WEEKEND RECIPE | SEASONAL SUPPER
Recipe by Melissa Blease
4 Spring Greens
It's time to celebrate vibrant, tender spring greens: the first cabbages of the year, cropping up in abundance right now.
A springtime spin on Pasta e Fagioli (serves 4)
Bring 700ml vegetable stock to the boil in a medium-sized saucepan. Add 75g orecchietti, cavatelli or macaroni and simmer according to the cooking instructions on the packet, adding 250g rinsed, shredded spring greens for the final 3 minutes of cooking time. Add 1 x 400g tin of cannelini or borlotti beans (drained) and 1-2 tbsp of green pesto. Continue to simmer the soup, stirring continuously, until the beans have heated through, then serve in warm bowls topped with another drizzle of pesto and a sprinkling of finely-grated Parmesan cheese.
Spring Chicken Casserole (serves 4)
Heat a drizzle of vegetable oil in a large, heavy pan and sauté 1 large, peeled, finely-chopped onion for around for 5 minutes or until soft. Add 500g boneless, skinless, free-range chicken thighs to the pan and continue to sauté until the chicken has lightly browned. Add 300g small new potatoes and 450ml chicken stock, bring to the boil and simmer gently, partially covered, for around 25-30 minutes or until the potatoes are tender. Add 700g rinsed, shredded spring greens to the pan along with around 140g frozen petits pois, 1 bunch of peeled, chopped spring onions and 2 tbsp red or green pesto. Simmer for around 5 minutes or until the peas have cooked and the spring greens have wilted and serve in warm bowls.
Speedy Spring Green Fried Rice 'fakeaway' (serves 2)
Heat a splash of oil in a large frying pan and fry 2 eggs until the bases have turned crispy and the yolks are set. Remove the eggs from the pan with a spatula, place on kitchen paper and cover with foil to keep warm. Heat another splash of oil in the pan and, when the oil is hot, sauté 1 bunch of peeled, sliced spring onions with 1 finely-sliced green or red chilli, 1 x 2cm chunk of ginger (peeled and grated) and 1 clove of garlic (peeled and grated) for around 2-3 minutes. Add 1 beaten egg to the pan and allow to set for around 30 seconds before muddling the mixture up with a wooden spoon or spatula. Add around 150g rinsed, shredded spring greens to the pan along with with a splash of water and briefly sauté until the greens have wilted. Add 1 x 250g pack of ready-cooked rice to the pan along with a generous smattering of dark soy sauce and stir-fry until the rice has heated through. Season to taste and serve immediately topped with the fried eggs, sprinkled with more chopped spring onions and a dollop of chilli sauce.
Gammon and Spring Green Broth (serves 4-6)
You need to get ahead with this one! Soak 1 x 450g piece of gammon in cold water overnight. The following day, drain and thoroughly rinse the gammon before putting it in a large pan along with with 2 onions (peeled and sliced), 2 bay leaves and 1 tbsp whole black peppercorns. Cover with around 1.5l cold water, bring to the boil, then reduce the heat and simmer gently for around 1½ hours, occasionally skimming off any froth that collects on the top of the liquid. When the gammon has cooked, carefully remove it from the pan and set to one side. Strain the cooking liquor through a sieve and return it to the pan. When the gammon is cool enough to handle, trim away (and discard) the fat and skin and shred the meat with two forks. Return the shredded meat to the strained cooking liquor in the pan. Add 2 peeled, chopped large potatoes and bring the broth back to the boil. Partially cover the pan and simmer for 20 minutes. Add 300g rinsed, shredded spring greens and 1 x 400g tin of butter beans to the pan and continue to simmer for around 10 minutes. Serve in warm bowls topped with plenty of freshly-ground black pepper and, perhaps, a little blob of English or Dijon mustard.

WEEKEND WINE | THE GOOD AND THE RIGHTEOUS
Aussie Rules | Teusner Wines
The fact that Teusner Wines was born in the local pub wouldn’t surprise anyone that knows Kym Teusner and Mick Page. The two were enjoying some beers when they overheard a conversation between a couple of Barossa grape growers about an 85 year old vineyard facing the chop.
Mick and Kym managed to find the cash needed and stepped in with a rescue plan. These beautiful old vines stayed in the ground where they rightly belonged and in 2001 Teusner Wines came to life with a singular mission – to make the kind of wines they liked to drink! Today the two owners have amassed a huge fan base and much applause from fellow wine growers and commentators. They are real people, work hard doing a job they love and by keeping it simple with these excellent vines, the wines are absolutely gorgeous.

The Riebke Shiraz
The wine is jam packed with Barossa Shiraz flavours: plums, black fruits and warm spices of cinnamon, nutmeg and five-spice. There’s a touch of mid palate sweetness, some mocha and black olive and the soft tannins are integrated seamlessly through the mid palate | £17.70
The G Grenache |
A wonderfully juicy and bright Grenache! The wine is only just medium bodied, which, when combined with the bright acidity and the complex but fresh aromatic makes it such a refreshing and enjoyable drink that can be enjoyed with almost any food | £18.33

TALK | THE STUFF OF RADIO LEGEND
Alistair Cooke's America, BRLSI / Online, 21 March
Alistair Cooke’s weekly radio broadcasts from America where he lived and worked became the stuff of radio legend. His programme Letter from America became the longest-running BBC radio series in broadcasting history; airing from 1946, it ran for 58 years ending only with Cooke’s death in 2004.
Bath Royal Literary and Scientific Institution will soon celebrate the broadcasting legend with a screening of a rarely seen documentary produced by BBC Bristol, The Unseen Alistair Cooke, which includes footage from 150 reels of film shot by Cooke from the 1930s on. Cooke’s on-camera charm and wit shine through in unseen documentary footage, which includes shared encounters with Charlie Chaplin and Paulette Goddard, alongside key episodes from his long and illustrious career. The film will be introduced by Colin Webb, Alistair Cooke’s Literary Executor.
At a time when American values and democratic principles find themselves under closer scrutiny than ever, what better time to immerse ourselves in the wisdoms of a curious outsider to a continent that we all like to think we know.
The screening starts at 7.30pm but wine and refreshments will be served from their Queen space exhibition space in exchange for a donation toward the upkeep of BRLSI collections. Attendees will also be able to purchase a 50th anniversary reissue of the book that accompanied the series, which sold over two million copies; Mr. B’s bookshop will be on site from 6.45pm.
Tuesday 21 March, 7.30pm | LIVE at 16 Queen Square Bath or online Tickets: £4 for members / £7 for non-members at brlsi.org/whats-on | brlsi.org

u3a Monthly Talk: future directions in architecture by Chris Mackenzie Riba, 6 April
Many national and indeed global trends impact on the built environment in UK cities and the countryside that we have to live with.
Architects face a range of challenges. The drivers for change that they have to manage include sustainability, technology, politics, patronage, and climate change. This talk will explore these challenges from a UK perspective, and how architects are responding to them, both from the Macro level to the personal.
On an individual level, many people have a need for sufficient living space with decent flexibility and storage, for lower rents or cheaper build costs, and lower running costs. Can technology be used to make things possible that, until recently, were impossible? At a macro level will cities continue to suck people into them and have greater and greater densities or will there be a renaissance in the quality of urban space, and life in the city? What lies ahead? This talk and your questions after will try to respond to these challenges.
Monthly Talks are usually held on the first Thursday in the month (except August) and start at 10.30am at The Bath Pavilion. Doors open at 9.45am for coffee. Admission is free for members but a donation of £2 for non-members. If you join U3A in Bath at the meeting then your admission fee is refunded. Find out more at u3ainbath.uk.

LOOKING BACK | PRE-MARKS AND SPARKS

Words by Andrew Swift
This week’s archive photo shows a building demolished in 1962 to make way for Marks and Spencer’s. Weymouth House was built in the 1720s by William Killigrew as a townhouse for Lord Thynne, Viscount Weymouth, of Longleat, and was originally twice the size of the building seen on this early 20th century postcard. The left-hand side was demolished around 1816 when the right-hand side became part of Weymouth House Schools. After the Second World War the building was occupied by the City of Bath Technical School but the entire area was cleared in 1962 when Weymouth Street, St James’s Street South and St James’s church (whose tower can be seen in the background but which by then had been reduced to a bombed-out shell) disappeared under Marks & Spencer’s.
