A taste of Portugal

Butternut squash and coconut laksa |

|
Like all classic dishes that boast a very long history, there are as many recipes for fragrant, soul-soothing, life-affirming laksa as there are fans of this enduringly popular noodle-based broth.
This recipe brings a fusion of flavours to the laksa party and uses the first of the autumnal crop of butternut squash to add vitamins and vitality, grating rather than chopping it to make for a super-speedy dish ready to serve in no more than half an hour, start to finish.
You can, if you so wish, make the base of this laksa in the morning and leave the flavours to mingle and mellow until suppertime; if you take this route, simply stop cooking after you've simmered the basic broth, reheating back to simmering point and adding the noodles around four minutes before you're ready to eat. If you want to bring a bit of protein the party, add cubes of silken tofu or cooked king prawns with the noodles, or serve with chicken breasts that have perhaps been marinated in sesame oil and five-spice to taste before chargrilling.
Ingredients (serves 4)
800ml chicken or vegetable stock 400g butternut squash, peeled and roughly chopped 2 cloves of garlic, peeled 5cm nub of fresh ginger, peeled and grated 1 fresh red chilli 1 tsp ground turmeric 1 bunch spring onions 1 tbsp peanut butter A generous bunch of fresh coriander 1 tbsp sesame oil 1 tbsp dark soy sauce 1 tbsp fish sauce (omit if vegetarian) 300g medium rice noodles (dried, not fresh) 1 x 400g tin of light coconut milk Juice of 1 large lime To serve: crushed roasted peanuts (optional)
Method
1. Grate the squash using either the grater attachment of a food processor or a box grater.
2. Bring the stock to boiling point in a large pan. Add the grated squash and allow to simmer while you get on with making the spice paste.
3. Tear the stalks from the coriander, finely chop the leaves and reserve in separate piles.
4. If you used a food processor to grate the vegetables, swap the grater attachment for the blender attachment and blitz the garlic, ginger, chilli, peanut butter, spring onions, turmeric, coriander stalks, sesame oil, soy sauce and fish sauce until you have a smooth paste. If making the paste by hand, chop all the dry ingredients finely and blend with the wet ingredients using a pestle and mortar.
5. Add the spice paste to the stock pan with the coconut milk. Stir well and allow to simmer for 3 minutes before adding the noodles. Simmer again for around 4 minutes or until the noodles have cooked through. Add half of the lime juice and stir again before serving in large, warmed bowls drizzled with splashes of sesame oil and soy sauce, the chopped coriander leaves, the remaining lime juice and a smattering of crushed roasted peanuts.

Widcombe Art Trail is back but will be a little different this year. It will take place on 28–29 August in three venues in the heart of Widcombe – at Widcombe Social Club, The Natural Theatre Company and St Matthew’s Church.
Creating an artists’ quarter at the bottom of Widcombe Hill for the weekend, the trail will be open from 10.30am until 5.30am on both days, entry is free.
Organisers are looking forward to welcoming people and giving local artists the chance to exhibit and sell their arts and crafts. They are running things differently in order to make everything as safe as possible while celebrating the best that Widcombe has to offer, allowing people to meet talented local artists.

Rode Comedy Festival 2021 on 9 September! The exciting series of shows, featuring big names of comedy, and an Olivier Award -winning West End show, solidifies Rode Comedy Festival's reputation, in its second year, as a small festival punching above its weight. All taking place open-air, beneath a stretch tent in a beautiful Somerset field.
Launching the festival on Thursday 9 September will be the Olivier Award-winning improvised musical Showstopper! The Musical, with an intimate performance of their West End show. The Showstoppers create a brand-new musical comedy from scratch as audience suggestions are transformed on the spot into all-singing, all-dancing productions with hilarious results.
Friday night will see the return of the fantastic and hilarious Scummy Mummies, with their brand-new show, and support from rising comedy star Daisy Earl.
On to Saturday night, and Rode Comedy Festival will present TV superstar presenter, comedian and best-selling author Joel Dommett, with his new show.
To close the festival on Sunday night, Jarred Christmas and beatboxer Hobbit will join forces to host an amazing line-up featuring comedy legend Stephen K Amos, star of Taskmaster and Man Down, Mike Wozniak and surreal genius Spencer Jones. Each event will be hosted by Kiwi Somerset-local multi-award-winning comedian Jarred Christmas (one half of Pop-Up Comedy).

RUH gets starring role in Radio 4 series |
|
Bath's RUH takes centre stage in a new Radio 4 series looking at the importance of humour, relationships and personal connection in healthcare.
The series is presented by the hospital's very own Dr Phil Hammond – doctor, journalist, broadcaster and comedian.
Dr Hammond, who works at the RUH with children and adolescents with chronic fatigue syndrome, visited hospitals around the country to meet with staff working at all different levels of the NHS.
Through his conversations he hears about what makes staff laugh and cry and finds out why they are so proud to work for the NHS.
At the end of each of his visits he performs a stand-up show for staff, with the content based on his experiences of those he met at that particular hospital.
One show in the four-part series focuses solely on the RUH and its staff.
Those interviewed at the RUH ranged from hard-working cleaners to consultants and intensive care staff.
The weekly series began on 26 August at 6.30pm on Radio 4. The RUH will be featured on 9 September at 6.30pm. If you can't listen live, you can listen back on the BBC Sounds app.

LOOKING BACK | BATTLE SCARS

Once one of Bath's best known landmarks |
|
This week’s archive photograph, taken by the late Bruce Crofts in 1956, is of the burnt-out shell of St James’s church at the bottom of Stall Street. It was once one of Bath’s best-known landmarks, but, after being badly damaged in the bombing raids of April 1942, it was demolished 15 years later to build a branch of Woolworth’s. Bath, like many other cities, lost several churches in the Second World War, but in other cities their ruins were preserved. Coventry Cathedral is the most famous, but in Bristol the ruins of three city-centre churches bear witness to the terrible price the city paid. Anyone walking through Bristol’s Castle Park cannot fail to notice the bombed-out shell of St Peter’s, but even the most keen-eyed visitor to Bath is unlikely to realise that bombs fell on the city unless they read it somewhere. Today, with Woolworth’s long gone, the building that replaced St James’s is a Metro Bank.
