WEEKEND RECIPES | NO-MESS MEALS

Words by Melissa Blease
Four easygoing Traybakes
Chinese Chicken (serves 4)
Put 8 skin-on, bone-in chicken thighs into a large roasting tin and slash the skin 3-4 times on each thigh. Mix 4 tbsp hoisin sauce, 2 tbsp clear honey, 2 tsp sesame oil, 2 tsp five-spice powder, 1 thumb-sized knob of ginger (peeled and grated) and 2 garlic cloves (peeled and crushed) together in a small bowl. Pour the mixture over the chicken, season well, toss to coat and leave to marinate for a minimum of 2 hours (or overnight). When you're ready to cook, preheat the oven to 190°C/gas mark 5 and roast (chicken skin-side up) for 35-40 minutes, basting at least once. Sprinkle with toasted cashew or peanuts and a handful of peeled, sliced spring onions and serve with rice.
Paprika Cod (serves 4)
Preheat the oven to 190C/gas mark 5. Drizzle 4 tbsp olive oil across a baking dish. Add 300g cherry or baby plum tomatoes, 1 clove garlic (peeled and crushed), 1 red chilli (finely sliced) and 1 tsp smoked paprika. Toss together and roast for 10 minutes. Take the dish out of the oven, sit 4 plump cod loin fillets on top, season well and roast for another 10-15 minutes or until the cod has cooked through and flakes easily. Scatter with freshly-chopped flat leaf parsley and serve with lemon wedges and crusty bread.
Halloumi and Mediterranean Vegetables (serves 4-6)
Preheat the oven to 200°C/gas mark 6. Toss 3 courgettes (chopped into chunks), 1 large red pepper (deseeded and chopped into chunks) and 1 large red onion (peeled and sliced) with 3 tbsp olive oil and tip into a large, shallow baking dish. Season well and roast for 10 minutes. Take the tray out of the oven, add 400g cherry tomatoes and 3 cloves of garlic (peeled and crushed) and toss all the vegetables around a bit. Slice 300g halloumi and sit the slices on top of the vegetables. Sprinkle 1 tsp cumin and a smattering of dried chilli flakes over the top and roast for another 15-20 minutes or until the tomatoes start to burst and release their juices and the halloumi is turning golden. Serve with flatbreads and hot sauce or hummus.
Rocky Road (makes 12 bars)
… and this sweet treat doesn't even require any baking! Line an 18cm square baking tin with baking paper. Melt 135g butter, 200g dark chocolate and 3 tbsp golden syrup together in a small pan over a gentle heat, stirring constantly until the chocolate has melted. Remove from the heat and allow to cool. Meanwhile, put 200g Rich Tea or digestive biscuits in a freezer bag and bash with a rolling pin until the biscuits are broken into a mixture of chunks and dust, and tip the lot into a large bowl. When the butter/chocolate/syrup mixture has cooled down, pour it into the biscuit crumble and stir well. Add 100g mini marshmallows (or whole marshmallows, chopped) along with up to around 100g of popcorn, chopped nuts, sultanas or crumbled honeycomb (or a mixed selection of all of them, if you have them to hand!). Stir again to thoroughly combine all the ingredients and press the mixture into the prepared tin, spreading it out to reach the corners. Chill for at least 2 hours before dusting with icing sugar and cutting into 12 bars.
