRING
|
|
|
|
Image: Sjoljogo - between weathers, Stenness by Janette Kerr
Clifton Contemporary Art presents ‘Spring Equinox’
For the welcome return of spring, Clifton Contemporary Art gallery is featuring a range of work filled with vitality and energy between 8 March – 12 April; all expressed in dramatically different ways.
The deeply textured portraits of Carl Melegari are magnetic and insightful. By contrast, the subtle, atmospheric landscapes by Anna Boss seem to reveal and conceal distance and details as you look at them. Andrew Hood’s dynamic markets and cityscapes team with life and movement, while Elaine Jones’ paintings are shaped and inspired by natural forces and wilderness, poised between innate power and tranquillity.
The restless elemental works of Janette Kerr that are so much more than ‘sea paintings’, perfectly counterbalancing the subtly luminous still life pieces of Lynne Cartlidge that shimmer with natural light.
The gallery will be part of the Bristol Gallery Weekend between 21–24 March. Clifton Contemporary Art will be open throughout.

M Shed to feature toppled Colston statue
From 15 March, M Shed will extend its display about the history of protest in Bristol as the toppled Colston statue will be kept within a glass case.
The display will provide information and interpretation alongside the statue, emphasising its place in Bristol's complex history, within the museum’s Bristol People gallery.
It will allow space for dialogue and reflection on the city's past, with a focus on racial justice and activism.
The addition of the Colston statue offers a unique opportunity to continue the ongoing conversation surrounding historical monuments. It will join displays on the Bristol Bus Boycott, the abolition of slavery, the suffragettes, and scrapping section 28.

Misplaced Theatre presents 'Doubt, a Parable'
Misplaced Theatre returns to the Alma Tavern return to The Alma Tavern Theatre with John Patrick Shanley’s mesmerising Pulitzer Prize- and Tony Award-winning play Doubt, a Parable. Made into a film with Meryl Streep and the late Philip Seymour Hoffman, Shanley's work is a lean, potent drama of suspicion and manipulation.
In a Bronx Catholic school in 1964, a year after the assassination of John F Kennedy, Sister Aloysius, the severely conservative and fear-inspiring School Principal, learns that the popular school priest Father Flynn has taken ‘special interest’ in a troubled 12-year-old African American student. She sets about uncovering the perceived sexual abuse with a vengeance, setting off a chain of events which threatens to dismantle the community.
“The Bristol company have been on a roll with a series of thrilling and exciting productions over the last 18 months.” – Backstage Bristol.
Directed by Jo Butler. Starring Amy Tanner, Connor Wulfric, Alice Coles and Corinne Walker.
