August days in Provence are like the cicadas' chanting, starting early and ending late. It’s also the best month for fresh fruit and produce, including heirloom tomatoes of every colour. My favourite is ananas – a varietal that comes in yellow and shades of red to almost black. For Provence summer magic, cut the tomato into slices and serve with fresh goat cheese, basil, a drizzle of olive oil and a sprinkle of fleur de sel.
By this time in the summer, the sunflowers look a little sad with their flower heads drying. However, anticipation is mounting in the vineyards as grapes in shades of green and red grow plump and sweet. Figs epitomize this point in the season. They are so hot and ripe that they drop to the ground, unable to hang on the branches any longer. Pick some fresh figs off a tree or buy some at the market and eat them with aged goat cheese or a slice of blue cheese that day.
