WEEKEND RECIPE | FRUITS DE MER
By Melissa Blease |
Seafood Linguine |
Treat your loved one, your best friend or indeed, just yourself to this simple but super-stylish seafood dish, guaranteed to spread the suppertime lurve to both old romantics and V-day deniers alike.
Ingredients (serves 2)
500g fresh mussels 200g large raw prawns, peeled and deveined 1 garlic clove, crushed ½ red chilli, finely sliced 40ml white wine 3 tbs crème fraiche (reduced fat is fine) The juice of ½ lemon 200g fresh linguine Small bunch flatleaf parsley, roughly chopped 100g fresh white crab meat
Method
1. Scrub the mussels in cold water, remove the beards and set to one side. If any mussels remain open after tapping them against the side of the work surface, discard them immediately.
2. Heat 2-3 tbsp olive oil in a large, lidded saucepan and sauté the garlic and chilli for no longer than 2 minutes before adding the mussels and the wine. Cover the pan with the lid and continue cooking for around 2-3 minutes, shaking the pan occasionally, until the mussels open. If any mussels remain closed at the end of cooking, discard them immediately.
3. Add the prawns and cook for a further 4–5 minutes, adding the crème fraiche for the last couple of minutes of cooking time. In a separate pan, cook the fresh linguine according to the instructions on the packet (usually around 2 minutes); drain the pasta, dot with butter and put to one side.
4. Remove the mussels and prawns from the heat and add the chopped parsley. Season to taste with salt and freshly ground black pepper.
5. Add the cooked pasta to the pan with the shellfish sauce and combine well (kitchen tongs are your best friend here). Serve immediately in warm bowls spritzed with fresh lemon juice, topped with the fresh crab meat and sprinkled more freshly chopped parsley.

FOUR OF A KIND | LOVE POTIONS

Valentine's Tipples |
Classic: Champagne Cocktail
Put 2 white sugar cubes onto a small dish and drizzle with ½ tsp Angostura bitters, turning the cubes a few times until they're fully coated. Drop each cube into a Champagne flute, then cover each one with 10ml Cognac before slowly topping up with around 150ml cold Champagne. Twist a strip of orange peel over each glass to express the oils before serving immediately.
Fun: Frozen Strawberry Daiquiri
Blend 500g hulled strawberries then push the resulting puree through a sieve to remove the seeds. Tip the sieved puree back into blender and add 200g ice, 100ml white rum, the juice of ½ fresh lime and 1-2 tbsp sugar syrup, depending on how sweet you like your drinks. Blend again before dividing the mixture between two chilled Martini glasses and serving immediately.
Alcohol free: 'Whiskey' Sour
Tip 2 tsp Assam tea leaves into a heatproof jug and add 150ml boiled water. Immediately strain the tea through a fine mesh sieve into a second heatproof jug, discarding the tea leaves. Add ½ tsp vanilla extract and allow to cool completely. Pour 100ml of the cooled Assam tea infusion into a cocktail shaker along with 50ml lemon juice, 1 egg white, 1 tbsp sugar syrup (or to taste) and a handful of ice cubes. Shake until the outside of the shaker feels very cold before straining into an ice-filled tumbler. Serve immediately, garnished with a slice of lemon and a cocktail cherry.
Cosy: Grown-up Hot Chocolate
Heat 150ml semi-skimmed milk in a small saucepan over medium heat until almost at boiling point. Add 3-4 tbsp high quality dark cocoa powder and continue to simmer, whisking constantly until the cocoa powder has integrated into the milk. Whisk in another 350ml milk and continue to heat but do not allow to boil. Now... it's up to you! For adult-orientated depth and nuance, add a couple of shots of bourbon, brandy or dark rum. For extra-added creaminess, add Baileys. For a smooth, subtle, coffee-tinged hit, add Kahlua. For an after eight treat, add Creme de Menthe. For hot chocolate orange, add Cointreau or Grand Marnier... you get the idea? Serve warm, garnished with whipped cream and a dusting of freshly-grated dark chocolate.

THE MAGAZINE KIOSK | WHY WE LOVE PRINT
Curated by Daniel McCabe
The Angels’ Share is a new project exploring the art, science, production and culture of whisky. It utilises all the trappings of the modern indie print magazine – in-depth, long-form writing, beautiful photography, premium production values and, of course, a ton of passion about its subject. Other than the excellent TONIC we have little to offer in the way of periodicals dealing in spirit refreshments and even if it sounds odd we think this entertaining whisky magazine will look great on the coffee table.

Wonderfundraiser set to take place at Bath’s Egg Theatre |
On Thursday 24 February at 6.30pm, Bath's dedicated young people's theatre The Egg is hosting a magical, interactive and suitably theatrical FUNdraiser of a lifetime to celebrate the theatre's unique initiative, the Wonderfund.
The Egg, which first opened its doors in October 2005, is an established, nationally recognised centre for creativity, innovation and young people at the heart of the Theatre Royal Bath. The Wonderfund aims to make 4000 Egg Theatre tickets - and all the logistics that come with those tickets, such as transport and teacher support - available to state school children this year; ultimately, the goal is to make sure every child has been to the theatre at least once.
The WonderfundRaiser will raise awareness of the Wonderfund campaign and attract donor support in a uniquely creative atmosphere far removed from a traditional fundraising event
The WonderfundRaiser takes place at The Egg. Guests can confirm their attendance at the WonderfundRaiser by visiting this link: theatreroyal.org.uk/event/wonderfundraiser

LOOKING BACK | ICONIC VIEWS
By Andrew Swift |
The Royal Crescent |
It’s tempting to assume that Bath’s most iconic views have changed little over the years. These two archive photographs of the Royal Crescent, however, show how different it once looked. The first dates from around 1910 and shows the field in front of the Crescent enclosed by a fence – not so much to keep people out as to keep the sheep and cattle that grazed there in. The most striking difference from today’s view, however, is the church spire rising above the rooftops. This was St Andrew’s, which stood on the wide expanse of grass behind the Crescent. It was consecrated in 1873 and the 67-metre spire was added five years later. After being gutted by fire in the bombing raids of April 1942, it was originally intended to restore it, but in 1949 the decision was taken to demolish it. The second photograph, taken by the late Bruce Crofts in the mid-1950s, shows another wartime development. In 1943, as part of the Dig for Victory campaign, the council voted to establish 50 allotments in front of the Crescent. The number eventually rose to 72 and they survived until 1957 when the allotment holders were offered alternative sites and the field in front of the Crescent was restored – at a cost of £200.

Bath Abbey Choir records music to remember those lost during pandemic |
Bath Abbey’s Choirs of Boys, Girls and Lay-clerks will be hard at work next week (week beginning 14 Feb) recording a new CD.
Provisionally titled 'Memoriam’, the album is to help those who have lost loved ones, or who have had their lives significantly changed during the pandemic, to grieve and allow them to remember all that they have lost through the comfort of music.
The Abbey Choirs’ new CD will feature the Boys, Girls and Lay-clerks conducted by Huw Williams, Bath Abbey’s Director of Music, singing a selection of music including Schubert's beautiful Litanei Alle Seelen in memory of All Souls, William Harris’s masterpiece Faire is the heaven, written to words by Edmund Spencer, as well as much-loved comforting hymns The day thou gavest and Abide with me.
Bath Abbey's Choir is unique compared to other greater church or cathedral choirs. It comprises three groups – the Boys, aged 8 upwards; the Girls, aged 11-18 and the adult lay-clerks and choral scholars – and unusually, the boys and girls don't attend a dedicated choir school but are selected from schools all around Bath. There are 25 girls (aged 11-17), 20 boys (aged 8-14) and 12 adult lay-clerks (who sing the alto tenor and bass parts) in the Abbey Choir.
