WEEKEND RECIPES | WARM UP THE WINTER NIGHTS
|
|
|
|
Recipe by Melissa Blease
The Tastiest EVER Sausage Traybake
Nothing warms us up on a chilly winter's evening faster than sausages and mash. But bangers don't need to be boring!
Peppery Cumberland or sticky caramelised onion sausages both work really well in this recipe, while vegetarian sausages or meat-free meatballs turn this feast into a plant-based treat.
Spicy chipotle paste (readily available in most large supermarkets) is made from a purée of smoked, dried jalapeño chillies blended with smoked paprika; heat levels vary from brand to brand, so taste yours before adding to the mix... and prepare to become addicted.
Ingredients (serves 4)
2 tbsp olive oil 1 tbsp runny honey 1 tsp smoked paprika 1 tsp ground cumin 1 tbsp tomato purée 1 tbsp spicy chipotle paste 8 fat sausages 2 red onions, cut into thick wedges 2 red peppers, deseeded and chopped into chunks 1 large butternut squash, peeled and chopped into 2cm chunks
Method
Preheat the oven to 180°C/gas mark 5. Pour the olive oil and the runny honey into a large bowl and add the paprika, cumin, tomato purée and chipotle paste. Stir well to thoroughly combine, then add the onions, peppers, squash and sausages to the bowl and toss together so all the ingredients are evenly coated in the spice mixture.
Tumble the lot into a large roasting tin, spread out into an even layer and roast for 30-40 minutes, shifting everything around occasionally to ensure even browning.
Serve immediately, accompanied by mashed potatoes, creamy polenta or crusty bread, with buttered seasonal greens on the side.

A year in wine
As we come to the end of the year, the team at The Great Wine Co. have been reflecting on their personal favourite wines of 2023. So take a note from the professionals and get inspired by some of their top picks:
Raupo Creek Pinot Noir – Seresin Estate The nose exhibits notes of ripe dark berry fruit, alongside hints of rosemary and leather. The palate is concentrated, framed by fine, well-integrated tannins and a persistent, fresh finish | £22.91
Chardonnay Reserva – Viña Leyda A tribute to varietal purity, this is a fruit-driven, unoaked style of Chardonnay. It has citrus, kiwi and cherimoya fruit character, with a satisfyingly rich, creamy teaxture, balanced by a fresh, juicy finish | £10.95
Organic Tempranillo – Embrujo del Campo A wonderfully expressive red, serving up a palate of black fruit - blackcurrants, blackberries - elevated by a fragrant sprinkling of spice | £8.29
Douro Old Vines Reserva – Quinta Do Crasto Hugely complex, this wine has concentrated aromas and flavours, married to wonderful freshness. It is lively and juicy, but with intriguing nuances of spices, Mediterranean herbs, olives and well-integrated oak | £31
Ventoux 'Les Boudalles' – Domaine Brusset This wine not only looks like raspberries in the glass, but it shows them on the nose as well. On the palate it is supple, elegant and harmonious, and the aromatics give it a lift which can be very moreish! | £9.58

It's full of unique insights from the perspective of 103 service industry heroes that lived in Kyoto for 4-6 months. The experiences we lived, the journeys we undertook, the dishes we cooked, the food we ate, and the people we met.
