Bollinger’s Special Cuvée 007 Limited Edition has been released to celebrate over 40 years of partnership as the Official Champagne of the legendary British secret agent, James Bond, and the upcoming release of the highly anticipated No Time To Die film.
Bollinger was first ordered by James Bond in 1973’s Live and Let Die. Five years later there was a chance meeting off-screen between two fine wine connoisseurs: Christian Bizot, the Managing Director of Champagne Bollinger at the time, and Albert R. “Cubby” Broccoli, the 007 director. The two struck up a close friendship, which resulted in the 1969 R.D. making an appearance in 1979’s Moonraker. The Bollinger family have partnered with the James Bond series ever since, featuring in a slew of the movies.
The iconic Special Cuvée bottle has been slipped into a limited-edition gift box inspired by No Time To Die, complete with a silhouette of James Bond standing next to his Aston Martin.
The Champagne itself is a real classic. Bollinger are renowned for their rich and savoury style of wines, dominated by Pinot Noir and subject to oak fermentation and extensive lees maturation. Biscuity and toasty on the nose, Special Cuvée suggests notes of toffee, orange peel, pear and hazelnut. Crisp, long and textured on the finish, this special release is... licensed to thrill.

COOKING WITH | FOUR INGREDIENTS
|
|
|
|
If you fancy getting a September supper off to a stylish start, this chic little seasonal salad is the way forward.
Combine 40–50g crushed, toasted hazelnuts with 3tbsp olive oil, 1 tbsp balsamic or red wine vinegar and a pinch of salt. Slice 2 large, ripe but firm, unpeeled pears (Comice or Conference work really well here) into six wedges, heat a little bit of butter in a griddle or frying pan and hob-roast the pear wedges until slightly charred. Plonk a generous handful of watercress onto a serving platter, top with the caramelised pear wedges, dot with 100-150g crumbled blue or goats' cheese and drizzle with the hazelnut dressing (serves 2–4).

It's all too easy to overlook the humble cauliflower in your search for autumnal 5-a-day sustenance. But when roasted, a previously bland cauliflower transforms into a nutty-but-creamy delight, packed with flavour... and perfect with pasta.
To make Cauliflower Carbonara to serve 4 people, simply roast around 700g lightly oiled, well-seasoned cauliflower florets in a medium-hot oven for around 20 minutes, or until just starting to caramelise. Meanwhile, cook 350g penne pasta according to the instructions on the packet. When just about al dente, drain the pasta (reserving 2 tbsp cooking water) and toss with the roasted cauliflower florets, 150g parmesan (or vegetarian alternative), 3–4 tbsp full fat crème fraiche, the reserved pasta cooking liquid and 2–3 beaten eggs (the residual heat from the pasta should be enough to cook the eggs without scrambling them) and stir well. Serve immediately, topped with chopped parsley and more parmesan.

Slightly sweeter than pheasant but not as gamey as goose or duck, partridge (in season from the start of September until around the end of February) is a delightfully flavoursome alternative to roast chicken.
To rustle up a rollickin' seasonal roast, preheat the oven to 200ºC/gas mark 6. Place 1 sprig of thyme and 3–5 juniper berries in the cavity of each partridge (you'll need one bird per person) and tie the legs together with string. Spread softened butter all over the skin, season well and place a rasher of streaky bacon on each breast before roasting for 30 minutes; the birds are cooked when you pierce the skin between the leg and breast with a skewer and the juices run clear. Allow the partridges to rest for at least 15 minutes before serving with sautéed wild mushrooms, braised cabbage, mashed potato and madeira gravy.

Juicy, sour/sweet damsons are at their very best in September, but are generally way too tart to be eaten raw. They are, of course, wonderful in crumbles, cakes, jams and pickles... but they also make a wickedly delicious Damson Vodka or Gin which, if you act fast, will be at its peak of perfection by Christmas.
Pick the stalks from 500g damsons, rinse well, pat dry and tip into a freezer bag. Allow the fruit to freeze overnight then bash it into a loose crumble with a rolling pin. Tip the crumbled damsons into 2-litre jar and add 250g golden caster sugar and 1 litre of unflavoured vodka or gin of your choice. Screw the lid of the jar on tightly and give it a thorough shake, then store it in a cool, dark place, giving it another thorough shake every day for 10 days (by which time the sugar should be completely dissolved.) Leave the vodka/gin to settle for 3 months before straining the liqueur through a large plastic funnel lined with muslin (or a coffee filter) into clean, dry bottles with a reliable seal. Your Damson Vodka/Gin is now ready to drink, but it keeps for up to one year and will only get better over time.

WEEKEND RECIPE | AUTUMNAL COMFORT FOOD

Mushroom Ragout on Parmesan Polenta |
|
|
|
Meaty mushrooms, comforting parmesan-rich polenta and hot cheese: if you're after autumnal comfort food, you've come to the right place.
Ingredients
30–40g dried porcini mushrooms Generous knob of butter (for frying) 1 shallot, finely sliced 2 garlic cloves, crushed 1 tbsp dried thyme 600g chestnut or field mushrooms (or a mixture of both), sliced 125ml red wine 125ml vegetable stock 150g gruyere or taleggio cheese (or vegetarian alternative), grated
For the polenta 500ml vegetable stock or milk 250g instant (quick cook) polenta 50g butter 75g parmesan (or vegetarian alternative), grated
Method
1. Soak the dried mushrooms in 150ml warm water for 20-30 minutes until rehydrated. Drain, squeeze and roughly chop, reserving the soaking liquid.
2. Heat the butter in a large frying pan and sauté the chopped shallot until just translucent. Add the garlic and thyme, continue to sauté for around 1-2 minutes then turn the heat up and add the soaked porcini. Cook the porcini for 1-2 minutes before adding the chopped fresh mushrooms and frying for around 5 minutes until soft.
3. Add the red wine and allow to boil rapidly for around a minute, to allow the alcohol to burn off. Add the stock and the reserved porcini liquid and simmer for 15 minutes over a medium heat until the mixture has thickened and is starting to turn glossy. Turn the heat off under the pan and preheat the grill to medium.
4. To make the polenta, bring the vegetable stock or milk to the boil with 400ml water and add the polenta in a steady stream, whisking continuously. Cook for around a minute until thickened, then stir in the butter and parmesan. Season with black pepper (you probably won't need salt as the parmesan is quite salty) and keep warm.
5. Spoon the polenta onto a baking tray and push the edges up to form a 'crater'. Fill the crater with the mushroom ragout and top with the grated cheese before grilling until the cheese starts to melt into the ragout.
6. Serve immediately, on warm plates.

ART EXHIBITION | NATURE IN THE CARIBBEAN

Jackie Philip: A Colourist in the Caribbean, 3–25 September |
|
For artist Jackie Philip, a trip to Barbados for a few weeks in September last year turned into seven months of being stranded on the Caribbean island, partly due to lockdown and partly to the fallout from the volcanic eruptions of La Soufrière on St Vincent.
To make the best use of her enforced stay in Barbados, Jackie set up a temporary studio and came to observe the abundance of nature in all its forms. The paintings that resulted are informed by a variety of cultures and traditions and her latest works are more expansive and filled with luminosity and colour. Poignantly, work on the final canvas in this series, Volcanic Ash, was cut short and the beauty of this painting is in the strength of the bold line. A percentage of the proceeds from the exhibition will be donated to Slow Food Barbados.

Celebrating the best food and drink in the south west and from further afield, the festival kicks off with a buzzing market on Milsom Street in Bath with chef demos, pop-ups and a food and drink trail for all to enjoy. We asked Richard Bertinet – the festival’s headline sponsor who is doing a demo at the festival – some questions to get us in the mood for baking (and eating).
Why has baking bread been such a defining element of your life?
In France, your daily bread is always something that is a big part of family life. I would be sent to pick up bread every day and loved looking over the counter and peering into the bakery to see the bakers at work. I left school at 14. I am dyslexic and back then dyslexic kids were not recognised or helped. I knew I had to work and to work with my hands. I spent a night in my local bakery and loved it so I started an apprenticeship to become a baker, and went from there. Teaching came much later in my life but made so much sense to me… it’s the best feeling.
What is the most effective way of enthusing others about baking?
The best way to enthuse people is to make them realise that they can learn a new skill and they can get that baking bug. I try to take the fear away; then when they achieve something, their first fougasse for example, I can see them smile and beam with confidence at their new-found skills.

Bath RFC Juniors kick off Pitch Up for Rugby celebrations |
|
This September, Bath RFC is looking forward to opening its club doors once again on 12 September and welcoming local players back to get involved in England Rugby’s ‘Pitch Up for Rugby’ celebrations.
Bath RFC start the new season as always at the Lambridge Training Ground on London Road at 10am and will be welcoming anyone who is interested in the game of rugby. You could be a rugby fan, already be a rugby player, entirely new to the sport, or just looking to see what a local community club like Bath has to offer.
Bath RFC has age and playing groups for all including Juniors Boys (U13 - U17) and Juniors Girls which is open to all girls in the U12 – U16 age groups and caters for all abilities. Bath RFC also includes Bath Rugby Ladies which is U18 upwards and open to those of mixed ability.
As part of the England Rugby “Pitch Up For Rugby” initiative which aims to celebrate a return of clubs and the coming together of rugby fans and players, Bath RFC is looking forward to welcoming all who have an interest in the game and would like to come along no matter what their experience or ability to meet the teams and coaches, pass a few balls and get a feel for playing the wonderful game of rugby as part of the Bath RFC family.
The start of the 2021/22 season also marks the start of an important new partnership between Bath RFC Junior Boys and Girls and King Edward’s School, Bath.
With a long-standing rugby tradition in Bath King Edward’s School has partnered with Bath RFC to support the game within the local community and enhance opportunities for young players.
As Bath RFC’s main shirt sponsor for the season King Edward’s will be at Lambridge on 12 September between 10am–12pm to support and celebrate the start of the season with coaches and players and together with Bath RFC look forward to welcoming all along for a fantastic first day back.

LOOKING BACK | ONE OF THE GREAT SPAS OF EUROPE

To celebrate Bath’s second UNESCO World Heritage listing – as one of the Great Spas of Europe – this week’s archive picture takes us back to the spa culture of 200 years ago. George Cruickshank’s print of the King’s Bath, entitled ‘Public Bathing at Bath; or Stewing Alive’, appeared in The English Spy, a racy guide to England’s most fashionable resorts, published in 1825 and aimed squarely at wealthy young gentlemen in search of adventure. The tone of the book will be apparent from this description of bathing in Bath:
"Who would ever have thought, in these moralizing times, when the puritans are raising conventicles in every town and village, and the cant of vice societies has spread itself over the land, that in one of our most celebrated places of fashionable resort, there should be found baths where the young and the old, the beauteous female and the gay spark, are all indiscriminately permitted to enjoy the luxurious pleasure together …
"The notices to prevent gentlemen from swimming in the baths are, in my opinion, so many inducements or suggestions for every young visitor to attempt it. Among our mad wags, Horace Eglantine was more than once remonstrated with by the old bathing women for indulging in this pleasure, to the great alarm of the ladies, who, crowding together in one corner with their aged attendants, appeared to be in a high state of apprehension lest the loose flannel covering that guards frail mortality upon these occasions should be drawn aside, and discover nature in all her pristine purity—an accident that had very nearly happened to myself, when, in endeavouring to turn round quickly, I found the water had disencumbered my frame of the yellow bathing robe, which floated on the surface behind me."
