Hi Everyone I hope you are all keeping well. We have been busy filling casks with single malt spirit on top of keeping beer and gin well stocked over the lockdown. As the country enters the next stage in opening up we have also been filling kegs for the first time in months. The task for this week is finalising the single pot still recipe. 

 The recipe for Pot Still Whiskey is a little different from Single Malt as it can include unmalted barley in the mash, as well as 5% of other grains. We have taken delivery of several tons of unmalted barley, oats, wheat and rye. We will now run a few versions and mash combinations through the brewhouse and into the stills and see what kind of flavour impact each of these has on the new make spirit. 

The Good Food Circle Cask Filling.

Kinsale Good Food Circle consists of a unique band of restauranteurs who work in close co-operation with each other in Kinsale, while still preserving their own separate identity and character.

As a group the Good Food Circle have invested in the Founders Club and we are happy to announce the filling of their 1st Single Malt Cask. We are happy in the knowledge that this cask will be bottled in 5 years and available in all the top restaurants in Kinsale.

Cask Inscriptions

The cask inscriptions are ongoing, expect a call if you have an early number cask. 

Below you can see cask 10 filled for Sam's Dad, who is Scottish and a big fan of Whiskey. William's Dad was also a whiskey lover and favoured Glenmorangie over all others, however when they ran out of that particular Whisky one night he declared that "any bloody glen will do"

As the main casks are being filled small mini casks to take home are available with the exact same spirit that goes into the main cask. This gives you the opportunity to taste at home while your main cask is maturing. Its 63.5% though so take it easy !!!!

We have been unsure as of late on whether the 1st annual founders event would go ahead or not. The plan was a choice of Golf or a sailing trip around Kinsale harbour in the morning followed by lunch and drinks in Hamlets bar in Kinsale town followed by more drinks and distillery tours in the afternoon. A good few hotels have offered discounts for Founder members for that weekend and apart from praying to the rain gods to stay away for that weekend everything was planned for a great event before the spectre of COVID arrived.

We have been keeping a close eye in the situation and still believe that we can go ahead with the 1st Annual Founders Event.  The exact format of the event may have to be revised to keep in with the government guidance at the time and more than likely not going to be as described above.  It's a more intimate affair spread out over a more spacious venue and perhaps into several smaller groups. We are working on ways that we can keep you and our staff safe and make sure everyone has a good time. 

The opening of the restaurants and bars will certainly help paint a much clearer picture of how things stand now and give us additional guidance over the next few weeks. 

Hopefully by the next update we will have a clear picture of how the event will be structured and we hope to see as many of you as possible this year.

We filled our first community cask this week also. A community cask is a cask owned by 15 different investors. All community casks will be bottled after 5 years at 40%abv. Each share owner will receive a couple of cases of individually labelled and numbered bottles of whiskey. A nice momento especially for those who wish to use the buyback option on their investment cask, it means they have a little whiskey at the end of the investment period as well as a healthier bank balance.
