'Now Keep Quite Still' by Herbert Shergold
Bristol Photo Festival, which opens at venues across the city next Wednesday (16 October), is asking for the public's help to identify the sitters in photographs by Herbert Shergold
Shergold operated a commercial photography studio throughout the 1950s and '60s. He created highly-stylised portraits of actors and members of his local community. In Shergold's studio, Bristol's working class were styled to appear like Hollywood stars. Little is known about Shergold and his work largely disappeared from view.
Hedy van Erp, curator and photo historian, has curated the first known exhibition of Shergold's work. The Festival is appealing to hear from those who recognise themselves, their families or friends in the images.

Beef Stroganoff
Recipe by Melissa Blease
Juicy strips of seared steak in a creamy mushroom gravy: Beef Stroganoff is a classic dish for very good reason – and it moves from stovetop to table in less than 20 minutes.
Ingredients (serves 4)
200ml beef stock 250ml soured cream (or crème fraîche) 2 thick sirloin steaks (around 300g each), trimmed of excess fat 100g butter 2 large shallots, peeled and sliced 200g chestnut mushrooms, sliced 1 clove of garlic, peeled and crushed 2 tsp smoked paprika 2 tbsp red wine vinegar 1 tsp English or Dijon mustard Small bunch of fresh parsley, chopped
To serve: steamed rice or hot, buttered tagliatelle
Method
1. Whisk the stock and all but 2-3 tbsp of the soured cream (or crème fraîche) together. Set to one side.
2. Use a rolling pin (and a bit of brute force!) to flatten the steaks to around 1cm thick and season generously. Heat 50g of the butter in a non-stick frying pan. When the pan is really hot and the butter starts to foam, add the steaks and sear for around 1-2 minutes on each side, until golden brown. Remove from the pan and set to one side on a plate.
3. Heat the remaining 50g butter in the pan. Add the shallots and sauté for around 5 minutes, or until just starting to caramelise. Add the mushrooms and continue to sauté for another 5-6 minutes or until the mushrooms are golden, adding the garlic and smoked paprika for the last 1-2 minutes.
4. Add the red wine vinegar to the pan and simmer for 1 minute. Turn the heat down and add the creamy stock. Heat through (stirring continuously) without allowing the sauce to simmer. Season to taste, then add the mustard and most of the parsley.
5. Add any steak juices that have collected on the steak plate to the pan, then slice the steaks into thick slices against the grain. Add the steak slices to the sauce in the pan and heat through.
6. Serve immediately on beds of steamed rice or hot, buttered tagliatelle, scattered with the remaining fresh parsley.
