4 Spanish Tapas |
|
|
|
In, out, shake it all about: a Spanish Tapas Feast brings a ray of staycation sunshine to your table, whatever the weather. The recipes here all serve four, with plenty of crusty bread for mopping up sauces. And to drink? Well-chilled Fino/Manzanilla sherry, dry Amontillado or Palo Cortado all go down a treat. Olé!

Gambas al Ajillo (Garlic Prawns) |
|
Pour around 4 tbsp Spanish olive oil into a large frying pan. Add 4 cloves of peeled, finely sliced garlic and 1 finely sliced, deseeded fresh red chilli (or ½ tsp dried chilli flakes) and place the pan over a medium heat, allowing the oil to gently heat up until the garlic is just turning fragrant and starting to sizzle (take great care at this point, as the garlic can easily burn and turn bitter if cooked for too long). Add 250g large, raw, deveined prawns, bring back to sizzling point and sauté for about 3 minutes, stirring occasionally, until the prawns are pink all over and starting to curl. Add 1 tsp smoked paprika and the juice of ½ a lemon to the pan, season well, stir again and serve immediately, sprinkled with finely chopped fresh parsley.

Chorizo al Vino Tinto (Chorizo in Red Wine) |
|
Heat around 1 tbsp Spanish olive oil in a large frying pan and gently sauté 1 peeled, finely chopped onion until just turning translucent. Add 2 peeled, grated garlic cloves and sauté for another couple of minutes until the garlic turns fragrant. Push the onion and garlic to the side of the pan and add 500g cooking chorizo, chopped into bite-sized chunks. Sauté the chorizo until gently browned (at which point it will start to release its rich, fragrant oil). Add 100ml Spanish red wine and 1 tbsp runny honey and simmer very gently for around 5-10 minutes until the chorizo is cooked through and coated with the wine and honey sauce (add a splash of boiling water if it's looking a bit dry). Serve immediately.

Patatas Bravas (spicy potatoes) |
|
Heat a large pan of salted water until boiling, add 750g peeled potatoes, cut into bite-sized chunks (Maris Piper are good here) and simmer for 3 minutes. Drain well, then spread out to dry on kitchen paper. Heat the oven to 200°C/gas mark 6 and pour around 3 tbsp Spanish olive oil onto a large, non-stick baking tray. Add the potatoes, toss to coat in the oil, season well and roast for around 40-50 minutes or until crisp, turning every now and again so they get evenly golden. Meanwhile, heat 2 tbsp of oil in a pan and slowly sauté 1 large, peeled, chopped onion for around 20 minutes until soft and caramelised, adding 3 cloves of garlic (peeled and grated) for the last 5 minutes. Add 1 x 400g tin of tomatoes to the pan along with 3 large, fresh tomatoes (finely chopped) and their juices, 1 tbsp sherry vinegar, 1 tsp caster sugar, 1 tsp smoked paprika and ½ tsp dried chilli flakes. Stir well, and simmer over a low heat for around 20 minutes or until thickened. To serve, season the hot potatoes and tumble into a warm serving dish. Spoon the sauce over the top, sprinkle with finely chopped fresh parsley and serve immediately.

Pimientos de Padrón (Padrón Peppers) |
|
Heat around 4 tbsp Spanish olive oil in a large frying pan over a very high heat. As soon as the oil is shimmering hot, tip around 250g whole Padrón peppers into the pan and fry for around 3-5 minutes, tossing occasionally, until the peppers have blistered in the heat (don't worry if some of them end up with a slightly charred look – you want this to happen!). Tumble the peppers into a large, warm serving dish and add the juice of ½ a lemon and plenty of salt. Serve hot.

Chardonnay – Hattingley Valley
A pale lemon colour with a soft green hue, this Chablis-style Chardonnay has wonderfully pronounced citrus, blossom and grapefruit aromas, with a hint of honey and pear. The palate is clean and fresh, with a mouthful of green apple flavours and a creamy texture that is nicely balanced with its natural vibrant bright acidity. Pinot Noir Rosé – Lyme Bay The vines are trained on a sprawling trellis system, and the soil is a heavy clay loam resting on a stiff London clay subsoil and benefits from low rainfall and good temperatures. This is a serious rosé made from 100% Pinot Noir grapes. This wine is a single-vineyard designated bottling and its complex aromas of cherries, rosehip, strawberries and cream, and tight acidity and length make it a great food wine | £20.88
Classic Cuvée – Court Garden
Pale silver lime-leaf green, continuous small bubbles; toasty, under-ripe pineapple and greengage fruit behind; Brut-style, balanced with creamy mousse and great freshness, long finish | £35
Riesling Urstück Trocken – Paulinshof Light gold colour with hints of green. Spicy aromas of orange peel and bergamot. Dry on the palate with expressive seam of minerality, herbs, gooseberries and rhubarb leading to a long finish | £17.75
Pinot Noir ‘Blauer Spätburgunder’ – Knipser With cherry and red berry aromas, this is a silky-textured Pinot Noir that has excellent freshness, structure and beautiful balance. On the palate it shows appealing up-front raspberry and cherry fruit, but that's not all there is to it - the flavours progress to reveal complex hints of cigarbox and freshly-ground espresso | £22
Viognier Marsanne 'Marsannier' – Knipser This is amazing. A complementary fusion of Viognier and Marsanne, it has a rich, golden colour and an exquisite, complex nose of toffee apple, candied apricot, nectarine, fragrant cedar, toasted cinnamon and a hint of flint. Take a sip, and you immediately want another - it's that gorgeous. Such an irresistible, perfectly-balanced wine. Wow! | £44

The Panerai Submersible collection
Giovanni Panerai opened his first shop in Florence in 1860, which served not only as a watch shop and workshop, but also as the city's first watchmaking school and one of the finest outside of Switzerland. With a specialty for diving watches, Panerai is well known for its timepieces used by the Italian Navy.
One of the company’s most groundbreaking inventions is a luminous substance called Radiomir, used for improved legibility under the water. Only since 1993, have Panarai’s watches been on sale to the public, but they have enjoyed a huge celebrity following and have become more and more popular every year as a cool alternative to the better known luxury brands.

Bristol Light Festival presents: Luminarium, 4 – 14 August, College Green
Luminarium is a fully accessible, multi-sensory pop-up coming to College Green on 4 – 14 August from 1 – 7pm daily, brought to the city by Bristol Light Festival.
Visitors are being invited to enter a world of wonder when the world-famous inflatable domes filled with natural light and colour visit the city this summer. Taking inspiration from natural forms, Islamic and Gothic cathedrals and modern architecture, the Luminarium is a sunlight-powered sensory experience featuring kaleidoscopic colours, domes, tunnels and pods.
An Instagrammers dream, this installation is truly designed for every member of the family and every age group. As a multi-sensory environment, it is also accessible for those with complex needs.
The free-to-enter and inflatable walk-in art experience, half the size of a football pitch, has travelled with other luminaria across 43 countries, hosting a total of more than 3 million visitors since being created by Alan Parkinson, designer and founder of Architects of Air, in 1992.

Valley Fest, 4 – 7 August, Chew Valley Lake
Valley Fest, the best-tasting music festival in the South West, takes place alongside Chew Valley Lake, near Bristol, this August.
Travis, Clean Bandit, Faithless (DJ set), Roni Size with Dynamite MC, Kosheen and The Craig Charles Funk and Soul Club will headline. Valley Fest has also joined forces with Arcadia: the performance art collective best known for their iconic, 50ft fire-spitting spider at Glastonbury. Bristol Rovers superfan launches 7 For 7 Challenge: 7 marathons in 7 days
In August 2020, Bristol Rovers superfan Nik Weeks took on the challenge of running five marathons is five days, finishing at the famous Memorial Gates and raising £13,300 pounds for TOFS (Tracheo-Oesophageal Fistula – a rare condition that can be found in new-born babies) and Bristol Rovers Community Trust.
To celebrate the euphoric 7-0 win against Scunthorpe last season, Nik has challenged himself to run seven marathons in seven days, raising money for the Community Trust – and he’s looking for some help from fellow ‘Gas Heads’.
Nick says: “The Community Trust were so supportive during the last challenge, and I’ve made some excellent friendships with the staff there. The work that they did during the pandemic was incredible and as we’re a community and family club, I feel that the Community Trust is the bedrock of our football club, and we should all be proud of it”.
“I’m looking for a minimum of seven ‘Gas Heads’ who’d like to train and take part in one of the legs. The support was so good last time that it would be great to have more members of the ‘Gas Family’ to get involved with challenge."
