Stuffed Butternut Squash
As summer begins to gently yield to the season of mists and mellow fruitfulness, butternut squash is your flexible friend, as easily adaptable to lighter dishes (salads; risottos; traybakes) as it is to classic autumnal comforters including soups, curries, casseroles and more.
This recipe gives butternut squash a centre-stage spotlight, the intrinsic nutty, earthy sweetness of the roasted flesh offset by tangy, fresh feta cheese, the whole combination teamed with complementary Mediterranean vegetables.
If you're not a fan of feta, goats' cheese, blue cheese or Brie work equally well – the method remains the same whatever your cheese of choice – and assembly of the whole dish is simple. Keep an eye on timings, though; everything goes into the oven at once, but the vegetables require a bit of attention around 25 minutes into the roasting process.
Ingredients (serves 2)
1 small butternut squash 1 clove garlic, peeled and crushed 2 tbsp olive oil 2 tsp dried thyme 1 large courgette, cut into 2cm chunks 1 large red pepper, deseeded and cut into bite-sized chunks 1 large red onion, peeled and chopped into chunks 100g cherry tomatoes 150g feta cheese, crumbled 2 tbsp breadcrumbs 2 tbsp fresh parsley, finely chopped 2-3 tbsp parmesan
Method
Preheat the oven to 190°C/gas mark 5.
Cut the squash in half lengthways, scoop the seeds out and, using a sharp knife, make criss-cross patterns over the cut side of each half before placing skin-side down in a roasting tin. Mix the garlic, olive oil and thyme together and brush the mixture over the butternut squash flesh.
Tumble the prepared courgettes, pepper and onions together in another roasting tin, drizzle with around 1 tbsp olive oil and season well.
Slide both the squash and the mixed vegetables into the oven for around 30-40 minutes, adding the cherry tomatoes to the mixed vegetables after around 25 minutes and giving the medley a good remix. When roasting time is up, you want the butternut squash to be tender and yielding to the tines of a fork, and the roast vegetables just starting to caramelise around the edges.
While all that's happening, mix the breadcrumbs, parsley and parmesan together. When all the vegetables have cooked, remove both trays from the oven and fill the squash with the roasted vegetable mixture. Divide the feta cheese equally across both halves and top with the breadcrumb mix.
Bake for a further 10 minutes or until golden and bubbling on top, and serve with a well-dressed green salad.

Finding the perfect fizz
There's a lot to celebrate in September. The new school year, the new season, even just having made it through the summer... September is a month of new beginnings, and what better way to celebrate a fresh start than with a bottle of fizz?
The Great Wine Co. has a fabulous selection of Champagnes, Bruts, and even non-alcoholic fizz, made everywhere from Italy to Denmark and beyond, so you can celebrate this September in style.
Brut Réserve - Pol Roger This Brut Réserve is the perfect apéritif champagne and is never released until it is at least three years old. On the nose, the champagne is dominated by white flowers, green apple, brioche and a trace of minerality. On the palate there are notes of stone fruits, a certain nuttiness and a hint of honey supporting the freshness of the acidity | £59.50
Champagne Blanc de Blancs - Porte Noire by Idris Elba Notes of crystallised citrus fruits, fresh-out-the-oven frangipane tart, plus a slight salinity typical of expression of Chardonnay from chalky soil. Mature, compelling and delicious | £65
Brut di Pinot Nero Rosé VS - Magnum Ruggeri Beautifully delicate salmon pink colour. The nose is fresh, fragrant and inviting, offering light red fruit aromas and hints of biscuity yeast. This wine is medium bodied and dry, but possesses a ripe cranberry fruit intensity that balances the bubbles and the crisp finish. Harvesting is carried out by hand | £24
Organic Sparkling Tea - Blue Copenhagen Whether you're an alcohol avoider, or just looking for something to share with the kids, this alcohol-free fizz has it all – based on 13 different teas: Jasmine, white teas and darjeeling, it has a highly complex taste, which develops on the palate. It starts with delicate aromas of jasmine, followed by a fresh and soft expression, thanks to the white teas, and finishes off with a more deep and dusty character, thanks to the darjeeling | £18.80

The thrill of a Supermoon
Our fascination with the phases of the Moon has been there since ancient times, as well as in folklore: it has always been shrouded in mystery. We know that the Moon has a strong influence on the ocean tides, flora and fauna activity as well as fertility, our sleep patterns and moods.
The lunar month – or lunar cycle – is recorded in eight different phases: from New Moon, Waxing Crescent, First Quarter, Waxing Gibbous, Full Moon, Waning Gibbous, Third Quarter and Waning Crescent. The sequence roughly lasts 29 and a half days to fully cycle from one of these phases ( known as a ‘syzygy') to its next occurrence.
Unlike a rugged explorer or chronograph watch, Moon-phase watches cannot really be classed as a utility watch – but their considerable aesthetic appeal and total appreciation of the watchmakers skill makes them truly desirable.
Indeed, the watchmaker's ingenuity is challenged by the precision they aspire to, as most models will feature two moons on a disk which travels a full lunar cycle with the help of a 59 tooth cog. However, the exact lunar month is: 29 days, 12 hours, 48 seconds and 2.8 hundredth of a second to be precise; which means that over the years, the watch display becomes very (oh so slightly) out of sync with that of the Moon.
To fix this anomaly, these models possess a complicated movement and a 135 tooth wheel, which – over the course of 122 years – amounts to a single day disparity. Splitting hairs, perhaps? That is the beautiful art of the master horologist.
This magical infatuation and mystical allure with the Moon phase watch continues today with all the fine makers creating desirable, collectable timepieces.
Omega Speedmaster Moonphase watch in a 44.2mm steel case with blue sunbrushed baton dial, a blue tachymeter bezel on a blue alligator strap. £10,300. Main image courtesy of Omega.

Curated by Daniel McCabe
Casa Brutus is a hugely popular interiors and lifestyle magazine – or ‘Life Design magazine’ as the publishers describe it – from Japan. A partner to the legendary men’s lifestyle magazine Popeye, it leans heavily on interior design and architecture but has made forays into left field territory to focus on cats, churches, coffee, Disney and suchlike. For Issue 281 the magazine again drifts off-template to examine a theme it has explored before: the best 100 books for children. Casa Brutus is a very high end publication so if you’re interested in all aspects of children’s literature you won’t want to miss this deluxe treat – even if all the text is largely Japanese only | £25
