AMBITIOUS DESIGNS | GOLD AT CHELSEA FLOWER SHOW
Grant Associates' Chinese-inspired garden scoops the top prize |
Bath-based landscape architecture practice Grant Associates has been awarded the Gold Medal at the 2021 Chelsea Flower Show for its Chinese-inspired Guangzou Garden, which shows how cites of the future must be considered as landscape cities.
Designed by the practice's director Peter Chmiel and senior associate Chin-Jung Chen, 'The Guangzhou Garden: Guangzhou China' takes inspiration from Guangzhou, a port city northwest of Hong Kong on China's Pearl River. The ambitious design showcases numerous planting species and aquatic designs that were perfect for the first autumnal show in Chelsea's 108 year history, with The Guangzhou Garden including one of the largest volumes of water ever to feature in a Chelsea show garden.
The pair's Chinese-inspired garden pays homage to Guangzhou’s philosophy which gives equal consideration to the needs of people and wildlife through sustainable city planning strategies, reconnecting people and nature in a mutually beneficial relationship. Originally set to be delivered in 2020 before the pandemic led to the cancellation of last year’s event, the pair’s design was subtly adapted to best showcase the more mature plants and trees.
It was a huge challenge to effectively capture and convey the essence of vast and vibrant Guangzhou into a 20mx10m garden, but we are thrilled with the finished result," says Peter Chmiel, director at Grant Associates.
Grant Associates are one of the firms included in the Bath Unlimited group of world-class organisations in Bath.

WEEKEND WINE | FOUR FINE FRENCH
Two fine French whites, two fine French reds
Looking for something a bit special? These are just four from a fabulous selection available from The Great Wine Co
Pouilly-Fuissé - Domaine Ferret Probably the finest Pouilly-Fuissé producer that we have encountered, whose wines have that ‘mineral’ edge more typical of Chassagne, Puligny, etc. This comes from a variety of vineyards surrounding the village of Fuissé. It has an immediate approachability, with the Domaine’s hallmark tension and zestiness still in evidence – a thrilling balance. There is an understated oakiness, a slight flintiness on the nose, then honeyed ripeness and creamy texture in the mouth, complemented by bright acidity. £39.50
Chablis Premier Cru Côte de Léchet Réserve - Bernard Defaix A flinty wine offering layers of butter cream, honey, green apples, white flowers and a hint of herbal freshness. A white wine of good complexity, with pleasing concentration and mouthwatering and lingering finish. £32.50
Mercurey 1er Cru - Michel Juillot Deep, brilliant, ruby red in colour with violet-blue hues. Although the nose remains a bit shy in its youth, the extent of its mineral content, fruit scents (cherry, red currant) and woody aromas beg to be revealed. On the palate its richness bursts forth. It is broad, rich and gamey. This is the very essence of a Mercurey Premier Cru. £37.00
Margaux, Le Relais de Durfort-Vivens - Château Durfort-Vivens A delicious, classic Margaux wine, with juicy, ripe fruit aromas. In the mouth, it is supple-textured and beautifully balanced, with excellent sustain on the finish. £47.50

WEEKEND RECIPE | TEA TIME PICK-ME-UP
By Melissa Blease |
Bakewell Tart |
Bringing raspberry jam, smooth, nutty frangipane and flaked almonds together in perfect sweet pastry-encrusted harmony, Bakewell Tart is a classic tea time pick-me-up that few can resist.
This recipe fills one 22cm/8–9 inch sweet tart case (make your own, roll a ready-made block or use one of those fabulous ready-made, pre-baked sweet shortcrust shortcuts) with a luxurious, almond-tinged custard filling. Use any jam that takes your fancy for the base, but raspberry works particularly well. You can of course opt for the full-on Cherry Bakewell finish by icing the tart when cold and topping with a glacé cherry, but to my mind such frippery is a sweet step too far; this recipe guarantees tea time tart perfection just as it is.
Ingredients
120g softened butter 120g golden caster sugar 1 egg 1 tbsp plain flour 110g ground almonds 90g seedless raspberry jam 1 small handful of flaked almonds If making your own sweet pastry, you'll need around 300g.
Method
1. Preheat the oven to 180ºC/gas mark 4.
2. If you've made your own sweet pastry, use it to line a greased 22cm/8–9 inch tart tin and blind bake for 10–15 minutes.
3. In a large bowl, beat the butter and sugar together until pale, light and fluffy before whisking the egg in, followed by the flour. Fold the ground almonds into the mixture.
3. Spread the jam across the base of the pastry case, followed by the frangipane filling. Smooth the top with the back of a spoon and sprinkle with the flaked almonds.
4. Bake for 20–25 minutes or until the frangipane is golden and springy and the flaked almonds have just started to brown. Allow to cool completely in the tin before slicing and serving... with a big mug of tea.

THE BEET GOES ON! | 4 WAYS WITH BEETROOT
Oven-baked Beetroot Risotto with Feta Cheese (serves 4)
In large, ovenproof pan with a lid, sauté 1 large, finely chopped onion in around 2 tbsp olive oil and a small knob of butter over a medium heat until translucent, adding 1 crushed garlic clove for the last minute or so of cooking time. Add 250g risotto rice and stir well until coated with butter and oil before adding 150ml dry white wine. Allow the wine to bubble down for 3-5 minutes before adding 700ml hot vegetable stock. Stir well, put the lid on the pan and bake in the oven for 15-20 minutes or until the rice is al dente. Meanwhile, puree 250g roasted beetroot into a smooth paste and chop 250g roasted beetroot into small chunks. Remove the cooked rice from the oven, stir in the beetroot puree and the chopped beetroot and top with 150g feta cheese (or vegetarian alternative), cut into cubes. Return to the oven and allow to heat through for around 5 minutes before serving hot.
Beetroot Dip
The speediest dip on the block, delicious paired with griddled halloumi and warm pitta bread. Simply blend 150g roasted beetroot with 3 tbsp Greek yoghurt, 1 crushed garlic clove, 3 chopped spring onions and 2 tsp fresh lime juice. Season to taste and serve immediately.
Beetroot Brownies (makes 12-16 brownies)
All the rich, gooey depth of a classic chocolate brownie... with a healthy veggie uplift! Preheat the oven to 180c/gas mark 4. Tip 400g roasted beetroot into a food processor or blender and blitz to a smooth puree. Sieve to remove excess liquid, then blitz again with 200g shards of dark chocolate (minimum 70% cocoa), 100g butter (cubed) and 1tsp vanilla extract until you have a smooth paste. In a large bowl, whisk 3 large eggs with 250g caster sugar until pale and thick. Using a large metal spoon, gently fold the beetroot and chocolate mixture into the eggs and sugar until combined. Sift 100g plain flour and 25g cocoa powder into the mix and fold again to make a smooth, aerated batter. Pour the mixture into a greased, lined 20 x 30cm brownie tin (or shallow roasting dish) and bake for 20-25 minutes, until risen all over and slightly crusty but still a bit wobbly in the middle. Allow to cool in the tin completely before cutting into squares.
Simple Beetroot Chutney
Scrumptious served with grilled salmon, pan-fried mackerel... or on a burger. In a medium-sized bowl, mix 2 peeled, sliced shallots with 1 finely-sliced red chilli, 2 tbsp red wine or balsamic vinegar and 2 tsp caster sugar. Stir well and leave to steep for 5 minutes, by which time the sugar should have dissolved (if it hasn't, give it another stir and leave for another couple of minutes). Add 4 finely-diced gherkins and 500g roasted beetroot, cut into small dice. Stir well and leave to macerate for around 1 hour, adding around 1 tbsp chopped, fresh dill before serving.

Bath Rugby v Newcastle Falcons this Saturday |
Ollie Fox will make his first Gallagher Premiership start when Bath Rugby host Newcastle Falcons at the Rec on Saturday.
The scrum-half, who has four league caps to his name thus far, featured for an hour in Round 1 and partners Orlando Bailey at half-back, another player promoted from the bench.
The duo are two of three changes from the narrow loss to Sale Sharks with Juan Schoeman coming in at loosehead prop after scoring his first try in Blue, Black and White at the AJ Bell Stadium.
He is joined in the front row by homegrown hooker Tom Dunn and tighthead prop Johannes Jonker who will make his home debut.
A dynamic trio of Miles Reid, Sam Underhill and Josh Bayliss link-up in the back row while Mike Williams and Charlie Ewels continue in the lock positions.
Fan favourite Semesa Rokoduguni will earn his 175th outing in a Bath jersey, nine years following his maiden appearance in the LV= Cup.
The 34-year-old impressed from the wing last weekend, expressing himself with ball in hand alongside Will Muir and Tom de Glanville. The back three combination accumulated 202 metres against Sale.
Max Ojomoh and Jonathan Joseph threatened as a pairing in the midfield and strike up a partnership once more.
On the bench, D'Arcy Rae and Jaco Coetzee could appear at the Rec for the first time while Academy graduate Will Butt could earn his Premiership stripes.

THE MAGAZINE KIOSK | PRINT IS READ
Curated by Daniel McCabe - Magalleria
At a glance More Or Less would appear to be a luxury fashion magazine. Which it is, sort of. MOL is about ‘reshaping a society of excess’. It believes creativity to be the new luxury and claims to be the first magazine to prioritise sustainability in the fashion industry. It asks us why we buy clothes (Do we need them? Do we really want them?) and to consider the realities of cost and consumption. But this is in no way a grind to read, quite the opposite – fun, informative and impressively deluxe. £14

Council nominated for prestigious Outstanding Film Commission Award |
Bath & North East Somerset Council's Film Office has been shortlisted for an internationally recognised award for its work on hit television period drama Bridgerton.
The Location Managers Guild International (LMGI) award celebrates exemplary work above and beyond the usual service expected from a Film Office.
Bath Film Office's small team coordinated numerous requests from the Bridgerton production for council services such as road closures, street furniture removal, street lighting removal and parking, as well as the use of the Assembly Rooms and rooms at the Guildhall.
Bridgerton shot four blocks of filming in Bath between August and November 2019, filming more than 70 scenes which was television filming on a scale not seen before in Bath.
Most of these were exterior street scenes but there were also big ballroom sequences filmed at the Assembly Rooms and the Guildhall. Two shops were converted into the Modiste dress shop and Gunter's Tea Rooms in the drama, with the Holburne Museum also used extensively for filming.
Bath Film Office is up against five other Film Offices including Liverpool Film Office and Screen Queensland, Australia for the Outstanding Film Commission award.
The LMGI awards are a celebration of the outstanding contributions of location professionals in feature film, television and commercial advertising. They spotlight creative use of filming locations that set the tone, enrich the character and inspire the storytelling narrative.
The 8th annual LMGI Awards take place on 23 October. Read more about the nominees here and find out more about Bath Film Office.

LOOKING BACK | AT LARKHALL
By Andrew Swift |
First World War reminiscences |
This archive photograph of St Saviour’s Road is one of a series of views of Larkhall in The Year of Pageant, which was published by Akeman Press in 2009. They accompany reminiscences of life in the village before the First World War, recorded by the late Bruce Crofts in the 1970s, which provide a vivid insight into how much has changed. This, for example, is how Mr Dangerfield of Brooklyn Road recalled his childhood: "I left school in 1909. There were no playing fields. There were watercress men in the streets. The roads were mud in wintertime, dust in the summer. We played marbles in the cart tracks. In summer there were outings to Kensington Gardens."
Harold Horsell, another Larkhall resident, recalled that, because of the lack of playing fields, "if we wanted to play cricket or football we had to carry the gear to the top of Little Solsbury." He also remembered that "Francis Garraway, the schoolmaster, ran a club for boys over 14 in a building behind the White Lion in the square. He started a bible study class there, and it was there I saw the first aeroplane fly over Bath." Today, the White Lion, whose sign can just be seen here in the distance, is now home to Larkhall Butchers.
