Autumn soup, four ways
Parsnip, Chestnut and Smoky Bacon Soup (serves 4-6)
Tip 200g smoked bacon lardons into a large dry saucepan over a medium heat and sauté until golden. Remove the lardons from the pan and set to one side. Add 1 peeled, chopped onion to the pan and sauté in the bacon fat until tender. Add 6 peeled, diced parsnips, 1 clove of garlic (peeled and crushed) and a sprinkling of dried thyme and continue to sauté for 5 minutes. Add 600ml chicken stock, 400ml whole milk and 200g cooked, chopped chestnuts (the vacuum-packed variety come in very handy here!). Bring to the boil then simmer for around 30 minutes, or until the parsnips are completely tender. Remove from the heat and blitz with a stick blender until smooth. Season to taste, reheat until piping hot and serve in warm bowls, topped with the smoky bacon lardons.
Creamy Cauliflower Soup (serves 4-6; vegetarian)
Heat around 1 tbsp olive oil into a large saucepan over a medium heat and sauté 1 peeled, chopped onion until just turning translucent. Add 1 tbsp butter followed by the florets and chopped stalk from 1 medium-sized cauliflower and 1 medium-sized potato (peeled and chopped into chunks). Stir together, then partially cover the pan and cook over a low heat for around 10 minutes, stirring occasionally, until the vegetables have softened but not coloured. Add 1l vegetable stock and 500ml whole milk and bring to a gentle boil. Add the leaves from the cauliflower (chopped) and simmer uncovered for 12-15 minutes, or until the vegetables are soft. Add 150ml double cream or crème fraîche, season to taste, remove from the heat and blitz with a stick blender until smooth. Reheat until piping hot and serve in warm bowls topped with plenty of freshly ground black pepper.
Maple-roasted Carrot, Celeriac and Parsnip Soup (serves 4-6; vegetarian)
Preheat the oven to 180°C/gas mark 6. Peel 6 medium-sized carrots, 1 large celeriac (or swede) and 3 medium-sized parsnips and chop into equally-sized cubes. Toss the chopped vegetables with 2-3 tbsp olive oil, season well, tumble onto a baking tray and roast for around 30 minutes, or until the vegetable are tender and just starting to caramelise. Add 2 tbsp maple syrup to the tray, give everything a good shake and roast for another 10 mins until the vegetables are golden and glazed. Pour 800ml vegetable stock into a large saucepan and add the roasted vegetables. Blitz with a stick blender until smooth, season to taste, add a smattering of freshly-grated nutmeg and bring to a simmer. Serve in warm bowls topped with a swirl of thick plain yoghurt and a little more freshly-grated nutmeg.
Curried Swede Soup (serves 4-6; vegetarian)
Heat 2 tbsp olive oil and 2 tbsp butter in a large saucepan over a medium heat. Add 1 peeled, chopped onion and 2 finely-chopped celery sticks and sauté for around 10 minutes or until the onion and celery is soft and starting to caramelise. Add 1 thumb-sized knob of fresh ginger (grated), 2 cloves of garlic (peeled and crushed), 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground turmeric and 1 tbsp medium curry powder and sauté for 2 minutes until the spices are releasing their fragrance. Add 800g peeled, diced swede and 1.8l vegetable stock. Bring to the boil then partially cover the pan and simmer gently for around 1 hour, or until the swede is soft. Remove from the heat and blitz with a stick blender until smooth. Reheat until piping hot and serve in warm bowls topped with thick plain yoghurt and a drizzle of chilli or curry oil.

Mildew is a new biannual US/Mexican magazine focused on vintage fashion and the creative reuse and reworking of second-hand clothing. It’s printed both in Mexico and (sensibly) over here so it does feature some excellent UK content, and is part of becoming an increasingly common magazine genre given this is a burgeoning phenomenon on the high street (and needs must, with inflation and all that). Mildew does still feel original and genuinely steeped in ‘treasure-hunting’ which it extends beyond apparel to things such as charity shop paperback finds, portraits of antique shop owners and even one man’s odd quest to preserve Gap in-store playlists. £16.99

Lecture – Unbuilt Bath: the city as it might have been
Due to popular demand, Timothy Mowl will repeat his controversial and lavishly illustrated lecture on architectural schemes for Bath that were never realised, the subject of his recently published, co-authored book. It will take in all those missed opportunities and ways not followed – a vast double crescent in Bathwick by Robert Adam; a gigantic Reform Column for Laura Place that pre-dated Nelson’s Column in Trafalgar Square by ten years; a 1916 civic centre on Orange Grove; Abercrombie and Buchanan’s failed tunnel schemes; the infamous Sack of Bath and its consequences; Sir James Dyson’s glittering steel and glass School of Design Innovation for the Stothert & Pitt Works. The lecture will be a clarion call to Bath’s architects, planning officers and residents to demand better design for the city.

Trees planted in Bath in tribute to King Charles III and Queen Elizabeth II
Two English Oak trees have been planted at Bath’s Royal Victoria Park to commemorate the Coronation of His Majesty King Charles III and honour Her late Majesty Queen Elizabeth II.
The ceremony which took place yesterday (November 15) saw the trees planted next to each other, so that at maturity their crowns will visually join to symbolise unity. The location of the trees is also in keeping with the original layout of the heritage 57-acre park, which was opened by Princess Victoria in 1830.
The tree planting was carried out by Bath & North East Somerset Council and attended by HM Lord-Lieutenant Mr Mohammed Saddiq, the Chair of Council, Councillor Sarah Moore, the Mayor of Bath, Councillor Dine Romero and council Leader, Councillor Kevin Guy. Children from Widcombe Junior School also attended the event in recognition of their tree planting initiatives.
Following the planting, gatherers marked the occasion with a rendition of the National Anthem, led by members of the City of Bath Brass Band.
The Lord-Lieutenant, who planted the tree in tribute to His Majesty King Charles III, said: “It has been a very special occasion indeed and a lasting memorial to important moments in our history.”
The trees have been planted thanks to the support of the Charter Trustees of the City of Bath (Bath Ward Councillors).
