The Cornish interior and homewares brand opened its door on Milsom Street in a worrying retail climate. Rebecca says, “The war in Ukraine had just started and there was certainly an air of uncertainty in the retail sector. Opening the doors to our third shop was either going to be a sink or swim experience!” Fortunately, their first year has been successful proving Rebecca and Allison’s belief that brick and mortar stores are still as important as ever.

WEEKEND RECIPE | A REAL CROWD-PLEASER

Herb Crusted Salmon
Elegance meets simplicity in this crowd-pleasing dinner party centrepiece... perfect, perhaps, for a Good Friday feast?

|
Ingredients (serves 6)
2 tbsp finely chopped fresh parsley 2 tbsp finely chopped fresh dill 50g dried breadcrumbs (preferably panko) The zest and juice from ½ a lemon 500g spinach 300ml double cream 100ml white wine 30g dried porcini mushrooms, roughly chopped 1 whole skinless salmon fillet (about 900g) 50g butter

Method
1. Finely chop the fresh herbs and, in a small bowl, mix them with the breadcrumbs, lemon zest, salt and freshly-ground black pepper. Set to one side. In a small pan, bring the cream, white wine and mushrooms to the boil in then remove from the heat immediately and set to one side to cool.
2. Put the spinach into a colander and 'rinse' it in boiling water straight from the kettle, to wilt the leaves. Rinse under cold running water to cool, then squeeze out as much of the water as possible.
3. Spread the wilted spinach across the base of a baking dish or roasting tin that’s large enough to snugly fit the whole salmon fillet. Season well and pour the creamy mushroom sauce across the spinach to create a 'bed'. Lay the salmon skinless side down on top of the sauce, drizzle with the lemon juice and scatter with the herby breadcrumbs so that the fillet is completely covered, patting them down as you go (note: if you want to get ahead you can, at this stage, cover the dish with clingfilm and keep chilled in the fridge for up to 24 hours.)
4. When you're ready to cook, preheat the oven to 190°C/gas mark 5. Dot the butter across the top of the breadcrumbed salmon and bake for 30–35 minutes or until the fish is through and the crumb is golden. Leave to rest for a few minutes before serving in thick slices, accompanied by buttered new potatoes and steamed seasonal vegetables.

Biodynamic Wines
Biodynamics is a form of organic farming that emphasises the interrelationship of soil fertility and plant growth, drawing on the spiritual theories of Austrian occultist Rudolf Steiner, that studies the astrological sowing and planting calendar, as well as treating the earth as a living and receptive organism.
Some grape growers who have adopted biodynamic methods claim to have achieved improvements in the health of their vineyards, specifically in the areas of biodiversity, soil fertility, crop nutrition, as well as pest, weed and disease management.
So, does it improve the quality of the wine? Certainly producers believe their biodynamic grapes are stronger, clearer, offer more vibrant tastes, as well as making wines that remain drinkable for longer.
In many leading blind tastings involving leading Masters of Wine and head sommeliers, biodynamic wines have been judged superior to their conventional counterparts with better expressions of terroir – the way a wine represents its specific place of origin in its aroma, body and flavour.

LOOKING BACK | SPOT THE DIFFERENCE

This week’s archive photo takes us back around 70 years to see what Southgate Street once looked like. Just about the only building which survives today is the one on the extreme left, now a branch of Halifax. Just beyond it, the building with half timbering was the New Inn, parts of which dated back centuries – its hanging sign is just visible. Across the road is the Odeon, which featured in an archive photo a few weeks back, while in the distance is St James’s church, which was burnt out during the Bath Blitz in 1942 and was an empty – but still largely intact – shell by the time this photo was taken. It was demolished in 1957, and most of the rest of the buildings seen here went in the early 1970s. One other thing that does survive, however, is the ornate chimney in the distance, which carried away the smoke from the Bath City Laundry in Swallow Street – now the World Heritage Centre.
