Tartiflett
Give you Bonfire Night celebrations an après ski twist with this super-cosy Tartiflette: a luxuriously rich combination of potatoes, cream and bacon originating from the Haute-Savoie region of France.
Ingredients (serves 4, easily scaled up for a celebratory gathering)
1.5 kg waxy new potatoes 320g smoked bacon lardons 3 large shallots, peeled and thinly sliced 2 cloves garlic, peeled and thinly sliced 1 large sprig of fresh thyme leaves, picked 75ml dry white wine 3 tbsp crème fraîche 2 tbsp chopped parsley 250g Camembert
Method
Put the whole, unpeeled potatoes in a pan of cold salted water, bring to the boil and simmer for 20-25 minutes or until just tender. Meanwhile, preheat the oven to 190c/gas mark 5, heat a large frying pan and gently fry the lardons and sliced shallots over a medium heat for 8-10 minutes, stirring frequently (you probably won't need to add any oil as the lardons will release enough fat).
Drain the potatoes and allow them to cool slightly in the sieve. When they’re cool enough to handle but still warm, slice into thickish slices.
Add the garlic and thyme to the lardons and shallots and saute for 1 minute. Add the white wine and allow it to bubble down for a minute or so, then remove the pan from the heat, add the crème fraîche and parsley and stir well. Add the sliced potatoes to the pan, stir again to thoroughly combine, check the seasoning and spoon the mixture into a shallow 20x30cm ovenproof dish.
Slice the Camembert in half horizontally through the middle to create two thick discs, then cut each disc in half again so you end up with 4 semi-circles. Lay these on top of the potatoes.
Bake in the preheated oven for 20-25 minutes, until bubbling and golden on top. Serve piping hot accompanied by a crisp, well-dressed green salad - and, if you want to recreate the full-on après ski experience, a selection of French charcuterie, continental meats, cornichons and silverskin onions.

NEW DEPUTY LIEUTENANTS FOR SOMERSET |

Five new Deputy Lieutenants have been appointed to assist and support the Lord-Lieutenant in Somerset, three of whom are based in the Bath region.
They are Rev Prebendary Narinder Tegally, Caroline Boddington and, Ali Vowles, all from Bath, as well as David Brown, from Chewton Mendip, and Richard Swallow, from North Cheriton.
Deputy Lieutenants are appointed by Somerset’s Lord-Lieutenant, Mohammed Saddiq and they come from all walks of life. Appointment to the office of Deputy Lieutenant, which carries the post nominal ‘DL’ is in recognition of distinguished service to the community. Their local and specialist knowledge and experience is used to positive effect in key sectors ranging from education to youth services, and from business to the rural economy. They are the eyes and ears of the Lord-Lieutenant in our local communities and liaise closely with the local authorities with whom we have much common cause.
Rev Narinder Tegally is the Lead Chaplain of Royal United Hospitals Bath (RUH) and also Priest Vicar at Wells Cathedral; Caroline Boddington has an international HR background and an interest in flourishing communities, organisations and groups and Ali Vowles spent most of her working life working as a presenter and reporter for BBC TV and radio, mainly based in Bath.
