WEEKEND RECIPES | BROAD BEAN SEASON
|
|
|
|
Words by Melissa Blease
Broad beans, four ways
Broad Bean Panzanella with Burrata (serves 4)
Tear 2 large slices of day-old, sturdy bread (sourdough works well here) into bite-sized pieces and tip into the bottom of a large bowl. Tumble the bread chunks with 1 tbsp cold water, 1 tbsp red wine vinegar and 2 tbsp extra-virgin olive oil and leave to marinate for 30 minutes. Add around 4 large handfuls of cooked, podded broad beans, 1 stick of celery (finely sliced) and around 4-5” of peeled, finely-chopped cucumber. Mix 2 finely-chopped anchovies with 1 tbsp red wine vinegar, 2 tbsp extra-virgin olive oil, 1 tbsp finely-chopped fresh parsley and plenty of black pepper. Pour the dressing over the salad, add 2 tbsp capers and 1 tbsp black olives and toss everything together. Leave to marinate again for another 15 minutes (or up to 1 hour) before dividing between 4 plates and topping each portion with an individual boule of burrata.
Broad Bean and Ricotta Tagliatelle (serves 4)
Cook 500g fresh or dried tagliatelle according to the instructions on the packet. Drain (reserving around 60ml of the cooking water) then return to the pan with 1 tbsp extra-virgin olive oil, 250g cooked, podded broad beans, the finely-grated zest and juice of ½ lemon, 250g ricotta and the reserved cooking water. Stir together over a medium heat until the beans and ricotta have warmed through (this dish doesn't need to be served piping hot). Divide the pasta between 4 serving dishes and serve topped with plenty of black pepper, drizzles of olive oil, smatterings of finely-chopped fresh parsley, mint or basil and parmesan shavings.
Minted Broad Bean and New Potato Cakes (serves 2)
Cook 350g new potatoes in salted boiling water for 10-15 minutes or until tender; drain well and allow to cool. Meanwhile, tip 150g cooked, podded broad beans into a food processor and pulse to a coarse paste. Crush the cooked potatoes and add the bean paste, 1 tbsp of finely-chopped fresh mint, 1 tsp ground coriander and 1 tbsp of natural yogurt. Season well, stir to combine and shape the mixture into 4 patties. Tip 2-3 tbsp plain flour onto a plate and lightly coat each patty in the flour. Heat 2 tbsp vegetable oil in a large, non-stick frying pan and fry the patties for around 3 minutes on each side until crisp and golden. Serve immediately topped with dollops of natural yoghurt and more freshly-chopped mint.
Broad Bean Pesto
Muddle around 350g cooked, podded beans, 1 clove of peeled garlic, a generous squeeze of fresh lemon juice, 2tbsp toasted pine nuts (toasted hazelnuts also work well) and 2-3 tbsp extra-virgin oil together in a pestle and mortar (or, pulse in a food processor) until you've achieved a textured paste. Add 40g finely-grated parmesan, 1 tbsp finely-chopped fresh mint (or 1 tbsp mint sauce, if you don't have fresh mint to hand) and black pepper to taste, and continue to muddle/blend until you've reached your preferred texture, adding further drizzles of extra-virgin olive oil to loosen if necessary. Serve on fingers of griddled ciabatta or focaccia.

WEEKEND WINE | BIODYNAMIC BOTTLES

Eco-friendly wines
As the climate changes, we're all having to make adjustments to our lifestyles. And while winemaking may not seem to be at the forefront of the fight for the environment, many vineyards are adjusting their ethical practices for a more sustainable approach to the craft. This weekend, we take a little trip around the world and look at some of the very best of sustainable wines.
The Butler Biodynamic Red - Bonterra
The first impression of this Californian wine is of intense, complex aromas of spiced black fruit and espresso, followed on the palate by ripe tannins framing a juicy, generous texture which enhances its elegant black fruit, anise, and subtle spice character | £26
Raupo Creek Pinot Noir - Seresin Eatate
New Zealand's Seresin Estate is notorious for its sustainable approach to winemaking. This Pinot Noir exhibits notes of ripe dark berry fruit, alongside hints of savoury forest floor, rosemary and leather with a persistent, fresh finish | £22.20
Funkelpunkt Sparkling - Chaffey Bros. Wine Co.
If you're looking for something for a celebration, head over the Tasman Sea to Australia and try this sparkling wine. A bright, pure aromatic sparkling wine with citrus and tropical flavours combined with a mineral, mouth-watering finish | £11.10
Cuma Organic Torrontés - El Esteco
The El Esteco Vineyard in Argentina follows strictly organic winemaking practices. for the Cuma Organic Torrontes, this has resulted in a wine that is Incredibly fresh & floral with notes of rose petals, jasmine and citrus fruits especially orange peel, typical of this grape | £7.70
Picpoul de Pinet - Petit Roubie
Heading back across the pond and into France, we arrive at my personal favourite, the Picpoul de Pinet. This bright Picpoul mingles wafts of sea-breeze with delightful notes of citrus, appleskin and herbs. Hints of peach and exotic fruits make a fleeting appearance too | £11.95
Grande Reserve White - Ixsir
Looking east to Lebanon we have the Ixsir Grande Reserve. This white has a pure golden hue, with enticing white flowers, peach and citrus fruits on the nose. Equilibrium between mellowness and liveliness on the palate which leads into a long finish with classy oak notes | £29.50

A THING OF BEAUTY | THE BERNADOTTE JUG
|
|
|
|
The style of George Jensen
George Jensen’s stylish and popular Bernadotte Thermo Jug is a great example of combining classic Scandinavian design and the practicality of everyday life. Originally conceived by royal Prince Sigvard Bernadotte in 1938 as a beautiful but straightforward jug, the design has been transformed into a modern vacuum thermos.
Sigvard Bernadotte was the son of the Swedish king but made a name as one of George Jensen’s earliest collaborators. Greatly influenced by the functionalist movement prevalent at the time, his work is characterised by sophistication, elegance but above all practicality.
Standing at 235mm high, the distinctive fluted jug is expertly crafted from mirror finished stainless steel and has a capacity of 1 litre.
The lid features a push button that prevents the jug from dripping, and keeps drinks warm or cold for up to 6 hours. Perfect for picnics and keeping a summer Sangria ice cold. 235mm high | £165

Curated by Daniel McCabe
The Plant is a bi-annual Anglo-Spanish magazine that initially focused on the plant and gardening interests of unlikely celebrities, but has developed and broadened from a horticultural base into a sprawling blend of photography, art, fashion, food, and ecology to the extent that it’s only hanging on to its place in our gardening section by its (green) fingertips. In this 19th issue, Peter Jordanov and Virginie Benarroch celebrate the beauty of the rain, Brigitte Lacombe and Matthew McLean follow Precious Okoyomon on a walk through Brooklyn’s Prospect Park, Maureen Paley shares her love for the moon, Tom Johnson travels to Patagonia to visit the Chubut Valley, and Drew Vickers photographs blooms at their boldest and most vibrant | £19
