WEEKEND RECIPES | HERE TODAY, GONE TOMATO
Words by Melissa Blease
Tomato Curry
Make the most of the ripest, juiciest tomatoes of the season – plum, cherry, yellow, heritage, heirloom or a mixture of all of them; as long as they're ripe, they're going into this light but flavour-packed curry. Do make sure all the tomatoes are similarly-sized, though, so they all cook through at the same time.
Ingredients (serves 4)
1.5k ripe tomatoes 30g flaked almonds 4 cloves of garlic, peeled and crushed 4cm knob of ginger, peeled and grated 1 level tbsp medium curry powder 1 level tbsp garam masala 2 fresh red chillies, finely sliced (and deseeded if you prefer a milder heat) 1 onion 1 tsp soft brown sugar 1 x 400g tin of coconut milk 2 tbsp mango chutney
To serve: steamed rice and plenty of finely-chopped fresh coriander
Method
1. Prick the tomatoes all over with the tip of a very sharp knife and plunge them into fast-boiling water for 45 seconds. Drain thoroughly, peel off (and discard) the skin and set to one side.
2. Toast the almonds in a large non-stick frying pan over a medium heat until golden then tip into a bowl and set to one side.
3. Return the pan to the heat and add around 1 tbsp vegetable oil followed by the garlic, ginger, curry powder, garam masala, chillies and sugar. Sauté for 3-5 minutes, stirring constantly, until fragrant.
4. Add the tomatoes and the coconut milk to the pan, stir well, then cover and simmer for around 10 minutes. Remove the lid from the pan, add the mango chutney, stir again to break the tomatoes down a bit and continue to simmer (lid off) for another 10 minutes.
5. Season to taste and serve immediately on top of a bed of steamed rice, scattered with the toasted almonds and finely-chopped fresh coriander.

WEEKEND WINES | PORTU-GUESS THE WINE
Portuguese white wines at The Great Wine Co.
Portugal's individuality is both its unique selling point and the reason it continues to suffer from a lack of consumer awareness of the quality of its wines. A country replete with indigenous grape varieties and some of the world's most interesting blended wines, Portugal has long shunned the adoption of international varieties. The wines therefore defy imitation and possess an incredible sense of place. In the granitic riverbanks of Douro, Tinta Roriz, or Tempranillo, produces wines which range from light-bodied and fruity to rich, meaty and complex. Touriga Franca and Touriga Nacional, grapes famously used in the production of Port, produce robust, herbal reds with velvety tannins and ripe red fruit.

Douro White, Quinta Do Crasto | £14.40
The chances are that you won't have heard of any of the grapes in this Portuguese white, but this lip-smacking blend of Gouveio, Roupeiro and Rabigato grapes is certainly worth discovering. It's a wine made by the Quinta do Crasto, one of the best winemakers in the famous wine-making Douro Valley, in the north of Portugal. This tantalising blend makes a very modern wine, with a crisp, fresh taste, flavours of citrus - look out for asparagus - and a lovely fresh-cut-grass scent. Drink it on its own, or give your guests a glass or two and let its refreshing flavours match up with a goats' cheese salad, salmon risotto or grilled fish.
QL Flowers Vinho Verde, Quinta da Lixa | £9.25
A lip-smackingly delicious Vinho Verde, with aromas of apple and grapefruit alongside herbal notes. The palate is medium-bodied and refreshing, with the classic touch of spritz. The Quinta da Lixa is made from some classic grape varieties grown in the Vinho Verde region. It has a bright, lemon tinged appearance with aroma that is fruity, with hints of tropical fruits and a flowery character. In the mouth, it is well balanced, dry, with a lovely fresh finish.
Alvarinho Pouco Comum, Quinta da Lixa | £11.10
A fantastic display of both the fruit and floral character of the Alvarinho grape. Notes of peach, lemon and grapefruit with floral tones and a generous, full texture on the palate.
O Fugitivo Uva Cão, Casa da Passarella | £24.40
Casa da Passarella have done an amazing job of taming the 'dog grape', Uva-Cão. This was traditionally planted at the entrance to vineyards to deter scrumping because of its notable level of acidity - it was known as 'the grape that guards the vines'. Through gentle maturation in used, large, French oak barrels, 'The Dog' shows its true pedigree: a wine of finesse, freshness and elegance, with long, complex flavours. Bravo!

Curated by Daniel McCabe
FARE is a food magazine that aims to provide us with an informed and nuanced culinary portrait of cities around the globe. Not exactly food capitals, that isn’t the idea. It’s more interested in how vibrant places are in part defined by their cuisine, and so far FARE has visited some well-known cities (Copenhagen, Mexico City, Budapest, Lisbon) and some more unlikely destinations (Lima, Kampala, Antwerp, Tbilisi and even Glasgow) to find out what’s fuelling the locals. This fifteenth issue visits Naples, a city humming with life and heavily layered with history and culture that serves up a sensory feast like few others. | £16

Fizz Gallery is permanently exhibiting the digital art of Keith Drury at its Clevedon gallery, including a collection of seven contemporary, colourful prints celebrating historic and modern-day Bristol. Drury’s work is quirky and contemporary in its interpretation of the urban landscape and yet it refuses to be compromised, each artwork being created with meticulous attention to detail. Months of exacting work go into each picture and so the artworks often yield surprises to those who are eagle eyed (or use magnifying glasses…).
