WEEKEND RECIPES | SWEETCORN SEASON

It's sweetcorn season! Make the most of it while it lasts...
Sweetcorn Chowder (serves 4)
Gently sauté 1 small onion (peeled and chopped) in a medium-sized saucepan over a medium heat until translucent. Add 300g new potatoes (chopped/halved if large) and 2 large carrots (peeled and sliced) and continue to sauté for around 6-8 minutes, or until the potatoes and carrots have softened without browning. Add 1L vegetable stock and bring to the boil before turning the heat down and simmering for around 15 minutes or until the potatoes yield to the prod of a fork. Add 200ml whole milk and 500g fresh sweetcorn kernels (from 4-6 cobs, depending on the size of the cob) and simmer for a further 3-5 minutes. Season to taste and either serve the Chowder chunky or blitz with a hand blender to your preferred consistency. Divide the Chowder between 4 warm bowls, scatter with freshly-chopped chives and serve with crusty bread on the side (sourdough works well here).
Mexican Sweetcorn Salad (serves 4)
Blanch the kernels from 4 cobs of fresh sweetcorn in boiling, salted water for 2 minutes. Rinse in cold water and drain well. Set to one side. Tumble 1 small red onion (peeled and chopped), 1 red pepper (deseeded and chopped), ½ cucumber (diced) and 2 sticks of celery (sliced) together in a large bowl. Add 1 clove of garlic (peeled and crushed), 1 tsp dried cumin, the juice of 2 limes and a pinch of salt and allow to stand for 10 minutes. Add the sweetcorn kernels, 2 tbsp pickled jalapeños (from a jar), 4-5 tbsp soured cream and a generous handful of freshly-chopped coriander, stir well to combine and top with 150g crumbled feta cheese and extra coriander. Serve with salsa, guacamole and flatbreads.
Baked sweetcorn fritters (makes 8 fritters)
Preheat the oven to 180°C/gas mark 5 and line a large baking tray with baking parchment. Heat around 1 tbsp vegetable or sunflower oil in a small pan and fry 1 peeled, finely-chopped red onion with 1 deseeded, chopped red pepper for around 5 minutes or until tender, adding 350g sweetcorn kernels (from 3-4 cobs, depending on the size of the cob) for the last 1-2 minutes. Take the pan off the heat and, in a large bowl, combine 100g self-raising flour with 1 tsp baking powder, 1 tsp smoked paprika and 1 tsp ground coriander. Add the onion/pepper/sweetcorn combo and 2 large, beaten eggs and mix well to form a chunky batter. Spoon 8 equal mounds of the batter onto the baking tray, flatten each mound slightly with the back of the spoon and bake for 20 minutes until golden. Serve topped with poached eggs and a sprinkling of fresh chives for a lazy brunch.
Chicken and Sweetcorn Soup (serves 4; easily adapted to vegetarian)
Bring 1l chicken stock to the boil in a large pan. Add 350g fresh sweetcorn kernels (from 3-4 cobs, depending on the size of the cob), 200g cooked, skinless, shredded chicken and a small knob of fresh ginger (grated) and simmer gently for 3 minutes, stirring regularly. Mix 1 tbsp cornflour with 2 tbsp cold water to form a paste and add to the pan along with 6 peeled, sliced spring onions. Stir constantly for 3-4 minutes (or until thickened), season to taste with salt and plenty of white pepper and remove the pan from the heat. Pour one large beaten egg over the hot soup and stir very lightly with a fork to distribute the egg strands. Serve immediately, topped with a sprinkle of freshly-chopped coriander and dashes of soy sauce. To make a vegetarian version, use vegetable stock instead of chicken stock and replace the chicken with 200g assorted sliced mushrooms (eg. button, shitake and oyster).

Theatre review: The Ocean at the End of the Lane
The Ocean at the End of the Lane is a theatrical triumph that will remind you what the stage was made for.
Based on Neil Gaiman’s novella of the same name, The Ocean at the End of the Lane (adapted for stage by Joel Horwood, directed by Katy Rudd) tells the tale of a bookish, unnamed ‘boy’ (Keir Ogilvy) living with his widower father and argumentative little sister. When the family lodger is found dead in tragic, but not suspicious, circumstances, the boy is invited to spend the morning with his kooky neighbour, Lettie (Aimee McGoldrick). A few bowls of porridge and several uncanny instances later (50p coins are found inside pond fish, inter-dimensional worms find their way inside of people – and so on) our hero discovers that the lodger’s actions have roused a monstrous ‘flea’ from another dimension, who will stop at nothing to cross from her world into ours.
Ocean is a show that embraces its theatricality with open, loving arms. Actors appear in two places at once; bloody hands emerge from bathtub plug holes; a series of enormous, otherworldly puppets clamber about a stage framed by willow structures all-aglimmer with LED lights.
We’re often told we must ‘suspend our disbelief’ when watching shows of this ilk. But for Ocean, such suspension hardly seems necessary. We just believe – from the moment our boy tumbles onto stage – that we too are in this world of ‘fleas’, and shapeshifting monsters, and magical oceans. It is, in this sense, a spellbinding production in the truest meaning of the word. On our way out, my companion suggests that the show could have been even better had some of the puppets been taken out for a second spin. What better criticism could an audience member give? To simply want more of what they’ve already had.
Ocean is a glittering, joyous treat that will remind you why we go to the theatre.

Local paddleboarding company at threat of closure
Another iconic harbourside business faces closure in a turbulent year for Bristol Floating Harbour. SUP Bristol, the city's paddleboarding company, are losing their storage in Underfall Yard, putting the future of paddleboarding in Bristol at risk.
Many businesses within the harbour, its residents and leisure users, have faced multiple challenges this year, including the increased Harbour Fees introduced by Bristol City Council in April and the devastating fire at Underfall Yard in May. Many are now fearful that Bristol will see fewer boats and leisure users as a result.
SUP Bristol is on the water daily, with groups enjoying the physical and wellbeing benefits of outdoor activity. Operating since 2014, they are now as much a part of the harbour's personality as the boats within the harbour themselves.
SUP Bristol are currently seeking statements of support in aid of their goal to source a new storage space. Submissions can be posted and read at save.supbristol.com.
