- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup sifted powdered sugar
- 1/2 teaspoon baking soda
- 3/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/2 cup canola oil
- 1 egg
- 1 teaspoon almond extract
- 2 1/4 cups gluten-free flour
- 1/4 teaspoon xanthan gum
- 1 tablespoon whey powder

Preheat oven to 350 degrees F.
In a large bowl mix butter, granulated sugar, powdered sugar, baking soda, cream of tartar, and salt. Beat until combined.
Add in oil, egg, and extract.
In a separate bowl, mix gluten-free flour, xanthan gum, and whey powder. Add to the sugar mixture. Cover and chill for 30 minutes.
Roll dough into walnut-sized balls. Place on ungreased cooking sheet. Flatten to about 1/4-inch thick. Sprinkle with colored sugar. These will spread.
Bake at 350 degrees F for 10â12 minutes or until edges are lightly browned. Let cool on a wire rack.
