Traditional Welsh Cawl
Friday 1 March is St David's Day – what better way to mark the occasion than with a big pot of traditional Welsh lamb stew, aka the legendary Cawl?
But why are we telling you this one week in advance? Because, as with all stews and casseroles, this one benefits from being made at least one day before you want to eat it. Allow your cooked Cawl to cool completely, store in the fridge and, when you're ready to feast, skim off any fat that may have collected on the top of the pan and reheat gently until piping hot.
Ingredients (serves 4-6)
800g Welsh lamb neck fillet, diced 2 tbsp seasoned flour 2 large onions, peeled and sliced 4 large potatoes, scrubbed and diced 4 large carrots, peeled and diced 1 medium-sized swede, peeled and diced 2 large parsnips, peeled and diced 3 large leeks, trimmed and sliced 2l lamb or vegetable stock
To serve: crusty bread; mature Caerphilly cheese
Method
1. Dredge the diced lamb in 1 tbsp of the seasoned flour. Heat the oil in a large, lidded saucepan and brown the lamb over a high heat until you've created a golden-brown crust on all sides (you'll probably need to do this in batches). Set the browned lamb to one side.
2. Turn the heat down under the pan and add a little more oil. Add the onions to the pan and sauté for around 4-5 minutes or until translucent, adding the remaining 1 tbsp seasoned flour for the last minute or so and stirring well.
3. Add the diced potatoes, carrots, swede, parsnips, browned lamb and stock to the pan. Stir well and bring to the boil before reducing the heat and simmering, partially covered, for around 1.5 hours or until the meat is tender. Add the leeks to the pan, partially cover the pan again and continue to simmer for 30 minutes.
4. Serve in warm bowls accompanied by crusty bread and sprinkled with generous handfuls of Caerphilly cheese.

Kind Wines
The Great Wine Company has many producers striving to make wines in a more natural way, with as few invasive winemaking techniques and practices as possible in an effort to let the true character of the grapes and soil do the talking. Here at The Bath Magazine we have chosen our top 5:
Mas Sardana Cava Brut Nature - Franck Massard
This Cava has a bright gold colour with green tinges and threads of fine bubbles. The taste combines citrusy flavours and hazelnut finishing with a creamy texture. | £16.95
Red Art Grenache - Rojomoma
An elegant and fragrant wine with bright red fruit characters balanced with gentle savouriness. Very soft tannins. | £28.80
EDA - Franck Massard
On the nose this wine is subtle, reminiscent of black cherries and bananas, with smoky undertones. The palate is elegant, with soft, velvety tannins and eucalyptus notes. It has a wonderfully long, fresh finish. | £77.50
Sant Antoni - Scala Dei
This wine is super-silky and super-pure, with delicate raspberry, rosewater and aniseed aromas, subtle fruit and supple texture and an almost hidden but present liquorice-like concentration on the hauntingly-long finish. | £88.50
Cuveé Classic Cava - Pere Ventura
The aromas of crunchy green apple and white peach come to the fore on the nose, alongside hints of lemon balm and toasted brioche. | £12.95

Curated by Daniel McCabe
GRAIN is a graceful, ecologically-minded craft, lifestyle and culture magazine from France, that’s now published in a bilingual edition. Its gorgeous photography and thoughtful page design really do complement its ‘slow journalism’ and if you’re someone who’s missing the likes of Hole & Corner or Cereal you’ll love GRAIN.
It does, however, bring a slightly different blend to the lifestyle format, adding essays, poems, interviews and opinion pieces to invent what it regards as its very own medium, one that is both ‘subversive and poetic’. This issue explores the idea of ‘home’ and the interweaving threads between inside and outside, intimacy and community, emancipation and alienation, beauty, destruction and care. | £20

REOPENING | DISCOVER ARCHITECTURAL HISTORY
|
|
|
|
The Museum of Bath Architecture reopens to the public
The Museum of Bath Architecture will reopen on 30 March.
The museum tells the story of the rich architectural history of Bath, from its transformation from a small medieval town into the world-famous Georgian city, to the Victorian expansion and 20th century demolitions.
During this time the museum will be open Wednesday to Saturday, 10am-4pm, every week.
As part of the re-opening, consultation will take place asking the public to contribute to ideas towards the museum’s future. This will ensure the collection remains relevant, and the building is sustainable for current and future users.

Picture House presents 'Occupied City' and recorded Q&A
This screening is hosted in association with the Bath-Alkmaar Twinning Association, who will join to introduce Occupied City. The film will be followed by a recorded Q&A with director Steve McQueen.
From Oscar and BAFTA-winning filmmaker and Turner Prize-winning visual artist Steve McQueen comes this mesmerising and monumental excavation of how the past haunts our precarious present: mirroring it and warning us in plain sight.
In Occupied City, a searching camera sweeps through a vibrant contemporary Amsterdam while, at the same time, the film summons people and memories of the past under Nazi occupation within the city’s map and woven into the fabric of its streets and buildings.
Using no archival footage, nor a single interview, McQueen opens up a poetic, dreamlike space where unthinkable history and hope for a new future co-exist.
Includes a 20-minute intermission.

EVENT | UNPICK THE QUEEN OF CRIME

Fane events present an audience with Lucy Worsley on Agatha Christie
The Queen of History, Lucy Worsley, is heading back out on the road on 28 February to share stories from the fascinating life of the Queen of Crime, Agatha Christie at The Forum.
For these unique, live illustrated talks, Lucy will present one of the most elusive and enigmatic figures of the twentieth century. Why did Agatha Christie spend her career pretending that she was ‘just’ an ordinary housewife, when she clearly wasn’t? Agatha went surfing in Hawaii, she loved fast cars, and she was intrigued by the new science of psychology, which helped her through devastating mental illness. So why – despite all the evidence to the contrary – did she present herself as a retiring Edwardian lady of leisure?
Sharing her research based on the writer’s personal letters and papers, Lucy will uncover the real Agatha Christie – the story of a person who, despite the obstacles of class and gender, became an astonishingly successful working woman.
