Doors open to St Peters Hospice flagship store
The doors opened this week to reveal the latest charity shop for St Peter’s Hospice.
The shop, which can be found at 112–114 Whiteladies Road, is the 43rd shop for the Hospice and will be their flagship store.
Long-time supporter of St Peter’s Hospice, TV’s Alex Lovell raised a toast at the opening, saying: “I hope you raise squillions here. Cheers to the shop and its opening! [...] We can’t all dig deep at the moment, but we’ve probably got some stuff up in the attic or have some clothes that we don’t fit into that we could bring out and donate and help to raise money for the Hospice.”
St Peter’s Hospice flagship shop is open from 9.30am–5.30pm Monday – Saturday and from 10am–4pm on Sunday. The shop operates a daily quiet hour between 9.30–10.30am (10–11am on Sundays) | stpetershospice.com

Aussie Rules | Teusner Wines
The fact that Teusner Wines was born in the local pub wouldn’t surprise anyone that knows Kym Teusner and Mick Page. The two were enjoying some beers when they overheard a conversation between a couple of Barossa grape growers about an 85 year old vineyard facing the chop. Mick and Kym managed to find the cash needed and stepped in with a rescue plan. These beautiful old vines stayed in the ground where they rightly belonged and in 2001 Teusner Wines came to life with a singular mission – to make the kind of wines they liked to drink!
Today the two owners have amassed a huge fan base and much applause from fellow wine growers and commentators. They are real people, work hard doing a job they love and by keeping it simple with these excellent vines, the wines are absolutely gorgeous.

WEEKEND RECIPE | SEASONAL SUPPER

4 Spring Greens
It's time to celebrate vibrant, tender spring greens: the first cabbages of the year, cropping up in abundance right now.

|
A springtime spin on Pasta e Fagioli (serves 4)
Bring 700ml vegetable stock to the boil in a medium-sized saucepan. Add 75g orecchietti, cavatelli or macaroni and simmer according to the cooking instructions on the packet, adding 250g rinsed, shredded spring greens for the final 3 minutes of cooking time. Add 1 x 400g tin of cannelini or borlotti beans (drained) and 1-2 tbsp of green pesto. Continue to simmer the soup, stirring continuously, until the beans have heated through, then serve in warm bowls topped with another drizzle of pesto and a sprinkling of finely-grated Parmesan cheese.

Spring Chicken Casserole (serves 4)
Heat a drizzle of vegetable oil in a large, heavy pan and sauté 1 large, peeled, finely-chopped onion for around for 5 minutes or until soft. Add 500g boneless, skinless, free-range chicken thighs to the pan and continue to sauté until the chicken has lightly browned. Add 300g small new potatoes and 450ml chicken stock, bring to the boil and simmer gently, partially covered, for around 25-30 minutes or until the potatoes are tender. Add 700g rinsed, shredded spring greens to the pan along with around 140g frozen petits pois, 1 bunch of peeled, chopped spring onions and 2 tbsp red or green pesto. Simmer for around 5 minutes or until the peas have cooked and the spring greens have wilted and serve in warm bowls.

Speedy Spring Green Fried Rice 'fakeaway' (serves 2)
Heat a splash of oil in a large frying pan and fry 2 eggs until the bases have turned crispy and the yolks are set. Remove the eggs from the pan with a spatula, place on kitchen paper and cover with foil to keep warm. Heat another splash of oil in the pan and, when the oil is hot, sauté 1 bunch of peeled, sliced spring onions with 1 finely-sliced green or red chilli, 1 x 2cm chunk of ginger (peeled and grated) and 1 clove of garlic (peeled and grated) for around 2-3 minutes. Add 1 beaten egg to the pan and allow to set for around 30 seconds before muddling the mixture up with a wooden spoon or spatula. Add around 150g rinsed, shredded spring greens to the pan along with with a splash of water and briefly sauté until the greens have wilted. Add 1 x 250g pack of ready-cooked rice to the pan along with a generous smattering of dark soy sauce and stir-fry until the rice has heated through. Season to taste and serve immediately topped with the fried eggs, sprinkled with more chopped spring onions and a dollop of chilli sauce.

Gammon and Spring Green Broth (serves 4-6)
You need to get ahead with this one! Soak 1 x 450g piece of gammon in cold water overnight. The following day, drain and thoroughly rinse the gammon before putting it in a large pan along with with 2 onions (peeled and sliced), 2 bay leaves and 1 tbsp whole black peppercorns. Cover with around 1.5l cold water, bring to the boil, then reduce the heat and simmer gently for around 1½ hours, occasionally skimming off any froth that collects on the top of the liquid. When the gammon has cooked, carefully remove it from the pan and set to one side. Strain the cooking liquor through a sieve and return it to the pan. When the gammon is cool enough to handle, trim away (and discard) the fat and skin and shred the meat with two forks. Return the shredded meat to the strained cooking liquor in the pan. Add 2 peeled, chopped large potatoes and bring the broth back to the boil. Partially cover the pan and simmer for 20 minutes. Add 300g rinsed, shredded spring greens and 1 x 400g tin of butter beans to the pan and continue to simmer for around 10 minutes. Serve in warm bowls topped with plenty of freshly-ground black pepper and, perhaps, a little blob of English or Dijon mustard.

Lamplighter Arts are deep in preparation for the Church Road Lantern Parade on 25 March with a series of workshops for BS5 residents which are booking up fast. The communities of Redfield, Barton Hill and St George create the parade, making their own lanterns and contributing to the build of the larger lanterns the parade is famous for. This year's theme is “Under One Sky” which has been inspired by constellations and night skies shared across continents.
