WEEKEND RECIPES | SALAD SEASON
|
|
|
|
Words by Melissa Blease
Spicy Black Bean, Corn and Feta Salad
If you're not familiar with black beans, you're missing out on a fabulous store cupboard standby ingredient. High in protein and fibre, bursting with B vitamins and laden with essential minerals, these beautiful little black jewels have a mildly earthy, slightly sweet flavour and a creamy texture that adds interest to all manner of dishes from casseroles and soups to tacos and dips.
This recipe gives black beans the centre-stage spotlight they so richly deserve, teaming them with the milky-sweet uplift of sweetcorn in a spicy, flavour-laden salad guaranteed to liven up your summer season midweek menu plan.
Ingredients (serves 2)
2 ears of fresh sweetcorn (or 200g canned or defrosted frozen sweetcorn) 1 x 400g tin black beans, drained and rinsed 1 large, ripe avocado, peeled, de-stoned and chopped into chunky dice 200g cherry tomatoes, halved 4-5 spring onions, roughly chopped 150g feta cheese
For the dressing 1 tsp ground cumin 1 tbsp Chipotle Tabasco The zest and juice of 1 lime ½ tsp caster sugar 1 tbsp sherry vinegar 2 tbsp extra-virgin olive oil To serve: 1 large handful of fresh coriander, finely-chopped
Method
Simmer the corn cobs in salted water for 10 minutes. Plunge into cold water and drain well. Using a sharp knife, carefully strip the kernels from the cobs. Pour a drizzle of oil into a non-stick frying pan and sauté the kernels over a medium-high heat until nicely charred. Tip the sweetcorn into a large serving bowl with the black beans, avocado, spring onions and cherry tomatoes. Stir to combine, taking care not to mash the avocado chunks.
Mix all the ingredients for the dressing together in a small bowl, season well and pour over the salad. Crumble the feta cheese across the top, sprinkle with plenty of freshly-chopped coriander and serve immediately.

Curated by Daniel McCabe
Brownbook was a standout in our range when we started. It was an important journal that threw precious light on the artistic and cultural vitality of the Middle East and North Africa in an effort to counter-balance much of the bleaker news reporting that might easily dominate our thinking about the region. After more than 60 issues it stopped publishing, but we’re very pleased to see that it’s back, albeit with a slightly different remit. Issues are now devoted to exploring Middle Eastern connections and identities in different cities around the world, kicking off with Tokyo. It’s more compact that before but dense with many more pages and packed with information and various print add-ons tipped in. Not to be missed. | £21
