Coconut poached salmon with Asian greens

Super healthy and sooooo tasty! I love this recipe but also do my own more simpler version of it with salmon steaks baked in a dollop of coconut cream/milk with fresh coriander and steamed pak choi. Either way, a perfect light meal, oozing with goodness!
