WEEKEND RECIPES | MEXICAN DAY OF THE DEAD

Carnitas, AKA Mexican Pulled Pork Tacos
Carnitas – basically, slow-cooked pulled pork – is a Mexican Día De Los Muertos (Day of the Dead) feasting staple; why not put the scream into your own Halloween by taking a trip down Mexico way? Having said that, Carnitas makes a cool alternative to the traditional hot dog/jacket potato Bonfire Night supper too – but really, any excuse to go Carnitas crazy is worth celebrating.
You need to cook your pork the day before you plan to tuck in to your Carnitas Tacos, but there's very little fuss involved on either day – and, when it comes to serving up, your guests do all the 'hard' work for themselves.
Ingredients (serves 6) 1.6k boneless, higher-welfare pork shoulder, thick skin removed
For the rub: 1 tbsp dried oregano 1 tbsp ground cumin 2 tbsp smoked paprika 1 tbsp olive oil
For the stock: 1 large onion, peeled and roughly chopped 1 tbsp jalapeños (from a jar) 4 cloves of garlic, peeled and crushed 1 tbsp soft brown sugar 1 heaped tsp cinnamon The juice from 2 large oranges 500ml chicken stock
To serve: tacos (or taco shells); guacamole; salsa; shredded iceberg lettuce; grated cheese; soured cream.
Method:
Preheat the oven to 160°C/gas mark 3. Dry the pork shoulder thoroughly. Combine all the ingredients for the rub together in a small bowl and massage into the pork, making sure you get the rub into all the nooks and crannies.
Mix all the ingredients for the stock together in a jug. Place the pork into a sturdy roasting pan and pour the stock over the top. Cover tightly with foil, roast for 2 hours then remove the pork from the oven. Take the foil off, baste well and return to the oven for a further 2 hours, or until the pork is really, really tender.
Remove the pork from the roasting pan and place it in a large, deep, lidded container. Strain the stock over the pork and allow to cool. Put the lid on the container and refrigerate for up to 24 hours.
Around an hour before you want to serve your Carnitas, preheat the oven to 180°C/gas mark 5 and remove the pork from the fridge. Using a large spoon, skim the fat off the surface and put the pork joint onto a large plate or chopping board. Pour the strained stock into a saucepan, bring to the boil and simmer until reduced by half. Meanwhile, shred the pork using two forks. Muddle the crispy bits with the softer slivers, spread across a roasting pan and pour the thickened stock across the top. Cover with foil and reheat in the oven for around 30 minutes.
Serve accompanied by piles of tacos, guacamole, salsa, shredded iceberg lettuce, grated cheese, soured cream and more jalapeños, for party people to combine to their Halloween heart's content.

'My Son - My Brother', in honour of Kieron Jones
A special concert will take place at Bath Abbey in November to commemorate the life of Kieron Jones, son of Grenville Jones, who passed away on July 11, just two days before his 47th birthday.
Kieron was diagnosed with bowel cancer three years ago, and the concert will support cancer charities.
The concert will feature music from many of the groups linked to the family including the Worship Group from St Philip and St James’ led be Daniel Jones, and special guests include the brilliant classical pianist Nurry Lee, violinist Lizz Lipscombe, and a celebration choir of 150 voices comprising singers from both Grenville and Laurie’s mixed voice choirs.

BHM Freedom in the City Festival at the Assembly Rooms
A powerful exhibition about Black freedom fighters and a celebration of His Imperial Majesty Haile Selassie I receiving the Freedom of the city of Bath in 1954, are just two activities in a programme of events taking place in Bath and North East Somerset during October’s Black History Month.
Saturday 28 October sees a celebration of the 70th anniversary of HIM Haile Selassie I, Emperor of Ethiopia, receiving the Freedom of the City of Bath, where he lived at Fairfield House from 1936 to 1941.
The event will take place at the National Trust Assembly Rooms from 10am - 5pm, and will see the diverse communities of Fairfield House including the Ethiopian and Rastafari Community host a free, day-long pop-up Black History Month day festival with workshops, talks, poetry, food and music.
