WEEKEND RECIPE | HOORAH FOR NIÇOISE
|

Salade Niçoise (serves 4) |
|
Boil 500g halved, unpeeled new potatoes for 12-15 minutes (or until tender), adding around 300g trimmed green beans (chopped into bite-sized slices) for the last 3-4 minutes of cooking time. Drain and set to one side. Hard boil 4 large eggs for around 6 minutes (for a slightly soft-set yolk) and plunge into cold water before peeling, to avoid the dreaded 'green rim'. Whisk 6-7 tbsp extra virgin olive oil with 3 tbsp red wine vinegar, 2 garlic cloves (crushed), 2 tbsp finely-snipped chives and plenty of seasoning. Tumble 10-12 cherry tomatoes (halved), 10-12 pitted black olives and 2 stripped, torn baby gem lettuces into a large salad bowl. Add the room-temperature potatoes and beans along with the salad dressing and mix gently to combine (clean hands are the best utensils here!). Top the salad with the hard boiled eggs, the contents of 2 x 200g high-quality tinned tuna in olive oil (drained) and 6-8 anchovy fillets. Serve immediately.

Waldorf Salad (serves 4) |
|
Toast 50g shelled, roughly-chopped walnuts in a dry frying pan until fragrant and set aside to cool. Put 50g sultanas into a small bowl and add enough boiling water to just cover; set aside. Peel and core 2 sharp green apples and chop into matchsticks. Put the apple matchsticks into a large bowl and tumble with the juice of ½ a lemon. Destring and finely slice 2 sticks of celery and add to the apples. Mix 100g mayonnaise with 2 tbsp natural yoghurt (or crème fraîche) and 1 generous tsp Dijon mustard and season to taste. Drain the sultanas and add to the apple and celery followed by most of the toasted walnuts (keep some back for garnishing) and the dressing. Stir well to combine. Strip the leaves from 2 Little Gem lettuces and divide them across 4 serving plates. Top each lettuce-lined plate with equal amounts of the salad mixture and top with the reserved toasted walnuts and a drizzle of walnut oil. Serve immediately.

Caprese Salad (serves 4) |
|
Chop around 600g ripe tomatoes into quarters or bite-sized chunks depending on size (use really, really good, flavoursome, room-temperature tomatoes for this recipe, as they're the co-stars of the show). Put the tomatoes into a bowl, sprinkle liberally with salt and set to one side for 10 minutes before adding 1-2 tbsp extra virgin olive oil and gently tossing with a couple of spoons. Arrange the tomatoes on a big flat platter and spoon the juices from the bottom of their bowl over the top. Tear 250g room-temperature buffalo mozzarella into chunks and dot hither and thither over the tomatoes. Drizzle with a little more extra virgin olive oil, a sprinkling of salt and a liberal scattering of torn basil leaves. Serve immediately.

Caesar Salad (serves 4) |
|
Remove the crusts from 2 slices of day-old white bread and cut into croûton-sized cubes. Heat around 3 tbsp olive oil in a non-stick frying pan, add the bread cubes and fry over a high heat for 3-4 minutes until golden-brown. Transfer the croûtons to a bowl, season with salt and pepper while still warm and set to one side. Combine 6 tbsp mayonnaise, 1-2 tbsp Dijon mustard, 2-3 tbsp finely-grated parmesan, 1 clove garlic (peeled and crushed), a few drops of Worcestershire Sauce and 1 tbsp tepid water and gently beat until smooth. Tear the leaves from 1 sliced Romaine lettuce heart into a large serving bowl along with 12 cherry tomatoes (halved). Add the dressing and toss gently until the lettuce leaves and the tomatoes are thoroughly coated in the dressing. Scatter with the toasted croûtons, plenty of finely-grated Parmesan and a generous sprinkling of black pepper. Serve immediately.

Review: the new brunch menu at Coppa Club Clifton Village
Coffee, pancakes – repeat. Coppa Club’s new brunch menu ticks all of the classic boxes, and more.
Crushed Avocado and Buckwheat Pancakes; a Garden Breakfast of grilled halloumi and mushrooms; Shakshuka with baked feta and chorizo – and that’s just a few of the options on Coppa Club Clifton’s new brunch menu.
I go for the Crushed Avocado and Eggs on toast – spicing things up a little with the addition of some kiln smoked Severn and Wye Salmon – whilst my companion is kept sweet by Coppa’s Buckwheat and Rye Pancakes, the great, golden stack of which arrives topped with a pile of fresh berries and lashings of coconut yoghurt.
We do attempt to wait until our (second) coffee arrives before tucking in – but pancakes and avocado will not be denied. One mouthful in, and I’m a happy camper: eggs are poached to perfection (hitting the correct yolk-runniness-level can be a challenge) and the salmon gently smoked and flaked...

Viscose is a Copenhagen-based journal for fashion news and criticism published roughly once a year in – for some reason – novelty packaging. The first issue came in a handbag, the second as something that looked like shrink-wrapped underwear (both sold out) and the latest has arrived inside a Chinese fan. The fan itself is a nod to the issue’s focus on the fashion scene in Asia (it’s called the ASIAS issue, published in partnership with X Museum in Beijing) and, gimmicks aside, this is must-have for anyone interested in contemporary fashion from an interesting think-tank in the field. £20

Bs9 Arts Trail, across Bristol, 18-19 June
After a couple of years of disruption due to the pandemic, the BS9 Arts Trail is back in its usual summer slot in the Bristol art calendar.
The trail takes place in 13 fantastic venues around Henleaze, Stoke Bishop and Westbury-on-Trym. Take a summer walk around the BS9 postcode and discover amazing buildings in stunning locations, including Trinity College, Redmaids’ High and Badminton schools, and the tucked away Trymwood Studios.
The 88 local artists taking part in the trail are passionate about their work. Some are amateurs who make their work as part of their hobby, while others are established professional artists, whose work is shown in galleries around the country.

Bristol Old Vic invites you to meet Little Amal on her journey through Bristol
Little Amal captured the world’s interest in 2021 as the giant, 3.5m tall puppet that walked nearly 5,000 miles across Europe, focussing our attention on the urgent needs of young refugees.
That attention is now more urgent than ever, and on Friday 24 June, Little Amal, the living artwork of a young Syrian refugee child, comes to Bristol – and you’re invited to welcome her and walk with her around our city.
Little Amal’s Bristol journey will begin at 4pm outside Bristol Old Vic on King Street and then via Welsh Back to St Nicholas Market and Corn Street – hearing music and watching performances by local artists and meeting local communities – before leaving the city at the harbour.
Artists and community groups will be performing throughout Little Amal’s walk, including Syrian musicians Dijwar Khalil and Soufian Saihi who welcome her to King Street, Bristol's first Poet Laureate Miles Chambers, the Bristol Community Choir, DMAC drummers and many more.
Meeting thousands of people along the way, the journey of Amal (which means hope in Arabic) offers a moment to reflect on Bristol’s complicated past, while considering our ambitions for the future of the city.

The Bristol Schools 48-Hour Film Challenge returns, 24-26 June
Could you make an original 4-minute film in just 48 hours?
Redmaids’ High School is delighted to announce that the Bristol Schools 48-Hour Film Challenge is back this summer and will take place between 24-26 June. The challenge – wholeheartedly embraced by the Bristol school community last year – is now open for registration for students from schools and extra-curricular clubs from across the city. All Bristol students aged 7-18 are invited to take up this fast-paced and creative challenge and shoot, edit and submit a short original 4-minute film with any device or their mobile phones within 48 hours – could you do that?
In 2021, the panel of judges from the film industry included, among others, Col Needham founder and CEO of IMDb, and “Mamma Mia!” screenplay writer Catherine Johnson; both had such a great time that they are back again this year!
Schools are invited to register their challengers by Friday, 17 June. Teams must also have a designated adult to oversee the weekend, and there is a charitable donation fee of £5 per team. The earlier teams register, the more workshops and guidance they will have access to, so early registration is encouraged. First batch of ‘Fairfield Hot Sauce’ proves huge success
Young entrepreneurs from Fairfield High School (FHS) have created their first batch of Fairfield Hot Sauce (a clever pun on FHS!) with huge success. As a result, Kayne, Yusuf, Dineiro and Keiran now have their sights set on scaling up the operation, with further batches to share within the school community, plus potential sales on a wider scale.
The idea was born when Tom Sinclair, English teacher at FHS, brought hot sauce into school to give his sandwich a zing. Once the students got wind of this, they asked to try it on their food, and before long conversations were struck about cooking, flavours and food culture. With enthusiasm to recreate a similar recipe, the boys spent hours experimenting, with mouth-watering results.

Bristol Beacon presents Nile Rodgers & CHIC and Belle & Sebastian
Music legends, Nile Rodgers & CHIC, will be appearing for two consecutive nights on Wednesday 13 and Thursday 14 Jul at The Amphitheatre, Bristol Harbourside, with indie-pop icons Belle and Sebastian rounding off the three-day musical event, presented by Bristol Beacon, on Friday 15 July 2022.
Since co-founding CHIC in 1976, Rodgers has built an unrivalled back catalogue of hits and reshaped the music scene with smash hits like Dance, Dance, Dance, Good Times and Le Freak.
2022 marks 26 years since Belle and Sebastian released their debut album Tigermilk sparking a cult-like following around the world. They also returned earlier this month with a brand new album A Bit of Previous, released on 6 May. Led by Stuart Murdoch, Glasgow’s Belle and Sebastian have provided the soundtrack for love-struck teens and yearning adults for over a quarter of a century.
These outdoor gigs form part of the Bristol Beacon Presents programme which sees the city’s foremost concert venue programming concerts across Bristol in the city’s independent and unique venues while the venue undergoes its multi-million-pound transformation.

Bristol International Balloon Fiesta announces new Huboo Sky Lounge
The sensational Bristol International Balloon Fiesta is returning to its home at Ashton Court Estate to celebrate its 44th year from Thursday 11 to Sunday 14 August – and its brand-new private enclosure, Sky Lounge (in partnership with e-commerce fulfilment provider, Huboo) will ensure guests get up close to the action in the ballooning arena.
Those with tickets will witness the iconic mass balloon ascents at 6am and 6pm, as well as two iconic nightglows away from the crowds. Along with a private grassed area close to the balloons along the arena fence line, Huboo Sky Lounge hospitality will include beautiful garden seating for the perfect picnicking spot, free Wi-Fi for posting stunning images of the balloons, as well as access to a private bar and toilets and numerous kids activities from Junkfish.

Opening times extended at Temple Quay Street Food Market
Marking 10 years since the start of the ever-popular Temple Quay street food market in Bristol, organisers Square Route Events have announced that the market will be expanding to open twice a week.
Due to the popularity of the long-established Thursday lunchtime market at Temple Quay, at the heart of Bristol’s business quarter, a food market will also be held on Tuesday lunchtimes starting from 21 June.
The new Tuesday market will give the opportunity for visitors to the market to experience a host of different food operators, such as Filipino street food from Aurora Kusina, Smak Bristol serving Swedish inspired meatball dishes, and gourmet street food pasta from Toff’s Pasta.
Temple Quay market is known to be one of the busiest in the city, and since September 2021, as more staff have returned from working at home to the offices there, the market is returning to pre-pandemic levels, attracting upwards of 1,000 customers every Thursday.
