WEEKEND RECIPE | PASS THE PARSNIPS
|
|
|
|
Parsnip, Mascarpone and Maple Syrup Cake
Parsnip season is upon us; cue waves of warming soup, piles of honey-roasted Sunday lunch side dishes and oodles of buttery mash. But there's yet more to the humble parsnip than meets the eye.
This super-seasonal cake brings the earthy, caramel/vanilla complexity of maple syrup and the sweetly acidic tang of luxurious mascarpone cheese together with the inherent sweetness of parsnips in perfect harmony; bake it once, and you'll never look at a Carrot Cake again.
|
|
|
|
Ingredients
175g butter 250g soft brown sugar 100ml maple syrup 3 large eggs 250g self-raising flour 2 tsp baking powder 2 tsp mixed spice 250g parsnips, peeled and grated 1 medium eating apple, peeled, cored and grated 50g pecans, roughly chopped The zest and juice of 1 small orange
For the filling: 250g mascarpone 4 tbsp maple syrup
|
|
|
|
Method
1. Preheat the oven to 180°C/gas mark 4. Lightly grease a deep 20cm springform tin with butter and line the base with baking parchment.
2. In a large pan over a medium heat, melt the butter, sugar and maple syrup together until the butter has completely melted and the sugar has dissolved. Allow to cool slightly before whisking the eggs into the sweet, buttery mixture, followed by the flour, baking powder and mixed spice, sifted in together guarantee an even, lump-free result. Add the prepared parsnips, the apple, the orange zest and juice and the chopped pecans (reserving 1 tbsp for sprinkling on the cake before baking) and stir thoroughly to form a thick batter.
3. Plop the batter into the tin, level the top and sprinkle with the reserved chopped pecans. Bake for 35-40 minutes until the top of the cake springs back when pressed lightly and a skewer inserted into the centre comes out cleanly (note: if the top of the cake browns before the inside is cooked, cover the top loosely with foil and carry on baking, checking to see how it's getting on every 5 minutes).
4. Allow the cake to cool slightly in the tin then turn out onto a wire rack to cool completely before slicing in half horizontally.
5. Beat the maple syrup into the mascarpone and use to fill the cake. For extra-added appeal, lightly dust the surface of the cake with icing sugar just before serving.

WEEKEND WINE | ITALIAN ALPINE STARS
|
|
|
|
Four great wines from northern Italy
Gavi di Gavi DOCG – Fontanafredda
One of Italy's most fashionable whites, this wine is noted for its acute dryness and fresh, flinty acidity. This is a bright straw-yellow wine with greenish highlights. It has a full, delicate, elegant bouquet which brings flowers and fresh fruit to mind – mostly lemons, lilies of the valley and green apples. Its palate is attractively young, dry, fresh and well-balanced | £19.95
San Vincenzo IGT – Anselmi
Fruity, youthful style, reminiscent of hazelnuts and peaches. No wood maturation, just clean crisp flavours with a long finish | £15.95
Vintage Edition Secco – Bertani
This fascinating limited edition wine deliberately goes back to the way that the top wines of Valpolicella were crafted historically between the 1860s and 1930s, before the invention of Amarone. Intriguingly, this is aged 100% in barrels, but there is 0% oak, as the barrels are made entirely of chestnut and cherry wood – a tradition going back centuries in this part of Italy. A must-try wine! | £27.50
Barolo di Serralunga d'Alba DOCG – Fontanafredda
From the Piemonte region this is a deep red with ruby highlights, a truly superb Barolo with a clear-cut, intense nose with overtones of vanilla, spices, withered roses and underbrush. The palate is dry, but soft, full bodied, velvety and well balanced, and is engagingly complex throughout the lengthy finish. Showing great personality | £35

Breitling’s new Superocean range
In the 1960s, the new sport of scuba diving was all the rage; for divers, timing was everything, and Breitling set out to give them the clearest display possible.
This pared-down watch they named the Slow Motion, with its clean lines, chunky luminescent indexes, squared-off hands and a high-contrast dial, all designed for maximum legibility.
But what people really fell in love with was the look. The new Superocean is the homage to the Slow Motion's celebrated design, but with all the modern features we now love: such as a scratch-proof, ceramic-inlayed bezel and brightly coloured dials. Broad hands and indexes in luminescent Super-LumiNova® are clearer visibility than ever before on the 42mm or the unisex 36mm case.
The watch is water resistant to 300m (1000 ft), as well as being shock, sand and saltwater-resistant. Automatic with a power reserve of approx 38 hours. There are two strap options (rubber and metal bracelet) and a folding clasp that allows for adjustments to wear over rashies and wetsuits.
Best of all, this is no longer just a dive watch. Surf with it, swim with it, hit the bar with it, and it will still look great paired with a suit or out for a smart dinner. The new Superocean perfectly balances the nostalgia of the Slow Motion heritage with a fresh new look.

It attempts to define the sort of neighbourhood we might all choose to live in by exploring six ‘ideal’ but very different locations – Körnerkiz in Berlin, Sharon in Paris, Seochon in Seoul, Greenwich Village in New York, Venice in Los Angeles and Hampstead in London – to see what they have in common and what sets them apart. | £24.99

Reading is Magic Festival, 26–30 September, online
A star-studded cast of award-winning authors, poets and illustrators has come to together to take part in an online children’s literature festival whose mission is to make literature accessible for all.
A free event, the festival is packed full of magical digital events that can be beamed straight into schools and homes – making it available for all to enjoy, wherever they may be.
Lauren Layfield, TV and radio presenter at CBBC and Capital FM, will present each day of the festival and believes that events like these are crucial to make reading as accessible as possible: “An online experience can be so positive if channelled in the right way, so it makes perfect sense that instead of expecting young people to come to us, we go to them!”
This year’s programme includes Benjamin Zephaniah, Sophie Anderson, Kwame Alexander, Swapna Haddow, Joseph Coelho and more.
Schools and families can access the programme for free at readingismagicfestival.com. Events will last between 15 and 30 minutes and will be broadcast on a schools-friendly platform. Schools can view events live in UK time or on demand afterwards.

Bath Horse Show
For over 70 years, one of the highlights of the Bath calendar was the Bath Horse Show, held every September. In 1884, an ‘influential meeting of citizens convened to consider the proposal to hold a Horse Show in Bath’ and the first show was held on Lambridge Meadows beside the London Road that September.
Although the temporary stands built for the event were dismantled and auctioned off once it was over, so successful did it prove that it was decided to make it a regular fixture. Permanent stands were built and the Horse Show was held annually – except during the First and Second World Wars – for over 70 years. One memorable visitor was Haile Selassie, who was guest of honour at the 1936 show, shortly after he had taken up residence in Bath.
These two postcards of the event date from the early twentieth century. The first features the 1909 show; the second, published by Jolly’s, advertises some of the wares they clearly thought punters at the event would be interested in.
Other events were also held on the Horse Show Ground. After the First World War, Bath City FC negotiated a tenancy agreement with the Horse Show Committee and moved to Lambridge Meadows from their original home on the Lower Bristol Road. This was less than ideal, as the club had to put up with a large trench being dug in the middle of the pitch every time the Horse Show came around, to create a water jump. So it must have been with some relief when they moved to their current ground at Twerton Park in 1931.
The last Horse Show on Lambridge Meadows was held in 1956, but the ground continued to be used for fairs and other events, including Ronnie Lane’s Passing Show in 1974. Threats to turn it into a park & ride or build a superstore came and went, until eventually Bath Rugby acquired it as a training ground in 2012.
