"Pilate saith unto him, What is truth? And when he had said this, he went out again unto the Jews, and saith unto them, I find in him no fault [at all]."  John 18:38 KJV

Throughout the month of October, we will examine biblical promises. Declarations that are unequivocally true. One such promise is found in Isaiah Chapter 40. Arguably one of the most powerful key verses in the whole Bible promises believers that the Word of God is everlasting!

Isaiah 40:8 reads…”The grass withers and the flowers fall, but the word of our God endures forever.” This verse promises us that the Word of God stands. It lasts forever. It won’t change and it won’t fail us.

Matthew 7:24-25 further supports this promise through the declaration of,“Therefore everyone who hears these words of Mine, and acts upon them, may be compared to a wise man, who built his house upon the rock. And the rain descended, and the floods came, and the winds blew, and burst against that house; and yet it did not fall, for it had been founded upon the rock.”

John 1:1 reveals, “In the beginning was the Word, and the Word was with God, and the Word was God.” And Revelation 19:13 speaks of Jesus’ return and reads, “And He is clothed with a robe dipped in blood; and His name is called The Word of God.”

To God Be The Glory for the Biblical Promises of God. Isaiah is clear… The Word of God will never fail and will not fade, but the flowers, and the grass, the temporary empires luring us in will fail or one day fall at the feet of Jesus. What a beautiful reason and declarative promise to put our faith and trust in the Word of God. To put our complete faith and trust in the Lord.

As we wrapped up our extensive study of Paul during the months of August & September, for the month of October, we will learn about another great character of the Bible, Joseph. As his story is detailed in the Old Testament in the book of Genesis, we will discover how this amazing man overcame being sold into slavery to becoming a great ruler in Egypt.

Welcome to the 40 Year Christians' Cooking Corner! 

Here we will feature recipes from the 40 Year Christian Group. This week's recipe was submitted by Sister Alyce Emerson from Nutrition Education Program, UK Cooperative Extension Service.

Grits, Greens, and Egg Bowl

Prep time: 5 minutes

Cook time: 10 minutes

Ingredients

• 1/4 cup quick-cooking grits
• 2 tablespoons shredded, sharp cheddar cheese
• Nonstick cooking spray
• 1/2 cup packed, fresh, chopped spinach
• Dash garlic powder
• 1 egg
• Salt (optional)
• Ground black pepper (optional)
• Hot sauce (optional)

Directions

1. Wash hands with soap and warm water, scrubbing for 20 seconds.
2. Cook grits according to package directions. Once done, stir in cheese. Set aside until the remaining ingredients are prepared.
3. While grits cook, heat a small skillet over medium heat. When the skillet is hot, coat it with cooking spray. Add spinach and garlic powder and lightly sauté until spinach is warm and tender, about 1 minute. Remove from pan and set aside.
   
4. Return skillet to the stove.
   Coat the pan with cooking spray. Crack an egg into the pan and cook the egg on each side until the yolk is set,
5. Rewash hands after handling raw eggs.
6. Assemble the meal in a bowl by first adding the grits, then the spinach, and topping with the egg.
7. Season dish to taste with salt, black pepper, and hot sauce, if desired.
8. Serve immediately. Refrigerate leftovers within 2 hours.

Notes: Try other greens like collards or kale as a substitute for spinach or reheat leftover cooked greens for this recipe. This way, you can always use what you have on hand. If you prefer scrambled egg, prepare it instead of a fried egg.
