No good books reviewed this week... so how about a favourite recipe?
I'm from the UK originally and scones with jam and cream is the BEST afternoon tea tradition. So I figured I'd share my favourite, SUPER EASY, four-ingredient recipe with you. Enjoy :D
3 ½ cups self-raising flour, sifted, plus extra for rolling
1 cup clear fizzy lemonade (Sprite is fine)
1 cup cream
1 cup sultanas or other small/chopped dried fruit
Mix the sifted flour and dried fruit in a large bowl and make a well in the centre.
Pour in the lemonade and cream. Mix until the ingredients come together into a thick dough before turning out onto a floured board.
Knead briefly before rolling out to ½ thickness and cutting into rounds. Bake in an oven preheated to 220°C (425°F) for 15 minutes or until just browned.
Serve split and buttered, or with jam and clotted cream for a traditional English afternoon tea treat!
