Unfavourable rainfall and temperature can also promote the conditions that damage and discolour coffee beans. Too much rainfall can dislodge flowers and fruits, or if heavy rain occurs during harvest, increased moisture favours conditions for mould growth, disease and excessive fermentation, all of which may increase coffee bean defects.
