Recipes by Melissa Blease
4 Spanish Tapas
In, out, shake it all about: a Spanish Tapas Feast brings a ray of staycation sunshine to your table, whatever the weather. The recipes here all serve 4, with plenty of crusty bread for mopping up sauces. And to drink? Well-chilled Fino/Manzanilla sherry, dry Amontillado or Palo Cortado all go down a treat. Olé!
Gambas al Ajillo (Garlic Prawns)
Pour around 4 tbsp Spanish olive oil into a large frying pan. Add 4 cloves of peeled, finely sliced garlic and 1 finely sliced, deseeded fresh red chilli (or ½ tsp dried chilli flakes) and place the pan over a medium heat, allowing the oil to gently heat up until the garlic is just turning fragrant and starting to sizzle (take great care at this point, as the garlic can easily burn and turn bitter if cooked for too long). Add 250g large, raw, deveined prawns, bring back to sizzling point and sauté for about 3 minutes, stirring occasionally, until the prawns are pink all over and starting to curl. Add 1 tsp smoked paprika and the juice of ½ a lemon to the pan, season well, stir again and serve immediately, sprinkled with finely chopped fresh parsley.
Chorizo al Vino Tinto (Chorizo in Red Wine) |
Heat around 1 tbsp Spanish olive oil in a large frying pan and gently sauté 1 peeled, finely-chopped onion until just turning translucent. Add 2 peeled, grated garlic cloves and sauté for another couple of minutes until the garlic turns fragrant. Push the onion and garlic to the side of the pan and add 500g cooking chorizo, chopped into bite-sized chunks. Sauté the chorizo until gently browned (at which point it will start to release its rich, fragrant oil). Add 100ml Spanish red wine and 1 tbsp runny honey and simmer very gently for around 5-10 minutes until the chorizo is cooked through and coated with the wine and honey sauce (add a splash of boiling water if it's looking a bit dry). Serve immediately.

Patatas Bravas (spicy potatoes) |
Heat a large pan of salted water until boiling, add 750g peeled potatoes, cut into bite-sized chunks (Maris Piper are good here) and simmer for 3 minutes. Drain well, then spread out to dry on kitchen paper. Heat the oven to 200°C/gas mark 6 and pour around 3 tbsp Spanish olive oil onto a large, non-stick baking tray. Add the potatoes, toss to coat in the oil, season well and roast for around 40-50 minutes or until crisp, turning every now and again so they get evenly golden. Meanwhile, heat 2 tbsp of oil in a pan and slowly sauté 1 large, peeled, chopped onion for around 20 minutes until soft and caramelised, adding 3 cloves of garlic (peeled and grated) for the last 5 minutes. Add 1 x 400g tin of tomatoes to the pan along with 3 large, fresh tomatoes (finely chopped) and their juices, 1 tbsp sherry vinegar, 1 tsp caster sugar, 1 tsp smoked paprika and ½ tsp dried chilli flakes. Stir well, and simmer over a low heat for around 20 minutes or until thickened. To serve, season the hot potatoes and tumble into a warm serving dish. Spoon the sauce over the top, sprinkle with finely chopped fresh parsley and serve immediately.

Pimientos de Padrón (Padrón Peppers) |
Heat around 4 tbsp Spanish olive oil in a large frying pan over a very high heat. As soon as the oil is shimmering hot, tip around 250g whole Padrón peppers into the pan and fry for around 3-5 minutes, tossing occasionally, until the peppers have blistered in the heat (don't worry if some of them end up with a slightly charred look – you want this to happen!). Tumble the peppers into a large, warm serving dish and add the juice of ½ a lemon and plenty of salt. Serve hot.

England v Germany
The stage is set for a first class UEFA women’s Euro Final on Sunday, KO 5pm – celebrate the Lionesses and appreciate the quality of the competition. We think England have this!
ENGLAND ALL STARS
Chardonnay – Hattingley Valley A pale lemon colour with a soft green hue, this Chablis-style Chardonnay has wonderfully pronounced citrus, blossom and grapefruit aromas, with a hint of honey and pear. The palate is clean and fresh, with a mouthful of green apple flavours and a creamy texture that is nicely balanced with its natural vibrant bright acidity. A fine and rich mouthfeel, with a long dry finish | £25
Pinot Noir Rosé – Lyme Bay The vines are trained on a sprawling trellis system, and the soil is a heavy clay loam resting on a stiff London clay subsoil and benefiting from low rainfall and good temperatures. This is a serious rosé made from 100% Pinot Noir grapes. This wine is a single-vineyard designated bottling and its complex aromas of cherries, rosehip, strawberries and cream, and tight acidity and length make it a great food wine | £20.88
Classic Cuvée – Court Garden Pale silver lime-leaf green, continuous small bubbles; toasty, under-ripe pineapple and greengage fruit behind; Brut-style, balanced with creamy mousse and great freshness; long finish | £35
GERMANY'S GREATS
Riesling Urstück Trocken – Paulinshof Light gold colour with hints of green. Spicy aromas of orange peel and bergamot. Dry on the palate with expressive seam of minerality, herbs, gooseberries and rhubarb leading to a long finish | £17.75
Pinot Noir ‘Blauer Spätburgunder’ – Knipser With cherry and red berry aromas, this is a silky-textured Pinot Noir that has excellent freshness, structure and beautiful balance. On the palate it shows appealing up-front raspberry and cherry fruit, but that's not all there is to it – the flavours progress to reveal complex hints of cigarbox and freshly-ground espresso | £22
Viognier Marsanne 'Marsannier' – Knipser This is amazing. A complementary fusion of Viognier and Marsanne, it has a rich, golden colour and an exquisite, complex nose of toffee apple, candied apricot, nectarine, fragrant cedar, toasted cinnamon and a hint of flint. Take a sip, and you immediately want another – it's that gorgeous. Such an irresistible, perfectly-balanced wine. Wow! | £44
Enjoy the game – get your orders in at The Great Wine Co.

The Hideout
Opened in 2016, The Hideout is a whisky den which takes its cue from the lawless thieves, highwaymen and opportunists who might have met there in the past. It was the perfect hideout. Five years on, it still has the feel of one of those ‘secret’ places you don’t want to share, with its cosy, vaulted feel, 250 odd whiskies on the shelf and a forward-thinking team with larger-than-life personalities and a fondness for hip-hop. Of course, you don’t have to be a whisky aficionado to love The Hideout: there are crazy good cocktails – which put it at No.35 in the top 50 cocktail bars in the UK list – beers, ciders and top-notch wines to sip outside in the sunny courtyard too.

OBJECT OF DESIRE | A RUGGED DIVER

The Panerai Submersible collection
Giovanni Panerai opened his first shop in Florence in 1860, which served not only as a watch shop and workshop, but also as the city's first watchmaking school and one of the finest outside of Switzerland. With a specialty for diving watches, Panerai is well known for its timepieces used by the Italian Navy.
One of the company’s most groundbreaking inventions is a luminous substance called Radiomir, used for improved legibility under the water. Only since 1993 have Panarai’s watches been on sale to the public, but they have enjoyed a huge celebrity following and have become more and more popular every year as a cool alternative to the better known luxury brands.
Shown here is the Submersible 42 steel. The case is a 42mm satin brushed steel with a black ceramic bezel on a black rubber strap which is perfect for diving – and very tough. The iconic crown guard is a unique feature to Panerai’s action watches. It has an automatic self-winding movement and is water resistant to 300 metres. A great, all-action timepiece | £8,500.
The Submersible range has been expanded to offer a variety of case materials, sizes, dial and strap options; see more from the Panerai Submersible range at Mallory.

MAGAZINE KIOSK | WHY WE LOVE PRINT

Curated by Daniel McCabe
From the same stable as Wonderland, Rollacoaster and Man About Town, the riskily-named AMAZING is a hefty cultural and showbiz magazine that’s just released its second issue. With a penchant for iconic women and completely interview-driven, it’s in some ways similar to The Gentlewomen but eschews that magazine’s cool, minimalist vibe in favour of going for all out giant-scale (35 x 28cm) and a super glossy finish that’s going to simply dominate your coffee table. We absolutely love it | £14.95

Prima Facie takes us to the heart of where emotion and experience collide with the rules of the game.
Due to popular demand, Little Theatre Cinema have added an extra screening of Prima Facie on 2 August at 1pm; tickets available from picturehouses.com

LOOKING BACK | FILLING AN EMPTY SPACE
Words by Andrew Swift |
Laura Place |
The first attempt to fill the empty space in the middle of Laura Place came in 1832, when a subscription was raised to erect a 125-foot high column, topped by a statue of King William IV, to celebrate the passing of the Reform Act. Work on it got under way, and was progressing well, until local residents "interfered, and all which projected above the surface was pulled down, and the railings and grass plot were removed at the same time".
The next attempt came in 1850, when the council proposed building a fountain. Thirty years later, on 14 July 1880, it was finally unveiled. Built of granite and Portland stone, its style was, apparently, ‘that which prevailed in Italy in the 13th century’, and it cost £600.
In the 1940s the fountain was taken down after becoming unsafe, but was reinstated in a modified form in 1960, before finally being removed in 1977 and replaced by the minimalist fountain that’s still there today.
The archive images above show the design for the Reform Column (top left), the fountain as originally built (bottom) and a photo taken during the ‘great freeze’ of February 1929 (top right).

The property is an absolute hidden gem of pure Georgian elegance. Beautifully designed by “John Pinch the Elder” in 1818 this splendid residence holds all the immeasurable features associated with its Grade 1 listing and being part of a World Heritage city.
It is documented that No.1 Sion Hill Place is considerably larger than the rest of the terrace being remodelled and extended in the 1930s when the front facade of a John Wood the Elder designed house c1738 from Chippenham was rebuilt stone by stone onto the west flank of the building to create Summerhill Mansion and No.1.
The building’s interior was remodelled for Ernest Cook in 1936, grandson of travel entrepreneur Thomas Cook, when the new staircase, doors and flooring were added. Many items were refurbished from Chesterfield House, Westminster which was once the former London town house residence of the Royal Princess Mary. Apartment 5 is offered for sale at £2,250,000
For more details, images, the floorplan and brochure, click here to see Sion Hill Place featured on the Cobb Farr website.
