WEEKEND RECIPES | SPICY CAULIFLOWER

Roast Cauliflower with Yoghurt Sauce and Muhammara
This recipe takes the humble cauliflower (trending right now on the UK seasonal food charts) on a Middle Eastern adventure. The smoky, earthy essence of this dish relies heavily on sumac: a combination of spices essential to Middle Eastern cookery, readily available in the spice section of most big supermarkets. We're using sumac to both flavour the cauliflower while it is roasting, and again in the Muhammara: a richly fruity red pepper dip that's also delicious with grilled meat or fish, or roasted vegetables. If you can't get your hands on pomegranate or date molasses for the Muhammara, thick, sweet balsamic glaze is a good substitute.
Ingredients (serves 4)
1 large cauliflower, cut into big florets (you'll need around 800g of florets in total)
3 tbsp olive oil 2 tsp sumac
For the yoghurt sauce:
300g Greek-style yoghurt
1 garlic clove (peeled and crushed)
2 tbsp lemon juice
For the Muhammara: 3 large roasted red peppers (from a jar)
50g fresh white breadcrumbs 1 tbsp lemon juice
1 tbsp pomegranate or date molasses (see note above)
2 tsp sumac 1 garlic clove (peeled) 25g finely-chopped walnuts or toasted flaked almonds 1 tbsp olive oil
To serve: plenty of finely-chopped fresh parsley
Method
Preheat the oven to 180°C/gas mark 5. In a large bowl, toss the cauliflower florets with the olive oil and sumac. Season well and spread out on a large oven tray lined with greaseproof paper. Roast for 25-30 minutes or until the florets are lightly charred but still retain a bit of bite.
Meanwhile, mix all the ingredients for the yoghurt sauce together and set to one side while you get on with making the Muhammara:
Pat the roasted peppers dry and drop into the bowl of a food processor or blender. Add the breadcrumbs, lemon juice, pomegranate or date molasses and sumac and pulse until all the ingredients have combined but the peppers still retain a bit of texture. Tip the mixture into a bowl. Add the walnuts or almonds and olive oil, stir well and season to taste (you may want to add extra pomegranate or date molasses for yet more 'fruitiness').
To serve, spread the yoghurt sauce over the base of a shallow platter followed by the warm cauliflower. Top with the Muhammara and a generous sprinkling of finely chopped fresh parsley.

Bathtoberfest returns for 2023 with new venues!

This autumn – from 29 September to 8 October – Bath's independent bars, bottle shops, breweries and pubs are coming back together to celebrate the city's drinks offer by showcasing local ales, craft beer, cider and wines.
In true Oktoberfest style, Bath’s independent drinks operators are collaborating for the second Bathtoberfest. Including favourites such as The Raven in Queen Street, The Old Green Tree in Green Street and The Grapes in Westgate Street, the launch line-up also includes bottle shops Independent Spirit in Terrace Walk, Kingsmead Bottle in Kingsmead Street and Grog in Margaret's Buildings, as well as the city's brewery Electric Bear. Musical entertainment from local artists will also be provided at many of the venues.
Like everyone else, the hospitality industry has been hit hard over the last couple of years. Now on the road to recovery, but facing an energy crisis, Bath independents felt this was an opportune time to let folks both near and far discover the city's thriving, vibrant drinks scene.
The event will be free to join and you will be able to get a festival map at participating venues and other outlets in town to take part and get a stamp at each of the venues you visit. Some bars will also be putting on a special roster of German and Belgian beers as well as featuring local breweries, cider houses and vineyards in the south west.

Batheaston Art Trail promises great days out

Now in its third year, the Batheaston Art Trail
has become a firm fixture on the West Country art scene, with local artists and
designers now getting ready to open up their studios and shared-venue displays

The Batheaston Art Trail 2023 will take place on Saturday 7 and
Sunday 8 October, from 11.30am to 5.30pm each day. The trail consists of a
walking route around the village with stops at several artist studios as well

Batheaston New Village Hall.

City of Bath Brass Band open evening
The City of Bath Brass Band is hosting an open evening on Monday 9 October.
The band plays at many different events in and around the city, including summer concerts in the local parks and gardens, and performances in local churches and community halls. They also compete in national and regional brass band contests and are currently in the third section of the West of England region.
Open evening sessions run from 6.45pm – 7.45pm for Beginners and Intermediates, with a break from 7.45pm – 8.15pm for refreshments, followed by the Intermediate and Advanced session from 8.15pm – 9.45pm.
