Chipotle Chicken Burgers with Sweetcorn Fritters and Guacamole
Succulent, spicy chicken fillets, cheesy sweetcorn fritters and smoky guacamole in a towering burger – what’s not to love? If you really want to push the burger boat out, might I suggest a portion of fries on the side...
Ingredients (serves 2) 2 free range chicken breast fillets 1 tsp chipotle paste The juice of ½ lime
For the guacamole: 1 large, ripe avocado 1 finely-sliced tomato 1 peeled, finely-chopped spring onion The juice of ½ lime Tabasco Sauce
For the fritters 1 large, free-range egg 1 heaped tbsp plain flour 2 tbsp milk 100g fresh, canned or defrosted frozen sweetcorn kernels 30g mature cheddar cheese, grated 1 tbsp jalapeños (from a jar), chopped 2 spring onions, peeled and finely-sliced 1 large pepper, deseeded and sliced horizontally into 4 thick rings
To serve 2 burger buns, sliced (brioche works well here) 1 beef tomato, sliced
Method
Put the chicken breast between two pieces of cling film and bash with a rolling pin until about 1cm thick. Mix the chipotle paste with half the lime juice (reserving the rest for the guacamole) and spread over the chicken. Set to one side.
To make the guacamole, mash the avocado with the remaining lime juice. Add the finely-chopped tomato, finely-chopped spring onion, a dash of Tabasco and a pinch of salt and set to one side.
Whisk the egg, flour and milk together to create a smooth batter. Fold the sweetcorn kernels, cheese, finely-chopped spring onions, jalapeños and a pinch of salt and pepper into the mixture and set to one side.
Toast or griddle the burger buns and set to one side, ready for filling. Heat a large, non-stick frying pan over a medium heat and add a drizzle of olive oil. When hot, cook the chicken for around 3 minutes on each side until cooked through. Transfer the chicken to a plate and cover with foil to keep warm.
Wipe the frying pan out with kitchen paper, return to the heat and add another drizzle of olive oil. Put the pepper rings into the pan and fill each one with the fritter batter, overfilling them slightly. Fry for 3 minutes, flip, and fry for a further 3 minutes until the fritter batter has set and started to turn golden.
To assemble, spread the base of each burger bun with the guacamole, then top with the chicken, fritters and slices of beef tomato. Tuck in!

WEEKEND WINE | A TASTE OF PORTUGAL

Discover the purity and balance of Portuguese wines
Whilst the Vinho Verde may be the most popular of the Portuguese wines- and for good reason, as we were tempted to do an entire feature on Vinho Verde alone- Portuguese vineyards in fact produce a breadth of unique wines that often go overlooked. The specificity of their produce and refusal to adopt international varieties makes for a selection of wines that defy imitation and carry an unwavering sense of place.
Vinho Branco - Artolas This light and refreshing white has a nose of tropical fruit and citrus notes, with emphasis on the passionfruit character. The palate is bright with mineral notes and has a long, lemony finish- perfect for a party | £7.77
QL Flowers Vinho Verde - Quinta da Lixa A Portuguese wine list isn't complete without a Vinho Verde. This wine has aromas of apple and grapefruit alongside herbal notes. The palate is medium-bodied and refreshing, with the classic touch of spritz and a dry but fresh finish | £8.75
Douro Rosé - Quinta Do Crasto Our pick for a Portuguese rosé is bright salmon in colour, with attractive notes of wild berry fruit nicely combined with elegant floral hints. The wine delivers great aromatic freshness, and is engaging and balanced | £11.95
O Oenólogo Encruzado - Casa da Passarella This white is slightly deeper than the classic Vinho Verde, but maintains fresh, bright, citrus aromas on the nose. It has a certain stony weight on the palate with minerals and a touch saline on the finish | £29.50
Selecta Reserva - Quinta Da Plansel Our first red is well matured and dark garnet in colour with floral notes reminiscent of violets and orange blossom. Wild dark fruits with a hint of spice on the palate | £13.87
Duoro Old Vines Reserva - Quinta Do Crasto Hugely complex, this wine is lively and juicy, yet with intriguing nuances of spices, Mediterranean herbs, olives and well-integrated oak. Though irresistible now, this wine has the balance to gain even more complexity with time | £28.33
The Great Wine Co. is currently offering 25% off Spanish and Portuguese wines! To shop, head to greatwine.co.uk

Larissa Organic Cotton Shirt | £45.95
The shell-collecting print Larissa shirt was designed by Lucy Sheldrake, starting out as a collection of shells picked up on walks along Cornish beaches. She drew each shell individually, using fine liner and pencil to capture their tiny, tide-worn details, producing this beautiful, versatile, sun-soaked design.
The shirt is a marked year-round favourite, and the crinkled texture means that no ironing is required- just wash, give it a twist, and leave it to dry.

Curated by Daniel McCabe
Real Review is a DL-shaped, fold-out, not-for-profit culture magazine that describes itself as ‘a perpetual attempt at describing reality as it might actually exist, and reality as we experience it.’ Each issue tracks a zeitgeist topic through the context of a ‘current mood’ by employing a diverse range of informed, opinionated and fairly high profile contributors. Issue 14 looks at the internet, a place in which we apparently we spend a third of lives and where we are ‘not social beings but commodified identities’, and speculates what comes after digital [life]? | £12

Herschel Museum's new collaboration with the Museum of East Asian Art
Is it a match made in heaven – or in space?! The Herschel Museum of Astronomy is thrilled to partner up with the Museum of East Asian Art in Bath to celebrate the Japanese Star Festival “Tanabata” this summer.
Tanabata celebrates the mythical meeting of the deities Orihime and Hikoboshi (represented by the stars Vega and Altair respectively). According to Japanese legend, the Milky Way separated these lovers, and they are allowed to meet only once a year on the seventh day of the seventh lunar month.
William Herschel observed both of the stars that feature in the myth – Vega and Altair – through his telescopes and put them in the star catalogues that he and his sister Caroline made.
The “Star-Crossed Museums” campaign will give visitors an opportunity to engage with both the myth and the science. So join them this summer for an exciting programme of activities and events!
7 July - 31 August | 10am - 4:30pm | Herschel Museum of Astronomy, BA1 2BL

The Amadeus Orchestra presents the Symphonic Dances from West Side Story
Now a regular highlight of the summer in Bradford-on-avon, the Amadeus Orchestra returns to Wiltshire Music Centre, bringing their infectious playing with them.
The orchestra will present a dazzling programme of Bernstein and Shostakovich. In his lifetime, Bernstein was just as well-known as a conductor as he was as a composer and he had a particular affinity with the music of Shostakovich.
The concert opens with the effervescent overture to Candide. The Symphonic Dances, a selection of all the best tunes from the show West Side Story, brings the music of Broadway into the concert hall – orchestrated using the full palette and might of the symphony orchestra.
