On October 10, the day of my book launch, Mom suffered an Ischemic stroke deep in her left brain that left her weak on her right side and a little confused. Since then her physical weakness has improved, but her mind has not. Last Friday she had a whopper of a hallucination that prompted another ER visit. Thankfully she had not experienced another stroke. She and I agreed that it would be best if she stayed with Marvin and me until she feels confident returning to her independent living facility. Turkey Pot Pie
2 cans (15 oz. each) Veg-All mixed vegetables, drained 1 can (10-3/4 oz.) cream of potato soup 1/4 cup whole milk 2 cups shredded cooked turkey 1/4 tsp dried thyme 1/4 tsp black pepper 2 (9-inch) refrigerated ready-to-bake pie crusts
Preheat oven to 375° F. In a medium bowl, mix first six ingredients well. Place one pie crust into a 9-inch pie pan. Pour mixture over it. Top with remaining crust and crimp edges to seal. Slit top. Bake for 50-60 minutes on lower rack or until crust is golden brown. Allow pie to cool slightly before cutting into wedges to serve. Makes 8 servings
