WEEKEND RECIPES | FISHY FEAST

Fish Burgers
Burgers never fail to satisfy. But fish burgers offer a lively, lighter alternative to the traditional meat-feast counterparts without forsaking any of that 'big bite' satisfaction.
If you're not a prawn fan, omit them and up the quantity of fish to replace the deficit (you'll need around 400g fish mixture in total). But when it comes to cooking your burgers, don't skip the refrigeration part of the recipe – if you fry them at room temperature, they're prone to crumbling and falling apart in the pan; you have been warned!
Ingredients (makes 4 fat fish burgers)
180g raw prawns (defrosted if frozen) 2 skinless salmon fillets 1 white fish fillet (eg. basa, cod or haddock) 3 spring onions The juice of ½ lime or lemon 1 bunch of coriander 2 tbs plain flour, lightly seasoned 1 egg, beaten 140g panko breadcrumbs
To serve
Brioche burger buns; mayonnaise; little Gem or Romaine lettuce leaves; sliced tomato
Method
1. Briefly blitz half the prawns, half the salmon, half the white fish, the spring onions, half the coriander and a spritz of lime or lemon juice in a food processor to create a coarse paste and chop the reserved fish and prawns into little chunks. Stir the whole lot together in a large bowl, season with salt and white pepper and shape into four chunky patties (clean hands are the best utensils here).
2. Sprinkle the seasoned flour onto a plate, beat the egg in a small bowl and tip the breadcrumbs into a second bowl. Coat each patty in a dusting of flour and briefly dip into the beaten egg followed immediately by a tumble in the breadcrumbs, patting firmly as you go to ensure that the breadcrumbs stick to the flour- and egg-coated burger. Transfer the burgers to a plate and chill for a minimum of 1 hour (or up to four hours, if you're getting ahead).
3. When you're ready to cook, heat around 1-2 tbsp vegetable oil in a large frying pan and fry the burgers over a medium-high heat for around 3-4 minutes on each side, or until the fish has cooked through and the burgers have developed a golden-brown crust. If air frying, preheat your fryer to 190°C and cook the burgers for around 12-15 minutes to achieve the same result, turning halfway through.
4. To assemble, spread the base of each burger bun with generous dollops of mayo, then top with the lettuce, burgers and slices of tomato. Dive in!

Due to its arid climate and low rainfall, the land simply cannot support such a concentrated volume of trellised vines as you might find in a country like France. Spain's vineyards are therefore dotted with low-lying, ancient bush vines better adapted to compete for the scarce resources.

Thatcher's Railway Inn awarded Double AA Rosette
Owned by Thatchers Cider and described as ‘a traditional country pub' and ‘worth a detour’, The Railway Inn joins the top ranks of UK restaurants, with just ten percent worthy of one or more rosettes.
Introduced in 1956, the AA Rosette award was the first nationwide scheme for assessing the quality of food served by restaurants and hotels.
Judges described The Railway Inn as being home to “accomplished cooking and local ciders.” According to the AA, to achieve the high standard of two rosettes the chef must show “greater technical skill, more consistency and judgement in combining and balancing ingredients, and have a clear ambition to achieve high standards”.
The pub is open Wednesday – Sunday and throughout summer holidays and bank holidays.

A new Perpetual 1908 in Platinum from Rolex
Watches and Wonders, the world’s biggest exhibition of new timepieces, completed a successful event last week at the Palexpo in Geneva with a stellar line up of dazzling new model releases. One such highlight was the new Rolex Perpetual 1908 in Platinum and Ice Blue.
The 1908 is the name for a collection of elegant new family of dress watches Rolex unveiled at the show last year, inspired in many ways and replacing the fondly remembered Rolex Cellini.
The new watch is housed in a 39mm, 950 platinum case and is graced with an ice blue dial featuring a guilloché rice-grain motif. This rosette-like design is distinctive for its three-dimensional, repeating geometric pattern that extends across the surface of the dial starting from the small seconds counter at 6 o’clock. The minute track is surrounded by a filet sauté with a crimped pattern, which is also guilloché.
And like its Celini predecessor,the watch is mounted on a brown alligator leather strap fitted with a Dualclasp, a double folding clasp.
The 1908 is equipped with calibre 7140, a movement at the forefront of watchmaking technology that features bridges decorated with Rolex Côtes de Genève and a cut-out oscillating weight. This superb movement enables the 1908 to display the small seconds, as well as the hours and minutes and the movement can be appreciated though the sapphire caseback.

Fans of the SS Great Britain can now get their hands on a piece of history with the launch of a new homeware collection made from the ship’s wooden weather deck.
The SS Great Britain’s Red Jarrah wood weather deck is currently being replaced with 6,050 metres of new Accoya wood planks, which will last for the next fifty years.
The items are crafted at Ginger & Tweed’s cottage home studio based in Box – which is quite fittingly the home to Brunel’s famous Box Tunnel.
The SS Great Britain Trust is also working alongside Simon Webb, who has transformed the Red Jarrah weather deck wood into beautiful jewellery and writing instruments. Simon has crafted earrings, necklaces and cufflinks from the reclaimed wood and shaped platinum and gunmetal.
