Pumpkin Muffins
Recipe by Melissa Blease
Don't discard the pumpkin flesh from those spooky halloween lanterns! These pumpkin muffins are a far-from-ghoulish halloween treat.
Ingredients (makes 12 muffins)
500g pumpkin flesh, chopped into chunks 225g self-raising flour 100g caster sugar 50g soft light brown sugar (plus a couple of tbsp more, for roasting the pumpkin) 125g melted butter (plus a couple of tbsp more, for roasting the pumpkin) 2 eggs
Method
1. Tumble the chopped pumpkin flesh into a roasting tin, drizzle with around 2 tbsp melted butter, sprinkle with a little bit of soft brown sugar and roast for around 45 minutes or until very tender, turning the chunks over halfway through the cooking time. Allow to cool completely before tipping into a food processor and blending to form a smooth pumpkin purée.
2. Preheat the oven to 190°C/gas mark 5 and line a 12-hole muffin tin with muffin cases. In a large bowl, combine the flour, caster sugar, soft brown sugar and cinnamon together. In a separate bowl or jug, whisk the pumpkin purée with the eggs and the melted butter and add to the dry ingredients.
3. Stir the mixture until just combined and divide between the muffin cases. Bake the muffins for 18-20 minutes or until golden and risen and a skewer inserted in the centre comes out clean. Allow to cool on wire rack before gobbling up, or keep for up to three days in an airtight container.

'Level 7' Skatepark returns to Cabot Circus between 25 October – 3 November
A temporary skatepark returns to Cabot Circus car park in Bristol for the third time, supported by Subway and Skateboard GB.
The 'Level 7' skatepark is free to use and open to the public for nine days during October half term. A series of programs for young people will run throughout the event with funding secured via Sport England.
The skateable features have been designed by.a local primary school and the updated design has been sponsored by Subway restaurants.

Bristol student founds charity working to combat period poverty
Pleasantri, a social enterprise founded by University of Bristol student Adishree Bansal, officially launched last month with a bold mission: to combat period poverty in schools and universities across the UK. With nearly 2 million girls aged 14-21 having missed part or all of their school day due to lack of access to menstrual products, Pleasantri is stepping in with a sustainable solution that offers free sanitary pads to students.
What sets Pleasantri apart from usual charities is its innovative business model- providing free products through partnerships with companies that advertise on the napkin packaging. This approach ensures a consistent supply without relying on donor goodwill and short-term charity efforts. "No more band-aid fixes," says the team. Their goal is to empower young women, break the stigma surrounding menstruation, and allow students to focus on their education rather than worrying about their periods.
The initiative has already secured its first partner and is in discussions with the University of Bristol to distribute 3,000 units to its campus buildings and student accommodations. With early success under their belt, Pleasantri is now seeking more socially-conscious, student-focused companies to join their mission and help expand the reach of this vital service to schools and universities.
As Pleasantri gears up for growth, their message is clear: The only time a period should mean stop is at the end of a sentence.
