WEEKEND RECIPE | CHILL OUT!
Recipes by Melissa Blease
Classic Lemonade (makes approx. 1l) |
Roughly chop 3 large, unwaxed lemons and remove the pips. Tip them (peel and pith included) into a large blender or the bowl of a food processor along with 140g caster sugar and 500ml cold water and blitz until smooth. Pour the mixture into a sieve over a bowl, pressing as much lemon juice through the sieve as possible. Transfer to a jug, top up with 500ml soda or sparkling spring water, add ice and serve immediately.
Ginger Beer (makes approx. 1.5l) |
Peel and thickly slice 200g fresh ginger and add it to a saucepan along with 500ml cold water, the zest of 2 large lemons, 100g soft brown sugar and 75g golden caster sugar. Bring to a boil (stirring continuously to dissolve the sugars) then simmer for around 15-20 minutes until the mixture is syrupy and slightly reduced. Remove the syrup from the heat and allow to cool completely before straining the mixture into a jug through a sieve lined with muslin (at this stage, you can transfer the syrup to a small sterilised bottle or jar and keep in the fridge for up to two weeks). When ready to serve, pour the ginger syrup into a large serving jug, add the juice of 1-2 lemons (to taste), top with around 1l soda water and fill up with ice. Stir well, and serve immediately, garnished with a few sprigs of fresh mint.
Iced Tea (makes 1.5l) |
In a large jug, cover 6 tea bags of your choice with 1.5l boiling water. Add 2 tbsp caster sugar and 1 tbsp runny honey, stir well and leave to infuse for 10 minutes before removing (and discarding) the tea bags. When the infusion is cool enough to put in the fridge, chill until ready to serve. Before serving, add the juice of 1 large lemon. Chop a second lemon into slices and add to the jug along with 1 large sliced orange, a handful of fresh mint leaves, more runny honey (to taste) and plenty of ice cubes. Stir again and serve chilled.
Iced Mocha (serves 2) |
In a small pan, gently heat 100ml semi-skimmed milk with 50g milk or dark chocolate buttons until the chocolate has melted and leave to cool (do not allow the mixture even come close to boiling!). Meanwhile, prepare around 70ml espresso or very strong coffee and leave that to cool too. When you're ready to serve, half-fill 2 large glasses with ice and top with the cooled chocolate milk, another 200ml semi-skimmed milk (divided between both glasses) and the cool coffee. Stir to combine and serve topped with a dollop of whipped cream (or ice cream?) and a dusting of cocoa powder.

Curated by Daniel McCabe
HOLO is a Toronto-based editorial and curatorial platform tracking emerging trajectories in art, science and technology. Within this fascinating and entangled intersection of knowledge, HOLO searches out epicentres of critical creative practice, radical imagination, research and activism, presenting it all as accessibly as it can. Appearances of the platform's imposing print magazine have been sporadic, with only two issues in a decade, but at last we have the third outing: 'Mirror Stage: Between Computability and Its Opposite' in which fifteen luminaries question our problematic faith in and deference to AI, boldly "exploring the limits of knowledge, prediction, language, and abstraction in computation" in order to "measure the gap between machine learning hypotheticals and the mess of lived experience". | £34.99

Netflix – Persuasion, 15 July: the worst Austen adaptation in years (?)
The latest Jane Austen adaptation from Netflix – starring Dakota Johnson and filmed right here in Bath – has received some rather dismal reviews.
Persuasion's dialogue, claims The Telegraph, "perpetrates five war crimes per minute" whilst The Spectator suggests that "everyone involved should be in prison": scathing, to say the least...

Prior Park |
News that restoration of the middle lake at Prior Park allows visitors to see the Palladian Bridge once more reflected in its still waters prompts the first of this week’s archive photos.
It was taken around 1870, when the gardens had been left to their own devices for decades, and the bridge was regarded as little more than a handy place for schoolboys to carve their initials. Ivy twined round its columns, saplings sprouted from its crumbling stonework and vegetation choked the lake. The condition of the bridge, parlous though it was, however, was as nothing compared to the chapel further up the hill. This is seen in the second photo, also taken around 1870, looking almost like a ruin from Ancient Rome. Work on the chapel had started in 1844, but the money ran out and it was left, unfinished and roofless, until 1872, when the architect, Joseph Scoles, was brought back in to finish the job. It was completed ten years later, and the art historian Nikolaus Pevsner has described it as ‘the most impressive church interior of its date in the country’. The bridge too – despite being scored by graffiti – looks a whole lot better than it did a century and a half ago.
