American Heart Association

Once upon a time, people spent a lot of time trapped in their homes without much contact with the outside world. Unfortunately, it wasn't in the 1800s but in April! During that time, the American Heart Association created a campaign to keep people moving, and some of their videos feature a dancing duo. You might find their style of dance to be different from yours, but they have a lot of fun. They also offer great modifications for dancing while seated.

Social Distancing and Masks!

These are some events currently on the calendar. (Social distancing and masks recommended when appropriate.)


Zumba at the Market tonight (6/25) at 5:30 PM. This class is free and open to beginners.


Red, White, and Blue Day at the farmers' market on July 4. The parade is at 10 AM, and although we aren't encouraging congregating, feel free to park your lawn chairs six feet apart but near the market on Main Street. Family groups of course can sit a bit closer...if you want to!


The Farm to Table date and venue have been set. Invitations won't go out for another month, but mark your calendar for September 12, 2020 at the Stonehouse Estate!

Spinach Mushroom Quiche

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 8 ounces fresh mixed wild mushrooms (such as oyster and shiitake), sliced
  • 1 cup thinly sliced yellow onion
  • 1 tablespoon minced garlic
  • 2 teaspoons minced fresh thyme
  • 1 (5 ounce) package fresh spinach, coarsely chopped
  • 8 large eggs
  • ⅔ cup whole milk
  • 2 teaspoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • ¾ cup shredded Gruyère cheese

Directions

  1. Preheat oven to 325 degrees F.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add mushrooms in an even layer; cook, undisturbed, until browned on the bottom, about 4 minutes. Stir and continue to cook, stirring occasionally, until browned all over, about 5 minutes.
  3. Add onion; cook, stirring occasionally, until beginning to soften, about 4 minutes.
  4. Stir in garlic and thyme; cook, stirring, until fragrant, about 2 minutes.
  5. Add spinach; cook, stirring constantly, until just wilted, about 2 minutes. Remove from heat.
  6. Whisk eggs, milk, Dijon, salt and pepper in a large bowl. Stir in cheese and the mushroom mixture.
  7. Coat a standard 12-cup muffin tin with cooking spray. Divide the mixture among the prepared muffin cups.
  8. Bake, uncovered, until puffed and set, about 30 minutes. Remove from the pan and serve immediately.
