Courgette and Broad Bean Risotto
|
|
|
|
Recipes by Melissa Blease
Lively, uplifting and super-seasonal, this easygoing recipe brings a taste of springtime to the table in 30 minutes flat.
Ingredients (serves 2) 2 tbsp olive oil 1 tbsp butter 2 courgettes (around 350g), diced A generous grating of nutmeg The zest and juice of ½ lemon 150g risotto rice (preferably Arborio) 75ml dry white wine or vermouth 750ml warm vegetable or chicken stock 80g broad beans, blanched and peeled 30g parmesan (or vegetarian alternative), finely grated ½ bunch of fresh chives, snipped
Method Heat the oil and butter in a large non-stick saucepan over a medium heat. Add the courgettes with a generous grating of nutmeg and season well. Sauté for 3-5 mins or until the courgettes are soft and golden, then add the lemon zest and rice. Stir well to coat the rice in the oil and butter (around 2 minutes) then add the wine or vermouth and allow to bubble down for a couple of minutes more, or until the alcohol has mostly evaporated.
Add a ladleful of the warm stock to the pan and stir until it’s absorbed. Continue adding the stock a ladleful at a time for around 20-30 mins, stirring continuously, until you’ve used up all of the stock.
Add the broad beans and stir well to distribute them throughout the risotto. Serve in warm bowls topped with the snipped fresh chives, extra parmesan and plenty of freshly-ground black pepper.

Discover the wines of the Americas with up to 30% off
|
|
|
|
There’s no better way to welcome in the sunshine than with a glass of something delicious in hand. This Spring, we’re turning to the vineyards of the Americas, just in time for The Great Wine Co.'s up to 30% off offer.
With vines stretching right across this huge continent, the Americas produce some of the best value wines to be found. Very well-priced wines can be found that are still hand-harvested, often from old vine sites, and the quality is excellent.
1. Gallardia Old Vine White, Chile This wine unfurls on the palate from lemon meringue pie to complex notes of frankincense, seasoned pine wood and beeswax. Reminiscent of a well-aged dry Riesling, it is in fact made from a field-blend of Moscatel and Chasselas, dry-farmed on very old gobelet vines planted in 1905, in the cool, southerly Itata region. £15.50
2. Santa Ana Sauvignon Blanc, Argentina This sauvignon blanc has a pale lemon hue with refreshing citrus, stone fruit and grassy aromas on the nose and a mouth-watering peach, lemon and goosberry flavour in the mouth. £8.80
3. Peller Estates Ice Cuvée Rosé, Canada A medium-bodied, refreshing sparkler that is slightly off-dry, yet finishes dry as a result of the delicate tannins from the Cabernet Franc. On the nose there are wonderful aromas of strawberry, peach juice, watermelon and currant. On the palate this wine is bursting with red berries and currants which linger through on the finish with an added note of spice. £27.50
4. Viña Leyda Pinot Noir Reserva, Chile Bright ruby red colour. A fruity nose with strawberries, hints of red cherries and a subtle wild herb notes with a delicate smokiness and tobacco. Refined on the palate, juicy and full of ripe berry flavours, a hint of minerality and refreshing finish. £12.20

Discover the spirit of Tudor Black Bay 58 at Mallory
|
|
|
|
Named after the year in
which the first TUDOR divers’ watch waterproof to 200 metres (the reference
7924, dubbed the “Big Crown”) was introduced, the Black Bay 58 represents
sixty years of TUDOR diving history distilled into one truly iconic watch.
Among other aesthetic allusions to this famous historic watch, this model has a
39mm diameter case, in keeping with the characteristic proportions of the
1950s.
Now, the new Black Bay 58 in Burgundy (£3,910) retains
all the core design elements from TUDOR throughout the ages, and includes
aesthetic notes from a prototype TUDOR Submariner ref. 79190 developed in the
‘90s.
The brilliant
burgundy dial is matched by an unidirectional rotatable bezel,
offering very prehensible sides with an aluminium insert showing
subtly curved numerals aligning with the outline of the outer ring.
For the first time, the new
all-burgundy Black Bay 58 also comes on a 5-link bracelet with a T-fit rapid
adjustment clasp, a fantastic improvement to the existing Black Bay 58
line.
Not only is the burgundy
Black Bay 58 visually stunning, it also has the Master Chronometer
certification, ensuring precision of up to 0 to +5 seconds per day, resistance
to magnetic fields of up to 15,000 gauss, waterproofness and a 65-hour power
reserve; every element crafted to exquisite standards. Also available with
a 3-link “rivet-style” stainless steel bracelet or a black rubber strap,
all with TUDOR's rapid adjustment system known as T-fit, making the watch more
wearable than ever before. Coming soon to Mallory.

Curated by Daniel McCabe
|
|
Disco Pogo is a heavyweight, 236-page bi-annual electronic music magazine created by a pair of publishing heavyweights who cut their teeth in the industry’s 90s heyday. And it shows.
This is a sophisticated, informative and entertaining magazine that bridges the gap between the new generation of dance music with popular and pioneering electronic artists from the past 30 years (the likes of Daft Punk, The Chemical Brothers and Aphex Twin). It’s one of our favourites and we’re pleased to say the keenly awaited seventh issue is released this week in three covers – Madonna, DJ Harvey and Marie Davison.
