WEEKEND RECIPE | FUSS-FREE SUMMERTIME SUMMER
Recipe by Melissa Blease |
Poached Salmon with Salsa Verde |
The most elegant, fuss-free summertime fish supper of your dreams!
Ingredients (serves 4-6) |
For the fish: 1kg sustainably-sourced, skin-on salmon fillet 1 tsp whole peppercorns 1 fennel bulb, peeled and thinly sliced 2 bay leaves A handful of parsley stalks (keep the leaves for the Salsa Verde) 1 whole unwaxed lemon, thinly sliced 200ml white wine vinegar
For the Salsa Verde 4 garlic cloves, peeled and crushed 6 anchovy fillets, chopped 4 tbsp capers, drained The zest and juice of 2 unwaxed lemons The leaves from 1 large bunch flat leaf parsley (see above) 1 large bunch fresh basil 6 tbsp extra virgin olive oil
To serve: steamed new potatoes, wilted spinach
Method |
1. Put the peppercorns, fennel, bay leaves, parsley stalks and 2 tsp salt into a large pan. Cover with the white wine vinegar and 2.5l cold water and bring to the boil before allowing to simmer for 10-15 minutes.
2. Carefully strain the hot, infused liquid into a roasting tin big enough to hold the whole salmon fillet. Bring the liquid back to the boil on the hob then gently slide the salmon into the liquid, skin-side down (if there isn't enough liquid to just cover the whole fillet, top it up with boiling water).
3. Scatter the lemon slices around the fish and simmer gently until the fish turns opaque (around 2-3 minutes). Cover the roasting tin with a large piece of foil, turn the heat off and leave on the hob to cool completely, during which time the fish will continue to cook.
4. Meanwhile, put all the ingredients for the Salsa Verde into a food processor or blender and blitz to create a smooth but still slightly textured sauce. Season to taste and transfer to a serving bowl.
5. Transfer the room-temperature salmon to a large serving platter (gently peel the skin off if preferred) and serve whole alongside the bowl of Salsa Verde, accompanied by a tumble of buttered, seasoned new potatoes and wilted spinach.

WEEKEND WINE | A TASTE OF TUSCANY
The rich history of Frescobaldi |
The illustrious Frescobaldi dynasty is one of the most famous Tuscan wine producers.
With over 700 years of excellence. Frescobaldi operates nine wine estates in diverse situations around Tuscany: ranging from Pomino, high up in the Apennines, to Maremma on the coast. In the middle, at various 'sweet spots' of favoured altitudes, lie the family's Chianti Classico, Chianti Rufina and Brunello di Montalcino vineyards.
Perhaps the most distinctive and unusual location is Gorgona, a small island 20 miles off the Tuscan coast, and a penal colony since 1869. For the last decade, Frescobaldi has collaborated on a social project, providing prisoners with opportunities to learn professions such as vineyard husbandry and winemaking, to aid their reinstatement into society.
The tiny vineyard produces only a few hundred bottles each year –but the wine is truly special. Now is an excellent time to sample their superlative wares, since you save 25% on all Italian wines. Here’s a section from the Frescobaldi cellar at The Great Wine Co. Left to right:
Pomino Bianco
This creamy fusion of Chardonnay with Pinot Blanc is crisp, clean and balanced, and shows poached pear and butterscotch with a delicate hint of oak. From vineyards situated up to 700 metres altitude in the Florentine mountains | £11.62
Perano Chianti Classico Beautiful, bright ruby-red colour, simultaneously elegant and rich in depth with a distinctive sour cherry fragrance. Splendid freshness, harmonic, dry and pleasant and finishes like velvet | £19.58
Nipozzano Vecchie Viti A radiant ruby-red colour packed with lots of berries cherries with notes of vanilla. The after-taste is fruity with a hint of juniper berry. The mineral finish is long and juicy | £25
Pomino Visanto Amber-yellow in colour with golden reflections, Pomino Vinsanto is a wine with a very intense array of aromas. Hints of nuts and dried fruits, such as walnut, hazelnut, almond, apricot, raisin and fig, are the first to appear, followed by sweet honey and ginger bread | £32.91
Ammiraglia, Aurea Gran Rosé This delicate pale pink rosé is markedly intense and complex. Fresh, soft and juicy on the palate with delicate spiced finish. The wonderful mineral notes give Aurea its unique character, providing persistence and depth when tasted | £35

Curated by Daniel McCabe
These are interesting times for mens fashion, with not only a noticeable drift away from conventional and tribal styling and towards a new eclecticism. But it can be baffling for those who don’t think about such things all day, so thank goodness for the marvellous ‘How to dress’ guide L’etiquette from France. Issue 8 shows how to wear monochrome outfits, raincoats, how to revive long sleeve t-shirts – that sort of thing, with Giorgio Armani, Jonathan Anderson, Aurel Bacs, Andre, Umit Benan, Au Vieux Campeur and more. £14.50

THEATRE | MOTHERHOOD EXPLORED
REVEW: Oh Mother, Tobacco Factory Theatres, until Saturday 25 June
Oh Mother, A RashDash and HOME co-production, explores the theme of motherhood through a series of all-singing, all-dancing set pieces.
Do you want a baby? Should you want a baby? What does it mean if you don’t want a baby? Does having a baby change you? How much (if at all) do (and should) our choices as parents impact our children as they grow? How do the family dreams we have pre-baby square up to the post-baby-reality? Oh Mother has important questions to ask – and a lot of them.
Helen Goalen and Abbi Greenland are a powerhouse of a duo. Careening about the Tobacco Factory stage with confidence and spark, the pair approach their theme from a variety of angels; song and dance, monologue and duologue.
The show’s various musical numbers – including an amusing Ode to Dishwashers as well as a more pertinent contemplation on how boys 'should' or 'shouldn't' be raised – have a Bo Burnham-esque quality to them: whip-smart and a tad frantic (in the best sense of the word) Goalen and Greenland have the audience belly laughing one moment, and reaching for a tissue the next. The show's various emotional peaks are navigated with ease and skill.
Oh Mother is a wonderful addition to the Tobacco Factory’s summer programme – and reminds me, yet again, that I should make use of my local theatre scene more often: there’s a lot to see.
Tickets for tomorrow's (25 June) closing show available at tobaccofactorytheatres.com.

PROPERTY | A COUNTRY HOUSE AND GARDENS
Chewton Place House and Gardens
Offered for sale by Rupert Oliver estate agents
Entering the hamlet of Chewton Keynsham is like entering a new world – the hustle and bustle of Bath and Bristol is left firmly behind, and as you cross the River Chew on an 18th century bridge, while water cuts through the sluice gates, you are already bordering the edge of Chewton Place House.
Approached via electric double gates, past an elegant guest lodge, Chewton Place House and Gardens has undergone a thorough restoration programme by the current owners who have lovingly spent several million pounds refurbishing and re-creating the house based on its 1860s layout and proportions.
Across the ground floor are a suite of splendid reception rooms – of particular note is the exquisite drawing room with distant views over the property's landscaped gardens and, adjacent to the drawing room, the elegant oval library. The library enjoys rich, detailed plaster work and, like most of the rest of the house, newly fitted period-style fireplaces – matching the property's age in appearance and architectural detail.
On the other side of the hall is a large family kitchen with an expanse of workspace, stone flagged floor, oversized central island and beautifully finished fitted cabinets. The kitchen leads to an elegant dining room with cosy wood burning stove and dreamy parkland views.
The oak staircase and first floor landing is flooded with natural light from a cupula, the wrap-around landing giving access to three double bedrooms, along with a beautifully finished bath and shower room. There is also access to a large south facing roof terrace, overlooking the parkland.
'The East Wing' can be accessed from both the kitchen (on the ground floor) and via the landing on the first floor. At present, this whole two-storey space has been left ready to finish and decorate to a new owner's preferred layout and specifications and could present numerous options; including a self-contained two bedroom annex, or configure within the main house to provide wonderfully relaxed family space along with two further bedrooms and two further bath / shower rooms (as shown on the floor plans).
To the rear of the property is a lovely and beautifully refurbished two-bedroom Lodge Cottage – providing superb guest (or staff) accommodation. In addition, there is an existing further cottage with full consent to convert and refurbish, as well as approved plans for a brand new detached coach house, nestled into the land to the rear of the main house. Subject to consent, the cottage and the coach house could be converted into several other lifestyle options including stables, a home office, gym or leisure suite.
The parkland gardens and grounds of Chewton Place House are a delight; with views over the formal gardens, meadow and valley beyond to the jaw-dropping riverside walks complete with a private bathing pool, weir and fishing rights.
The current owner has meticulously restored the river banks as well as planting over a hundred trees along with mature shrubs, a croquet lawn and raised borders providing form and colour all year round.
Delight also in the historic 'owl tower', built as a folly in the 18th century as well as a country house must have – a wonderful stone-built with balustrade ha-ha separating the formal gardens of the house from the grazing meadow beyond. Just beautiful. Guide Price, £3,550,000
Click here to enjoy all the photographs, wonder at the floorplans and read more on the Rupert Oliver website.
