A WORD IN DUE SEASON

Dear Friends,
Does it seem to you as though time is accelerating? It seems incredible that we are already at the halfway mark of 2021.
Much has happened during the past six months. Some of us have lost loved ones. Some of us have endured very difficult trials. Some of us have had major financial setbacks. But one thing I've noticed for sure: the Lord has been faithful!
God's faithfulness is something we can always count on. As I look back over my life of 75 years, 50 of which I have served the Lord, He has never, ever failed me. And I know He never will.
Are you going through a hard time now? Cling to Jesus. He is your Best Friend, a very present help in time of trouble (Psalm 46: 1). He promised never to leave you nor forsake you (Hebrews 13: 5). He says what He means, and He means what He says.
So, be encouraged. This is not our permanent home. One day, all suffering will cease, and we will be forever with the Faithful One, our precious Lord and Savior Jesus Christ.

This month, I am excited to introduce to you a wonderful friend and fellow author, Pat Jeanne Davis.

Dom's Famous Fried Rice
(From the Kitchen of Dominic Diorio)

Dom's Famous Fried Rice
(from the Kitchen of Dominic Diorio as taught to him by a little old Thai lady when Dom served in Thailand during the Vietnam War)
Ingredients:
2 -3 Chicken Breasts, diced
4 cups of Chicken Broth
2 cups of Brown Rice
2 - 3 Eggs, beaten
1 can Peas
1 can Sliced Mushrooms ( or Stems & Pieces)
2 - 4 cloves of Garlic
Olive Oil
Soy Sauce
Instructions:
__Bring chicken broth to a boil.
__Add. rice. Reduce heat so that rice cooks with a low boil. Cook until done and all broth is absorbed.
__Saute chicken breasts, garlic, and olive oil until cooked
__Add beaten eggs and toss until eggs are fully cooked and coat all of the chicken.
__Add cooked rice.
__Drain and add peas.
__Drain and add mushrooms.
__Season with soy sauce to taste.
__Mix well and serve.
Serves 4 - 6
