We chatted to our restaurant head chef Merlin Vettik about the values and concept of Fotografiska Restaurant. You're welcome to come and visit!
How often and according to what does Fotografiska Restaurant's menu change? The Fotografiska menu changes seasonally, at least once a season. However, when the selection of raw materials is more abundant, like in summer, we are guided by the availability of fresh produce. Therefore, we change some details even in every few weeks.
How do you link seasonality and sustainability? When we create a menu, we base it first and foremost on what is available to us at a given moment, what is as close as possible to us, how it has been grown or caught or harvested. By supporting local entrepreneurs, we can create a platform for them to develop their own business, to continue to improve the profitability of our raw materials. It has to be acknowledged that the raw material situation in Estonia is difficult, and our way out of creating something special has to come from our idea of doing it with sustainability in mind. If you have to work hard to use everything from head to tail, so to speak, then you often keep every last bit of it to create something exciting. By ordering less, we can also save nature.
What's special about the new menu, which will be available from the beginning of August? At the beginning of August, you'll find familiar flavours on our menu, but also new experiments. We're moving quietly towards autumn and more changes will probably be in that direction as new fruit starts to come in. For now, however, we're focusing on how we can still make the most of this peak summer season. So we're adding a little spice and colour to the menu with golden yellow chanterelles, colourful leafy greens, green nettles, South-Estonian purple potatoes, aromatic basil from the rooftop garden, and so on.
