Jubilee flash mob opens Bristol's first Festival of Voice
St George’s Bristol is bringing a special flash mob with a baroque twist to central Bristol this Sunday 5 June, in celebration of the Queen’s Platinum Jubilee, and opening Bristol’s first Festival of Voice.
Performing the famous Hallelujah! Chorus from Handel’s Messiah, the flash mob will be made up of a group of choral singers and a brass band. It will visit several locations in the city, and will gradually be joined by more and more performers. They will begin at Bristol Temple Meads, where an actor dressed as Handel ‘arrives’ in Bristol – bringing with him his choir and band – to perform on one of the platforms.
The flash mob will then leave Temple Meads and proceed through Bristol. Its next stop is St Mary Redcliffe Church just as their morning service is finishing, to deliver another performance for the departing congregation and local dignitaries including the Lord Mayor Paula O’Rourke. The flash mob will then gather yet more singers at Millennium Square at 12.30pm to give a public performance, with a final performance taking place at 12.50pm on College Green, to launch the Big Jubilee Lunch.

WEEKEND RECIPE | BERRY SWEET
Recipe by Melissa Blease |
Strawberry 4 |
Strawberry Gazpacho (serves 4, at the start of a tapas feast) |
In a large bowl, gently combine 700g ripe strawberries (hulled and chopped) with 300g chopped, ripe tomatoes, 1 large, chopped, roasted red pepper (from a jar), 1 small shallot (peeled and finely-chopped), 1 clove garlic (crushed) and 1 tbsp sherry or red wine vinegar. Cover the bowl and allow the mixture to infuse in the fridge for 8 hours, or overnight. When ready to serve, add 75ml extra virgin olive oil to the mixture and whizz together with a hand blender (or in a food processor) until really smooth, adding a splash of water if the mixture is looking too thick. Season to taste. Pour a little olive oil into a frying pan over a medium heat and fry bite-sized chunks of sturdy white bread (sourdough works well here) for 4-5 minutes or until golden. Drain on kitchen paper and sprinkle with plenty of salt. Divide the gazpacho between 4 soup bowls (or large glasses) and garnish with the fresh croutons and fresh basil leaves, finished with a drizzle of extra virgin olive oil and freshly ground black pepper. Serve immediately, preferably with glasses of chilled Amontillado or Palo Cortado.

Balsamic Strawberries with Burrata (serves 4 as a starter) |
Gently mix 250g hulled, quartered strawberries with 2 tbsp aged balsamic vinegar, 1 tbsp maple syrup, a handful of fresh basil (finely chopped) and plenty of seasoning. Set aside for a minimum of 10 minutes but preferably half an hour. Tip the marinated strawberries onto a serving platter, tear 200g burrata (or mozzarella) and scatter it over the strawberries, followed by any marinating juices left in the bowl. Top the lot with freshly ground pepper and more fresh basil leaves, and serve immediately.
Strawberry, Tomato and Watercress Salad with Honey and Pepper dressing (serves 4 as a starter) |
Toast 1 tbsp pink or black peppercorns in a dry frying pan for 1-2 mins until fragrant, then bash briefly using a pestle and mortar (or a sturdy bowl and the end of a rolling pin) to break up the skins. Add 2 large, ripe strawberries (hulled and chopped) and smash the mixture together to form a paste. Add 1 tbsp runny honey, the juice of ½ a lemon and 3 tbsp extra virgin olive oil and whisk well until thoroughly combined, adding more salt and/or lemon juice to taste. Set the dressing to one side while you hull and slice 300g ripe strawberries and roughly chop 250g ripe tomatoes. Tip 100g watercress (woody stalks removed) into a bowl, add the strawberries and tomatoes and tumble together gently, using your hands. Pour the dressing over the top and gently tumble again until all the ingredients are coated with the dressing. Serve immediately.
Frozen Strawberry Daiquiri (serves 2) |
Tip 500g hulled strawberries into a blender and blitz to create a puree. Push the puree through a sieve to remove the seeds, then tip it back into the blender along with 100ml white rum, 1-2 tbsp sugar syrup (or to taste), the juice of 2 limes and around 200g ice cubes. Blend again and divide the mixture between 2 Martini glasses, garnished with chopped fresh strawberries threaded onto cocktail sticks. Serve immediately; cheers!

WEEKEND WINE | CHABLIS LIKE A STAR
A grape domaine |
Hugely underrated, Domaine Louis Michel produces consistently exquisite and good value Chablis. Winemaker Guillaume Michel makes no apology for his refusal to use oak barrels to age his wines, allowing his wines to convey a very special sense of their unique vineyard origins.
The range of Louis Michel Chablis are expressive, individual and rival the most famous white Burgundy from further south, at a fraction of the cost. To be believed – you need to try these.
Chablis This is outstanding Chablis, that evokes its northern Burgundy origins with a fabulous sense of place. It displays the typical 'stony' character of the region, over which are layered exciting notes of white peach, apricot and chervil, thanks to the care and dedication in the vineyard and cellar of this top producer. £28
Chablis Premier Cru Montmain This delicious wine demonstrates that magical Premier Cru combination of ripe fruit with quintessential Chablis saline character. Intricately complex, with spicy floral aromas, toasted almonds, candied lemon and apple; it is dry, lively, pure and accessible, with no artifice. £33
Chablis Premier Cru Montée de Tonnerre The very finest and most prestigious Premier Cru, offering quality regularly approaching that of Grand Cru Chablis. A powerful wine with complexity, balance, wonderful refinement and ageing potential. £42
Chablis Grand Cru Vaudésir Grand Cru Vaudésir is truly one of the profound white wines of Burgundy. Louis Michel's vines are in the lower part of the Grand Cru vineyard, and therefore yield fabulous 'puissance' (oakyness), richness and concentration, underpinned by trademark dryness. It demands keeping at least a couple of years, and will age gracefully for a decade or longer. £59.50

Award-winning Bristol charity Digilocal calls for more volunteers
Digilocal, a Bristol-based charity which runs free technology clubs and provides laptops (new or repurposed) to young people aged 8-16 across Bristol, is calling for more volunteers to help run its clubs.
Digilocal has been running clubs since 2016 and has set up 14 clubs in Bristol and surrounding areas in partnership with volunteers and local communities. The charity sets up clubs in areas where there are higher levels of deprivation and targets young people who are underrepresented in technology. Digilocal believes that embedding the clubs in the communities in which the young people live is key to giving young people the opportunity to discover their digital talents and develop the problem solving skills that will be vital in their future career choices.
Having volunteers to support the tech clubs reduces costs and overheads and enables young people to receive support and mentoring from those who work in, or have experience in, the technology industry.
Find out how to volunteer at digilocal.org.uk.
