Biodynamic Wines
Biodynamics is a form of organic farming that emphasises the interrelationship of soil fertility and plant growth; it draws on the spiritual theories of Austrian occultist Rudolf Steiner, that studies the astrological sowing and planting calendar, as well as treating the earth as a living and receptive, holistic organism.
Some grape growers who have adopted biodynamic methods claim to have achieved improvements in the health of their vineyards, specifically in the areas of biodiversity, soil fertility and crop nutrition, as well as pest, weed and disease management.
So, does it improve the quality of the wine? Certainly producers believe their Biodynamic grapes are stronger, clearer, and offer more vibrant tastes, as well as making wines that remain drinkable for longer.
In many leading blind tastings involving Masters of Wine and head sommeliers, Biodynamic wines have been judged superior to their conventional counterparts with better expressions of terroir: the way a wine represents its specific place of origin in its aroma, body and flavour.

Herb Crusted Salmon
Elegance meets simplicity in this crowd-pleasing dinner party centrepiece... Perfect, perhaps, for a Good Friday feast?

Ingredients (serves 6)
2 tbsp finely chopped fresh parsley 2 tbsp finely chopped fresh dill 50g dried breadcrumbs (preferably panko) The zest and juice from ½ a lemon 500g spinach 300ml double cream 100ml white wine 30g dried porcini mushrooms, roughly chopped 1 whole skinless salmon fillet (about 900g) 50g butter

Method
1. Finely chop the fresh herbs and, in a small bowl, mix them with the breadcrumbs, lemon zest, salt and freshly-ground black pepper. Set to one side. In a small pan, bring the cream, white wine and mushrooms to the boil in then remove from the heat immediately and set to one side to cool.
2. Put the spinach into a colander and 'rinse' it in boiling water straight from the kettle, to wilt the leaves. Rinse under cold running water to cool, then squeeze out as much of the water as possible.
3. Spread the wilted spinach across the base of a baking dish or roasting tin that’s large enough to snugly fit the whole salmon fillet. Season well and pour the creamy mushroom sauce across the spinach to create a 'bed'. Lay the salmon skinless side down on top of the sauce, drizzle with the lemon juice and scatter with the herby breadcrumbs so that the fillet is completely covered, patting them down as you go (note: if you want to get ahead you can, at this stage, cover the dish with clingfilm and keep chilled in the fridge for up to 24 hours.)
4. When you're ready to cook, preheat the oven to 190°C/gas mark 5. Dot the butter across the top of the breadcrumbed salmon and bake for 30-35 minutes or until the fish is through and the crumb is golden. Leave to rest for a few minutes before serving in thick slices, accompanied by buttered new potatoes and steamed seasonal vegetables.

Avon Wildlife Trust launches first wildlife gardening competition
Avon Wildlife Trust has launched its first wildlife gardening competition as part of a west of England-wide effort to create more spaces for nature and promote the power of pollinators.
The competition looks to celebrate the amazing green spaces across our region which are making a difference for wildlife. This could be a blossoming balcony, a small urban nature haven, a sprawling back garden, community patches, nature-friendly allotments, school outdoor spaces and everything in between.
The competition will be split into four categories: Individual, Community, Education and Food Growing. Entries are submitted using a form on the Avon Wildlife Trust website, where applicants will be asked questions about their garden and can upload a supporting photo or video to show off their space.
Three finalists from each category will be chosen by a panel of judges, and all 12 finalists will be visited by a Team Wilder Ecologist, to talk about their wildlife garden and offer expert advice. The winners in each category will go on to receive:
- A wildlife camera, to capture the visitors to their garden
- £75 voucher to spend at Grow Wilder
- Prints of the photographs taken of their green space
- A wildlife gardening book from the author, journalist and TV presenter Kate Bradbury
- Ecological advice
The competition will close at 11.59pm on Sunday 16 July.

Unicornfest arrives at The Galleries
Bristol’s 2023 public arts trail, Unicornfest, in aid of Leukaemia Care, is bringing its life-sized unicorns to The Galleries in Broadmead to start painting their unicorns.
Sponsors and artists were matched during a Valentine’s Day event where they had the chance to collaborate on their designs and paintings of choice. While the artists get going on their designs, members of the public will also now have the opportunity to secure a first peek at the artists in action.
Leukaemia Care CEO, Zack Pemberton-Whiteley comments: “[...] We are incredibly excited to see what the unicorns will look like! Please do come and visit us at The Galleries to take a closer look at the artists in action painting their unicorns.”
Unicornfest will see a herd of life-sized unicorns designed by Bristol artists from Inkie to Silent Hobo to Holy Moly, placed in over 59 prominent destinations across Bristol and beyond between July and September this summer.
Part of the 650 Years of Bristol celebrations running this year, the nine-week trail will end with an auction of the ‘blessing’ (that’s a group of unicorns!) which will raise funds for Leukaemia Care.
