Surf and Turf Sharing Platter
Recipe by Melissa Blease
Whether you share it with Special Someone, or plonk it on the table to start a festive supper party for four off in fine style, you can’t go wrong with this modern take on the classic Surf and Turf combo.
Despite its show-stopping flamboyance, this luxurious dish takes only 20 minutes maximum to move from stovetop to table. Yes, you’ll be required to use your best multitasking skills, but each stage of the recipe is really simple… especially as we’re using saucy mussels that somebody else (in this instance, any big supermarket) has already prepped for you.
Ingredients (serves 2 as a main course or 4 as a starter) 1 x 500g vacuum-packed, pre-cooked mussels in garlic butter 170g-200g sirloin or fillet steak 2 shallots, peeled and sliced 1 garlic clove, peeled and crushed 400g large, raw king prawns (defrosted if frozen) 2 tbsp brandy 1 tbsp chopped fresh tarragon The juice of 1 lemon 150ml single cream
To serve: garlic bread, for mopping up that luxurious sauce
Method 1. Cook the mussels according to the stove top instructions on the packet and set them to one side, still in the sealed packet they were cooked in.
2. Meanwhile, heat a large frying pan or skillet. Rub ½ tablespoon of vegetable oil over the steak and fry for 2-3 minutes (or according to your liking) on each side, turning once only and adding a generous knob of butter on the second turn. Remove the steak from the pan and set aside on a plate to rest.
3. Heat another 1 tbsp of vegetable oil in the pan and soften the shallots for 3-4 minutes, adding the garlic for the last minute. Add the prawns to the pan and cook, stirring occasionally, for 3-4 minutes. Add the brandy and bubble until reduced, then add the tarragon, lemon juice and cream. Season well, and cook gently for 2-3 minutes.
4. Cut the steak into chunky slices and add it to the creamy prawns along with the mussels and all their sauce. Stir to combine, heat through gently and serve the pan in the middle of the table with the garlic bread on the side for mopping up all that luxurious sauce.

Alice is a local doctor-turned-nutritionist with a nutrition practice in Bath, who has collaborated with Ali, a Bristol-based chef, to create a series of nutrition-focused workshops. These workshops are aimed at giving you the knowledge and tools to better understand nutrition as well as helping to inspire you in the kitchen. Incorporated in the day are talks and Q&A sessions, cooking demonstrations, and fermentation workshop – as well as a delicious lunch prepared by Ali.
The day includes talks on nutrition and how to incorporate nutritious foods and healthy habits into your every day without the need for restriction or fad diets. The workshops are set in the beautiful location of the Just Wild Barn, a tranquil rural retreat located between Bath and Bristol in the Chew Valley. At the end of the day, you will go home with your delicious ferment and recipe cards, as well as feeling informed and inspired going into 2025.

Over 100 new trees to be planted this winter at Bristol Memorial Woodlands |

The new trees are being planted for those laid to rest at the site between October 2023 and September 2024, creating woodland where people can remember those loved ones.
This year’s planting will include Wild Cherry, English Oak, Hazel, Silver Birch, Hornbeam, Field Maple and Holly. They will be in the Earthcott burial grounds and the Earthcott field where ashes are interred.
The woodlands are open daily for the public to walk in and enjoy the natural, peaceful environment. Several funeral packages are available at the venue which includes Georgian Reception Rooms and a Chapel. Families can choose from half-day or whole-day events, burials, ashes interments and unattended funerals.
