On Christmas Eve in Provence, dinner tables will be covered with three layers of white cloth representing the holy trinity. The rest of the art de la table is up to individual tastes. Most tables settings include the sprouted wheat planted on the Feast of Saint Barbara (Dec 4th) and carafes of sweet wine (vin cuit) from the fall harvest.
