Vegan Holiday Brunch Recipes!

Christmas brunch is a holiday tradition in my family. Mom hosts and does most of the cooking, with everyone else contributing a dish or two. 

What's awesome is that over the last few years, the number of vegans in my family has increased quite a bit, with my brother, sister-in-law, and nephew all making the switch. So my vegan contributions are always appreciated.

With that in mind, I guess you can understand why I'm pretty enthusiastic about vegan brunch recipes! Here are a few of my favorites!

1. Vegan Buckwheat Pancakes - This easy pancake recipe can be made with 100% buckwheat flour, for any gluten-free vegans at your table.

2. Potato Leek Vegan Quiche - This might have to be my brunch contribution this year. I've been promising my family a vegan quiche for a while now!

3. Classic Vegan French Toast - If you've got a hankering for good old fashioned, eggy tasting (without the actual eggs) French toast, this is your recipe!

4. Veggie-Stuffed Vegan Omelet - I've had a few clever readers tell me that they had success making the batter for this a day ahead, which makes it perfect when you've got a morning of brunch cooking ahead of you.

5. Vanilla Chai Vegan Banana Pancakes - My mom made these for Christmas the year I posted them. Hers actually came out better than mine!

6. Tofu Scramble with Kale and Crispy Chickpeas - Make a big batch of this and let your guests stuff it into burritos, scoop it up on toast, or just pile it onto their plates.

7. Vegan Spinach Puffs - I know, this seems odd for brunch, right? But I brought them last year, assembled but uncooked. I popped the whole tin in Mom's oven, and we all enjoyed them while they were hot and flaky. They were a hit!

8. Vegan Banana Chocolate Chip Muffins - I've tried a billion and one banana muffin recipes, and let me tell you, these suckers really are the best!

9. Cheesy Vegan Mashed Potato Pancakes - Got leftover mashed potatoes from Christmas eve dinner? Repurpose them by making these vegan potato pancakes!

10. Vegan French Toast Waffles - This one is a lot of fun! It's basically vegan French toast that gets cooked in a waffle iron.

11. Cinnamon Sugar Apple Cider Doughnuts - These baked doughnuts are super easy to make, and everyone loves the cinnamon sugar coating.
